Both groups <strong>of</strong>students were tasked with document<strong>in</strong>g<strong>the</strong> food networks that susta<strong>in</strong> <strong>the</strong>ir cities,focus<strong>in</strong>g <strong>in</strong> particular on <strong>the</strong> social,built, and ecological matrices connectedto <strong>the</strong> Union Square Greenmarket <strong>in</strong>New York and to <strong>the</strong> Souk El Tayeb(SET) farmers market <strong>in</strong> <strong>Beirut</strong>.Young, who conceived City as Labas an <strong>in</strong>dependent faculty-to-faculty <strong>in</strong>itiativethat allows for a flexible cross-cityand cross-discipl<strong>in</strong>ary channel for collaboration,expla<strong>in</strong>s <strong>the</strong> rationale beh<strong>in</strong>d<strong>the</strong> pair<strong>in</strong>g <strong>of</strong> New York and <strong>Beirut</strong>:“Both cities face <strong>the</strong> same pressures <strong>of</strong>density, distribution, and price when itcomes to food choices and availability<strong>in</strong> this context. Fast food cha<strong>in</strong>s andglobal suppliers step <strong>in</strong>to <strong>the</strong> market tochallenge and displace local producersand local food practices.”As a way <strong>of</strong> document<strong>in</strong>g <strong>the</strong>seissues, dur<strong>in</strong>g two weeks <strong>in</strong> <strong>the</strong> spr<strong>in</strong>g,<strong>the</strong> students created dossiers about<strong>the</strong>mselves <strong>in</strong>clud<strong>in</strong>g everyth<strong>in</strong>g <strong>the</strong>yate <strong>in</strong> <strong>the</strong>ir home cities. This shar<strong>in</strong>g <strong>of</strong><strong>in</strong>formation about urban lifestyles wasconveyed through <strong>the</strong> range <strong>of</strong> socialmedia: YouTube, Tumblr, email, andFacebook. Even before <strong>the</strong>y met, “Thestudents got to know each o<strong>the</strong>r prettywell dur<strong>in</strong>g <strong>the</strong> course <strong>of</strong> this exercise,”says Young. “The New York studentswere super impressed by <strong>the</strong> AUBstudent design skills, but <strong>the</strong>y wereshocked by <strong>the</strong> amount <strong>of</strong> fast food<strong>the</strong>y ate. They had romantic notionsabout Lebanon and were not preparedfor this <strong>in</strong>formation.”Hav<strong>in</strong>g built up a clearer picture <strong>of</strong>how <strong>the</strong> o<strong>the</strong>r half lives based on foodhabits, <strong>the</strong> AUB students paired upwith New School students to conductresearch on <strong>the</strong>ir cities’ farmers markets.The New York City students carried outspecific site research for <strong>the</strong>ir <strong>Beirut</strong>counterparts to allow AUB students todesign market “pods” for Union Squareproducers <strong>of</strong> honey, mushrooms, flowers,w<strong>in</strong>e, or salad greens. These small,city-based units allow farmers to growand sell produce <strong>in</strong> situ <strong>in</strong> New Yorkand give <strong>the</strong>m <strong>the</strong> possibility <strong>of</strong> sleep<strong>in</strong>gover on market days ra<strong>the</strong>r than driv<strong>in</strong>gback and forth to <strong>the</strong> country.
