Party Squash <strong>Salad</strong>2 small zucchini, trimmed2 small yellow squash, trimmed1/4 cup fresh lemon juice2 tablespoons extra−virgin olive oilSalt and pepper, to taste4 ounces shaved Parmesan cheese1 large bunch of arugula, trimmed, washed and patted dry1 large ripe tomato, cored2 tablespoons chopped parsleyCut the zucchini and yellow squash into thin slices diagonally;place in a bowl. Whisk together the lemon juice, oil, salt andpepper; toss with the squash. Let rest for 15 minutes. Use a sharpvegetable peeler to shave the Parmesan cheese into long strips. Addto the squash.Place the arugula in a bowl. Slice the tomato into thin wedges;scatter over the arugula. Just before serving, spoon the squash anddressing over the arugula. Sprinkle with parsley and season withsalt and pepper.
