using Jeju black pig pork famous nationwide for its<br />

top quality. The company is planning to export its<br />

products to Japan based on the CAS (Cells Alive<br />

System) method.<br />

The main product of Dinejeju Co., Ltd. is “Jeju<br />

Black Pig Pork Cutlet.” According to customer taste<br />

and size preferences, it comes in a wide variety of<br />

products such as mini-sized or with the addition of<br />

cheese, garlic, etc. The main ingredient is the tenderloin<br />

of Jeju black pig. Designed as a convenience<br />

food (“ready-to-eat”), Jeju black pig pork cutlets can<br />

be served after just three minutes of warming in a microwave.<br />

This makes Dinejeju’s products a simple<br />

food which can be enjoyed by busy office workers<br />

and as a nutritional snack for children.<br />

The unique feature of Dinejeju Co., Ltd. is its state<br />

of the art freezing technique - CAS. Standing for<br />

“quick freeze system,” it has only been introduced in<br />

advanced countries such as the United States, Japan,<br />

and nations in Europe. The biggest advantage of the<br />

system is that the taste and scent of food can be kept<br />

intact. Dinejeju Co., Ltd. was the first company to introduce<br />

the CAS system in Korea in 2009.<br />

The production process of Jeju black pig pork cutlet<br />

has several stages. The main ingredient - pork tenderloin<br />

- first goes through two treatments: semifinished-processing<br />

and oil-heat processing. Second, the<br />

processed pork is quick-frozen to (-55) for one<br />

hour and freeze-distributed using the CAS system.<br />

Frozen Jeju black pig pork cutlets can be stored for a<br />

long time, so despite heating the product in a microwave<br />

or electric oven, consumers can experience<br />

the crispy taste and aromatic smell of freshly fried<br />

pork cutlet. Also, the usual half-processed frozen pork<br />

cutlets need to be fried before eating, thus creating a<br />

problem with reusing the remaining oil. Dinejeju Co.,<br />

Ltd.’s pork product, on the other hand, can be cooked<br />

without adding any oil at all.<br />

Mr. Yoon Jae-hak, CEO of the company explains<br />

that “it is easy for the common frozen pork cutlets to<br />

lose the crispy taste and get tough, but our pork cutlets,<br />

thanks to the CAS, can retain the natural taste of<br />

a pork cutlet. Moreover, the company does not use<br />

any artificial additives and, instead of cooking oil, uses<br />

canola oil that is rich in omega-3.”<br />

The heat treatment processed pork of Dinejeju Co.,<br />

Ltd. will get a HACCP certification from the Ministry<br />

of Health, Labour and Welfare (MHLW) of Japan in<br />

the latter half of this year. After obtaining Japanese<br />

HACCP, the company is going to knock on the door<br />

of the Japanese pork cutlet market. Buyers from<br />

Hong Kong and Mongolia are also interested in<br />

Dinejeju’s product and the company is currently negotiating<br />

export deals with them.<br />
