levels… The [AUB] students discovereda number <strong>of</strong> similarities as well as newtechniques, technologies, and urbanschemes that, <strong>in</strong> <strong>the</strong> end, enriched a lot<strong>of</strong> <strong>the</strong>ir design projects.hoped that this time AUB students willvisit New York.However, eight lucky New Yorkersdid get to spend <strong>the</strong> summer <strong>in</strong> <strong>Beirut</strong>as hard work<strong>in</strong>g <strong>in</strong>terns with variousAlong with Kara, Danberg-Ficarelliorganized a producers capacity build<strong>in</strong>gworkshop on organic compost<strong>in</strong>gdelivered by Ziad Abi-Chakerfrom <strong>the</strong> Lebanese company CedarFarmers Pod: <strong>the</strong> "pod" expands to hold produce at a farmer's market and collapses <strong>in</strong>to a public sitt<strong>in</strong>g area (Joana Dabaj“This engagement with a group <strong>of</strong>people carry<strong>in</strong>g out similar tasks allowed<strong>the</strong> students a bit <strong>of</strong> an ‘escape’ from<strong>the</strong> studio [by] giv<strong>in</strong>g <strong>the</strong>m permissionto use social media as a tool for learn<strong>in</strong>g.We explored a number <strong>of</strong> mediasand while it wasn’t completely successful(slow <strong>in</strong>ternet, dissimilar socialmedia sites, etc.), a good amount <strong>of</strong><strong>in</strong>formation was exchanged—and oneor two good friendships came out <strong>of</strong><strong>the</strong> semester!”The program’s <strong>in</strong>itial proposition hadprovided for <strong>the</strong> AUB students to visitNew York but this proved not to bepossible. Thomas says, “If we couldhave f<strong>in</strong>ancially provided for a trip toNew York at <strong>the</strong> start <strong>of</strong> <strong>the</strong> semester, Iam sure <strong>the</strong> collaborations would havebeen a lot richer. I guess it goes to showthat we haven’t yet been able to replace<strong>the</strong> experience <strong>of</strong> sitt<strong>in</strong>g with ano<strong>the</strong>rperson to share a meal and bra<strong>in</strong>stormnew ideas.” Steps are under way torepeat <strong>the</strong> program next year and it is<strong>in</strong>dependent Lebanese social and civicorganizations. They thrived on <strong>the</strong>opportunity to get to know <strong>Beirut</strong> better,as well as apply<strong>in</strong>g <strong>the</strong>ir knowledge andskills to a range <strong>of</strong> projects.Meredith Danberg-Ficarelli, AdamPhillips, and Hirumi Nanayakkara wereall seconded to <strong>the</strong> SET group where<strong>the</strong>y teamed up with Yasm<strong>in</strong>e Karaand Mohammad Chehab, studentsfrom <strong>the</strong> FAFS agribus<strong>in</strong>ess program.Work<strong>in</strong>g toge<strong>the</strong>r and separately, <strong>the</strong>students tackled a catalog <strong>of</strong> foodrelated issues.One <strong>of</strong> Danberg-Ficarelli’s projectswas to devise a zero waste garbagesystem for SET’s sister restaurantTawlet. Now that <strong>the</strong> system—a possiblefirst for <strong>Beirut</strong>—is up and runn<strong>in</strong>gand yield<strong>in</strong>g 95 percent organic waste,she is explor<strong>in</strong>g ways to expand <strong>the</strong>waste system <strong>in</strong>to a network for <strong>Beirut</strong>restaurants and is consider<strong>in</strong>g turn<strong>in</strong>g<strong>the</strong> project <strong>in</strong>to <strong>the</strong> subject <strong>of</strong> hermaster’s <strong>the</strong>sis.Environmental. “We’ve also done acrash course <strong>in</strong> quality assurance,” heexpla<strong>in</strong>s, “which <strong>in</strong>cludes mak<strong>in</strong>g sure<strong>the</strong> food safety rules and regulations atSET and Tawlet are ma<strong>in</strong>ta<strong>in</strong>ed.” Thisemphasis on quality assurance necessitatedspot check site visits to farms<strong>in</strong> various regions to guarantee SETstandards <strong>of</strong> quality and production.For Kara <strong>the</strong> summer has beenan eye opener. She visited parts <strong>of</strong>Lebanon she had never seen before.Her work <strong>in</strong>cluded conduct<strong>in</strong>g and writ<strong>in</strong>gup <strong>in</strong>terviews with producers all over<strong>the</strong> country. “I learned about places andth<strong>in</strong>gs I never knew existed,” she says.“And I got to know people I would nevero<strong>the</strong>rwise have met.”Kara and Phillips worked toge<strong>the</strong>rto structure Cook<strong>in</strong>g 101, a Tawletcook<strong>in</strong>g class; <strong>the</strong>n Phillips put his m<strong>in</strong>dto work on a bicycle-shar<strong>in</strong>g scheme.Both he and Kara, along with threestudents from FEA’s Graphic DesignDepartment researched and helpedwww.aub.edu.lb/ma<strong>in</strong>gate |Ma<strong>in</strong>Gate Fall 2011 21
