FAMILY RESTAURANTSAmong our family restaurants, the following events of notetook place during the year under review:Lao Beijing – the outlet in Orchard Towers was re-locatedto Plaza Singapura in June 2002.Grand Pavilion – due to the redevelopment of the ChineseSwimming Club, this popular restaurant ceased operationin May 2002.GROUP-WIDE DEVELOPMENTSWith 19 restaurants in total owned by the Group and threeothers under management contract as at the end of 2002,the <strong>Tung</strong> <strong>Lok</strong> Group has achieved a critical mass in whichto tap economies of scale.CENTRAL KITCHENIn July, we began operations in our central kitchen in BukitBatok. With 14,000 square feet of space, this foodmanufacturing facility allows the Group to carry out somecentralised food processing such as sauces and dim sum,and bulk purchasing of certain food items.This central kitchen will help the Group develop moreeconomies of scale in the months and years ahead. Goingforward, the Group intends to use this central kitchen toincrease the manufacture of seasonal products such asmooncakes, nian gao, and even the production of saucesand pre-mixes for sale.SERVICE EXCELLENCEThrough our loyalty programmes – theRegal Club and the Taipan card –we have started to track spendinghabits of regular patrons. The Grouphas also been able to use the databaseto carry out direct marketing of events andpromotions.More than 50% of our managerial staff have been sent fortraining on service excellence at the Service Quality Centrein Sembawang.
