SPICES<br />
Anise seed<br />
Pimpinella anisum is native of the Middle East. The leaves have a more delicate flavour<br />
than the seeds <strong>and</strong> can be used fresh in salads <strong>and</strong> with vegetables, soft cheese <strong>and</strong> yoghurt<br />
dishes. The seeds are widely used for flavouring sweets, cakes, liqueurs, sauces <strong>and</strong><br />
toothpaste as well as in mouse poison.<br />
Caraway seed<br />
This is a member of the parsley family <strong>and</strong> a dried fruit of the biennial herb. It grows well<br />
in temperate climates <strong>and</strong> has been used in Europe for a long time. It has a warm, pungent,<br />
slightly bitter flavour with aniseed overtones. It is used in rye breads, coffee cakes, seed<br />
cake, cheese spreads, goulash, sauerkraut <strong>and</strong> in vegetables.<br />
Cardamom<br />
Cardamom is the dried fruit of the Elettaria cardomomum matasw. It is used in domestic<br />
cookery. In ground form it is used in industry for baked goods, curry powder, sausages,<br />
soups <strong>and</strong> tobacco flavouring. Its oil <strong>and</strong> oleoresin is used for canned soups <strong>and</strong> meat<br />
products.<br />
Chillies/Paprika/Capsicum<br />
Paprika is used both as a vegetable <strong>and</strong> as a spice. The mildly purgent chillies are used<br />
mainly as spices.<br />
Paprika powder is used as a colouring agent both in domestic cookery <strong>and</strong> in industrial<br />
food preparation. Blends of chillies <strong>and</strong> capsicum give cayenne pepper that is used in<br />
prepacked instant food <strong>and</strong> spicy sauces. Ground capsicum is used for sausages, meat,<br />
spaghetti <strong>and</strong> pizza.<br />
Clove<br />
Cloves are the dried unopened flower buds of the Syzigium aromaticium. They are used for<br />
domestic cooking, in the food industry for sauces <strong>and</strong> pickles <strong>and</strong> in the distillation of<br />
clove bud oil.<br />
Cinnamon/Cassia<br />
Cinnamon is the dried bark of the Cinnamomum verum. Cassia is the dried bark of other<br />
species of the Cinnamomum <strong>and</strong> is considered to be somewhat inferior to cinnamom.<br />
Cinnamon is used mainly in the food industry (puddings, sauces, pickles, beverages,<br />
biscuits, cakes, curry mixes, c<strong>and</strong>ies, chewing gum, confectionery) as well as domestic<br />
cooking. The oil is used in bin spice mixes, pickles, ketchup’s <strong>and</strong> coca-cola type<br />
