Student Cookery (Head <strong>of</strong> Department: Mrs G A Madden)This is a course in practical cookery designed for the novice cook. It is excellentpreparation for pupils who are planning to be self-catering during their time atUniversity or who simply wish to gain valuable life skills.The course is accompanied by a Student Cookbook through which the studentswork, acquiring basic culinary skills. The recipes are geared towards buildingpractical and organisational skills but take into account the likely constraints facingstudents <strong>of</strong> lack <strong>of</strong> funds and nutritional knowledge and limited kitchen equipment.Pupils will usually attend for one double period per week and a nominal charge <strong>of</strong>£30.00 is levied towards the cost <strong>of</strong> foodstuffs. This cost includes the course recipebook.Fabric and Craft skillsThis is a non-certificate course in practical textile skills which could run for a flexiblenumber <strong>of</strong> periods per week depending on the needs <strong>of</strong> the pupils. The aim is toencourage pupils to learn or improve their needlework skills which will enable them tomake or alter garments or make simple items. This will be particularly useful for anypupil who is pursuing a textile option in an Art / Design course or who would simplylike to learn to sew or knit. It is also useful to improve motor skills which might beuseful for candidates who wish to apply for Medicine or Dentistry.It is hoped that if there is sufficient uptake, some <strong>of</strong> the articles made in class couldbe sold at the Christmas Charities Fair in November as an enterprise activity. Somematerials may require to be purchased by the pupils.REHIS Elementary Food Hygiene CertificateThis food hygiene course occupies one period per week and leads to the RoyalEnvironmental Health Institute <strong>of</strong> Scotland Elementary Food Hygiene Certificate; aqualification which would enable pupils to work in a food retail environment.At the moment there is no fee as it is <strong>cover</strong>ed by the FSA.58Form 6 Subject ChoiceMarch 2012
