Good Maintenance Practices
Prolong the Life of Drive-ln
(As told to Haviland F. Reves)
The first show
Movies are better than ever. So are
the appetites of the people who
enjoy them. That's where your ice
cream novelties get into the act.
Especially when they have a 4-star
display in a Bally Case. Gleaming
Porcelain finish gives real showmanship
to your products. Whether it's
in theatre lobbies or in drive-in
refreshment counters, the result is
the same in both places ... Increased
ice cream sales.
|n last month's article (February
10, Modern Theatre Section) I referred
to various water problems which required
the installation of water softeners to prolong
the life of coffee equipment. At the
Troy
I I Drive-In Theatre, which is
served by water fi'om artesian wells, we
found that we were constantly having to
replace heating elements in the food
warmers and coffee equipment. The reaction
of carbon in the water would coat
the element, and eventually burn it
through. Our solution was to install watersoftening
equipment.
At the Miracle Mile Drive-In at Pontiac,
the presence of gas and iron in the
water supply tends to build up a different
type of deposit on the heating elements,
and causes loss of equipment. In all outlying
areas having a water well supply,
whenever a predominant amount of carbon
or iron is encountered, we have found
it worth while to install water softeners.
This not only prolongs the life of the
equipment, but enables us to serve a better
product in our soft di'inks and coffeemaking
them more attractive and salable
to oui' customers.
WEEKLY DRIVE-IN MAINTENANCE
Over a period of years, the nature of the
interior walls of our concessions buildings
has been puiposely changed from the use
of cement block and painted walls, to tile,
wood paneling or Formica. This is primarily
a matter of decor and good merchandising
policy in presenting attractive
surroundings. It has caused us added
maintenance problems—but it is well worth
this drawback, because of the bright and
cheerful atmosphere which results. The
older surfaces always seemed to be cold,
especially in cool weather, and they seemed
to look dingy by midseason despite the
best efforts to keep them clean.
Our weekly cleanup of the concessions
stand is usually performed on Monday
nights. With the rush of business over the
weekend, the use of equipment is at a peak,
and at the same time we have a minimum
of opportunity to assign staff to cleanup
duty. Monday, further, is usually a slow
night, permitting this extra attention.
Weekly, all merchandise is removed
from shelves, in dry storage, refrigeration,
and freezer storage. The shelves and all
storage equipment are scrubbed down with
soap and hot water. This is done even to
the back shelves of the dry storage cabinets,
which are usually of wood. Storage
shelves are painted, usually with a hard
finish enamel, to permit this weekly
scrubbing.
All glass counter faces are wiped daily
and washed weekly with a regular com-
