Cognac, Calvados,Armagnac and GrappaCognac, named after the town ofCognac in France,is a brandy, which is produced inthe region surrounding the town.It must be made from at least 90percent Ugni Blanc, FolleBlanche, or Colombard grapes.The rest of the cognac can consistof ten selected grapes. However,most cognac is made from UgniBlanc only. It must be distilledtwice in copper pot stills andaged at least 2 and 1/2 years inoak barrels in order to be calledcognac.Calvados is a brandy from alimited and strictly controlled areaof Normandy in north-westFrance, where the temperatemaritime climate has long beenperfect for fruit orchards. It ismade from apples and/or pearsand aged in oak barrels for aminimum of two years.Armagnac is from Gascony andlike Cognac is a grape brandy.The climate here is hotter & thesoil is very different, the result isthat Armagnac tends to have afuller flavour than Cognac & isoften deeper in colour.Grappa is a marc or pomancebrandy. Pommance is the skinspulp and pips leftover afterpressing any fruit.
