juice. It is believed that canned longan reta<strong>in</strong>ed their <strong>in</strong>dividual flavour better than<br />
‘rambutan’ and lychee.<br />
Subhadrabandhu (1990) has described <strong>in</strong> detail the process<strong>in</strong>g of longan <strong>in</strong>to dried<br />
fruits <strong>in</strong> Thailand. Accord<strong>in</strong>g to him longan fruits are dried either <strong>in</strong>tact or with pericarp<br />
removed. Small and medium fruits are used for dry<strong>in</strong>g. The process of dry<strong>in</strong>g longan<br />
fruits can be done by boil<strong>in</strong>g the fruit for five m<strong>in</strong>utes, followed by sun or oven dry<strong>in</strong>g at<br />
55 o C. When the fruits start to dry the temperature is raised to 70 o C until they are<br />
completely dried. The total dry<strong>in</strong>g period is 19-20 hours. Dried <strong>in</strong>tact fruits can reta<strong>in</strong><br />
better their flavour and aroma when compared to fruits which have been dried without the<br />
pericarp. The dried longan fruits conta<strong>in</strong> moisture of about 18-19 percent and have very<br />
high sugar content of 60-65 o brix.<br />
12. PRICING OF LONGAN<br />
The farm gate price of longan is often <strong>in</strong>fluenced by the <strong>production</strong>. Dur<strong>in</strong>g the<br />
‘on’ years when <strong>production</strong> is good, the price obta<strong>in</strong>ed by the farmers is usually low. The<br />
reverse is true when <strong>production</strong> is low dur<strong>in</strong>g the ‘off’ years. This trend is clearly seen <strong>in</strong><br />
Thailand (Table 7) and Taiwan Prov<strong>in</strong>ce of Ch<strong>in</strong>a (Table 8).<br />
