ACTAS DE LAS XIV JORNADAS CÍENTÍFICAS DE.LA SOCIEDAD ESPAÑOLA DE OVINOTECNIA Y CAPRINOTEONIA La humedad de la hoja de olivo procedente de poda puede variar desde el 53 al 68%, pudiéndose admitir como referencia práctica la del 55% según lo reciente que sean las últimas lluvias y el grado de oreo a que haya sido sometido el ramón antes de picarlo. Pero como es preciso dejar orear el ramón para evitar la fermentación en los montones o cargas antes de tratarlo, aunque 3 Kg de hoja en verde dan 1-1,2 Kg de hoja seca final y como para optimizar el picado del ramón es preciso dejarlo orear 4-5 días de modo que la hoja tenga el 30-35% de humedad, será preferible considerar que 1,5-2 Kg de hoja oreada dan 1 Kg de hoja seca. La leña de olivo tal cual tiene 3.000-3.500 Cal/Kg. La leña seca tiene 4.200-4.330 Cal/Kg. Por ello puede adoptarse la referencia de que 3 Kg de leña igualan a un Kg de fuel-oil como combustible. Los procesos de fermentación son directamente proporcionales a las humedades, pudiendo alcanzarse 52-56 °C antes de 3 horas de almacenamiento con humedades superiores al 35-40%. Tanto si se apila en heniles para uso ulterior o en almacenes para separar hojas y astillas es indispensable el oreo previo para reducir la humedad por debajo del 30-35% y evitar las fermentaciones. 7. Valores nutritivos de las hojas de olivo Aunque son relativamente abundantes las referencias acerca de la composición química de las hojas de olivo tanto de molino como procedentes de picadillo, se dispone de una información menos precisa y abundante acerca de su valor nutritivo. Lo más notable de los estudios aportados es la coincidencia en la reducción en los valores nutritivos de las hojas secas con respecto a las verdes, referidas siempre a valores por Kg. de S.S. La digestibilidad de la materia orgánica de las hojas verdes es del orden del 50% y 2-5% menos la de la materia seca. La de la proteína bruta viene a ser del 15 al 25% en las hojas secas,siendo en las verdes del 30%. La causa de esa reducción de la digestibilidad de los principios inmediatos de las hojas secas con respecto a las verdes es, por el momento, desconocida y es uno de los hechos más interesantes señalados en el curso de las investigaciones relacionadas con el aprovechamiento nutricional de las hojas de olivo. Puede encontrarse una síntesis del estudio de la cuestión en Ana Garrido ct al, 1989. En la Tabla 8 se presentan informaciones de diversos orígenes y en la 9 los valores que luego adoptaremos para formular raciones. Los valores adoptados para la hoja de olivo granulada se refieren a hoja procedente de poda y sólo son supuestos admisibles.
