However it happened, it has allowed the whole family to play a role in building a brewery that reflects and respects the heritage of good beer production. DEVON AIZZY • 2.8% At 2.8% this is their lowest ABV ale, although low in ABV this really delivers in taste. Light chestnut in colour with a hint of blackcurrant this well balanced hoppy ale delivers a distinctive taste. When launched at the annual CAMRA meeting in April they could not guess the ABV. DEVON DARTER • 4.5% formerly 'High Tide' this is a fruity, copper ale. With an aroma of grapes the taste is a nutty, light bitterness. DEVON DYMPSY • 4.0% Formerly 'Cavalier' this is a smokey, smooth chestnut ale. With a lemony aroma the beer has a citrusy edge and already has a loyal following. REAL SMILER • 3.7 % a light, hoppier beer. Although essentially a summer beer, it will also appeal throughout the year due to its refreshing nature. PROPER ANSOME • 4.2 % The bitterest beer for the more discerning drinker. Malty flavoured and dark in colour. Generations of experience have taught us that consistently good beer and service make for a brewery worth remembering. That is fundamental to everything that we do. clearwater OTTER BITTER • 3.6% A light & fruity beer with good hoppy bitterness. it leaves a refreshing bitterness which prompts the next gulp. OTTER AMBER • 4.0% A beautifully polished amber. the special cara malt & carefully selected hops deliver a finely balanced bitter flavour, with hints of tropical fruit and spice. OTTER BRIGHT • 4.3% A very pale golden colour with great condition. Bright has a strong & citrus aroma. A very refreshing beer, the aftertaste is sweet with a subtle bitterness which is likely to leave you wanting more. OTTER ALE• 4.5% A very well balanced beer that delivers the flavours of quality floor malted barley nd finished with a combination of fruit and some bitterness. Its nose is a balance of malt and fruit. BREWING beer is one of the great crafts of Britain and this tradition continues in Devon’s Exmoor country by the well-named Clearwater Brewery. Using local waters and natural ingredients, this small brewery has been producing a range of cask-conditioned beers for nearly 15 years with growing success. A nine step guide to perfect cask delivery. Ideal cellar storage temp: 52°F - 54°F or 11°C - 12°C 1. Roll the barrel. This mixes the finings so they will settle the beer evenly. 2. Stillaging. Let the barrel stand for 24 Hours after delivery to allow the <strong>Ale</strong> to chill down to the cellar temperature. 3. Clean the keystone. This ensures there are no contaminents that can affect the beer. 4. We can be summed up in three words - 'passionate about brewing'. Our mission is to consistently brew top quality cask conditioned real ale. Clean the Shive. As above 24 Hours after delivery Vent the Barrel to reduce the CO2 in the <strong>Ale</strong>. 6. Waggle the peg to slowly release pressure. Tap the Barrel. After inserting the tap, insert a soft peg and allow keg to vent for 48 Hours. PERMANENTLY STOCKED 5. 7. 8. 9. DARTMOOR IPA • 4.0% This is a highly drinkable amber coloured beer. It has a deliciously smooth thirst quenching taste and subtle hop aroma. LEGEND • 4.4% The combination of a cool pure Dartmoor Water, the finest Devon Grown Malted Barley and the best of English Hops has created a classic cask conditioned beer smooth full flavoured and balanced with a delicious crsipy malt fruit finish. JAIL ALE • 4.8% This is a full bodied mid-brown beer with a well rounded flavour and a sweet Moorish aftertaste. FRIGGINS • 4.0% This is a highly drinkable thirstquenching beer with delicious lemon and slightly spicy fruit flavours on the aftertaste. Check the clarity. Check the aroma. Check the taste. 33
