Winemaker Charles Bieler is a<br />
man of many wine projects. He<br />
began Bieler Père et Fils as a nod<br />
to his father Philippe, who founded<br />
Provence’s Chateau Routas, an<br />
estate focused on producing<br />
red blends and rosés from the<br />
Grenache grape. The younger<br />
Bieler and his sister Mira founded<br />
Bieler Père et Fils to solely produce<br />
rosé. The Sabine rosé—named for<br />
Bieler’ daughter, who was born in<br />
2005, the wine’s inaugural year—<br />
is made from grapes grown on<br />
five hillside vineyards surrounded<br />
the Provencal village of Aix-en-<br />
Provence.<br />
A blend of Syrah, Cabernet<br />
Sauvignon and Cinsault, with a<br />
small splash of Rolle, the salmoncolored<br />
wine is fermented in stainless<br />
steel and concrete tanks in<br />
order to maintain the fresh fruit aromas<br />
and flavors. Bieler stirs in fine<br />
lees (the sediment of residual yeast<br />
and grape skins left behind during<br />
fermentation) to give the wine<br />
extra body, which results in flavors<br />
of raspberry, cherry, strawberry<br />
and herb notes dancing across the<br />
palate. The very reasonable price<br />
helps make this one standout.<br />
Show up with this wine at a summer<br />
deck party and your friends<br />
will likely ditch their Pinot Grigio<br />
