1.2.5 Other Uses<br />

<strong>Ginger</strong> is widely used for flavouring a great variety <strong>of</strong> foods. In Western<br />

countries, ginger is used for culinary purposes. In the West Asian countries<br />

like Saudi Arabia, ginger is used mainly in the preparation <strong>of</strong> ginger c<strong>of</strong>fee.<br />

Again, in U.S.A., U.K. and Canada, ginger is widely used in meat processing<br />

industries. A number <strong>of</strong> alcoholic beverages are prepared from ginger, such<br />

as ginger brandy, ginger wine, ginger beer and ginger ale.<br />

<strong>The</strong>re is a saying that 'No kashayam without dry ginger.' In India,<br />

ginger is largely used in ayurvedic medicine preparation. <strong>Ginger</strong> is extensively<br />

used in winter for curing minor ailments like cough and cold. It is also<br />

prescribed as an adjunct <strong>of</strong> many tonic and stimulating remedies.<br />

Veterinary uses <strong>of</strong> ginger are as stimulant and carminative, in indigestion<br />

<strong>of</strong> horses and cattle and in spasmodic colic <strong>of</strong> horses.<br />

1.3. <strong>Ginger</strong> in India<br />

India, the largest producer <strong>of</strong> ginger in the world, accounts for nearly a<br />

half <strong>of</strong> the world's output. <strong>The</strong> area and production for the year 1993-94 were<br />

59,890 hectares and 1,99,390 tonnes. Other important producers are China,<br />

Jamaica, Indonesia and Nigeria.<br />
