Para Georg-kramer et al. (2000)<br />muitas empresas produtoras de malte vêm<br />tentando reduzir o período de germinação no<br />processo de maltagem, o que permitiriam a<br />redução de despesas e a maltagem de uma<br />quantidade de grãos em menos tempo. O<br />processo de maltagem induz a germinação e<br />assegura o crescimento da semente com<br />produção de beta amilase de relevante<br />influência no poder diastático.<br />CONCLUSÃO<br />Existe sempre uma tendência de aumento<br />na atividade das duas enzimas.<br />A beta amilase apresenta maiores<br />atividades que a alfa amilase nas condições<br />testadas<br />Os maiores aumentos de atividade da alfa<br />amilase acontecem após 24 e 72 horas de<br />germinação. Já para beta amilase os maiores<br />incrementos da atividade específica ocorrem<br />após 24, 32, e 64 horas de germinação.<br />O estudo dos maiores aumentos dessa<br />enzima em função do faixa de tempo de<br />germinação forneceu informações necessária<br />para produção de malte com teores enzimáticos<br />variados, podendo ser utilizado na hidrólise de<br />amidos de varias origens.<br />REFERÊNCIAS BIBLIOGRÁFICAS<br />Adewale, I.
