Every time I try to make fudge, it does not set properly. I have tried several recipes and have had no success. What am I doing wrong? –Sheena MacDougall A: One of the key watch-points for fudge is in the cooling and beating; this develops the sugar crystals that determine the finished texture. If the candy has been cooked for too long and reaches too high a temperature, the fudge will quickly turn into taffy. Allowing the fudge to cool to 122°F (50°C) before beating until it thickens and lightens in colour, will result in a smooth and finer-textured fudge, which is the way I like it. The fudge may need to sit overnight until properly cooled and set before you can cut and taste it. Once a medium-size pot of water has boiled, add 1 tablespoon (15 mL) of white vinegar and reduce the heat to a simmer. Break an egg into a small bowl. Stir the water in the pot so that it swirls, and pour in the egg (don’t do more than one at a time). The vinegar and swirling help the egg keep its shape. Poach for 3 to 5 min. until the white is firm and the yolk is soft. must-have tool: Parchment Paper The one thing no baker should be without this holiday season is a roll of parchment paper. This multi-tasker can be used in several ways: place a sheet between your dough and rolling pin to prevent sticking, line baking sheets and pans for easy cleanup, and wrap logs of dough or line cookie tins to keep baked goods fresh.
