BUY Them
When selecting fresh cranberries, look for
firm, dry berries that are bright crimson red.
Store Them
A hard outer skin protects the berries so
they’ll keep in the refrigerator for up to a
month, but be sure to leave them in their
original plastic packaging. If you’re freezing
them, store in a resealable plastic bag and
they’ll last for a year.
Use Them
While this holiday favourite is usually
used to make a sauce for turkey or pork,
cranberries also add a unique flavour to
pies, tarts and smoothies. Mix them with
honey, sugar or sweet fruits such as apples,
apricots and oranges to cut back on the
tartness. To avoid making the cranberries
bitter, cook them just until the skin begins
to pop. If freezing, first freeze on a baking
sheet, then transfer to a freezer bag.
