GASTRONOMY
Le Comptoir has a strong cultural atmosphere
in Paris's Latin Quarter at Odéon (9 Carrefour
d'Odéon), the owner Yves Camdeborde opened the
restaurant 25 years ago. He is at the origin of the term
Bistronomie, namely "gourmet in pubs" concept. For
several years he was jury in the MasterChef television
program, which made him quite well known in France.
He used to have a two-star Michelin restaurant, now
he loves his bistro, calling it “his own equation of
happiness”.
At a bustling crossroads, people come and go, those
who sit and those who walk consider each other
a scenery to watch. People like sitting at the table
outside, bathing in the sun. In wintertime the
restaurant also provides blankets with small round
tables. If you are seated, you are sure to trouble others
when you get up, so the mutual exchange becomes a
very natural thing.
The customers seen from the outside are quite
diversified, we can see people wearing suits and ties,
tourists, locals people coming to do their business,
family reunion... Just as the owner had hoped, it is a
lively little community.
The pork feet were very impressive there, very gentle,
no bones, with a sweet and sour sauce served with
crunchy vegetables.
When you come to Le Comptoir, after the end of
service in the afternoon, you can still see people in
the queue under the parasol. However, for Dinner,
you must book a reservation otherwise no seat will be
available even if you are in the queue.
"Bistronomie means eating gourmet dishes, in
a relaxed and festive atmosphere. People must
communicate, it’s very important.”
Le Comptoir
Yves Camdeborde
Les cocottes means "casserole dishes”, it is a
brasserie owned by Mr Christian Constant,
who has been the chef at the Crillon and The Ritz,
and has trained numerous renowned disciples.
The restaurant is located in the 7th district of
Paris, Saint-Dominique street No. 135. Dishes
are served in a small iron pot, customers can
dine at the bar, or sit at a table, but they sit on a
high stool, which makes it easy to relax. Behind
every chair there is a ring, like a drawer handle.
No idea what it is for. The owner was very honest
and said: “at first we wanted to design something
to hang bags, but considering the owner cannot
see them, the hook is now set under the table to
hang bags."
On the menu, you can choose from "authentic
salad of Ritz Hotel"; "Pâté with the recipe of the
time I was an apprentice "; "the egg pudding of
the old days" ... We can see that the owner is a
man of simplicity.
There, the seafood chowder has a pure taste;
other seafood dishes are also very authentic and
fresh. Packed in multiple small cast iron pots, the
color and taste greatly inspire a growing appetite.
Many Japanese and Taiwanese tourists especially
come here.
Christian Constant
"I'm a traditional guy, I will remain so. What a dream to
make good food with simplicity."
- Christian Constant
Les cocottes
Christian
