This famous French estate,<br />

located north of Saint-Tropez<br />

in the heart of Provence, was<br />

founded by the Knights Templar<br />

and saw its first harvest in 1256.<br />

Throughout the winery’s embattled<br />

history, the vineyards stayed<br />

in tact and well maintained.<br />

Today, Philippe Austruy owns<br />

the estate, known now as Chateau<br />

Peyrassol. The vineyards,<br />

which are organically farmed<br />

and planted on rocky clay soil<br />

that includes limestone, are surrounded<br />

by Mediterranean forest.<br />

Olive and oak truffle trees<br />

grace the property and wild pigs<br />

are common in the area—an<br />

alluring landscape indeed for<br />

growing wine grapes.<br />

The 2013 Commanderie<br />

de Peyrassol rosé is a blend of<br />

Grenache, Syrah and Cinsault.<br />

Beautifully crisp and laced with<br />

delicate minerality, this is one of<br />

the most elegant rosés you will<br />

find, and it is consistently gorgeous<br />

year after year. It also sells<br />

out quickly, so be on the lookout<br />

for it. If your wine shop doesn’t<br />

have it, look for it on the wine<br />

lists of higher-end restaurants.<br />
