which to cook, it is permissible to eat of that cooking. 10<br />

According to this decision it would seem that in our day<br />

of gas ranges with pilot lighters it is enough for the Jewish<br />

housewife to light the pilot and let her non-Jewish help do<br />

the rest. Fish salted or smoked by gentiles may be eaten;<br />

but eggs, even though it is possible to eat them uncooked,<br />

should not be eaten when boiled by them. 11 When a gen-<br />

tile uses a Jewish pot for cooking, that vessel becomes unfit<br />

for use until purified in the manner described in Chapter<br />

XII. 12<br />

Under ordinary circumstances milk sold by non-Jews<br />

should not be used, as they are apt to add the milk of<br />

unclean animals to that of the clean ones. 13<br />

If the milking<br />

was supervised by a Jew, or if he were in a position to see<br />

the milking, though he did not watch it very attentively,<br />

the milk is permitted, for the gentile would not dare mix<br />

unclean milk with the clean in his presence. 14 A gentile<br />

servant may be employed to milk Jewish cattle, for when<br />

there is no profit motive one need not suspect the milk to<br />

be mixed with inferior unclean milk. 16 In this country we<br />

use non- Jewish milk, relying on the rarity of the use of<br />

milk of unclean animals by non- Jews; and furthermore,<br />

governmental inspection makes the possibility of adultera-<br />

tion extremely remote.<br />

Cheese manufactured by non-Jews should not be eaten,<br />

because the milk is coagulated by the use of a calf's stom-<br />

ach which is rich in rennet, and the calf used is of course<br />

a trejak one. 16 In order to avoid confusion, the sages have<br />
