Anticancer
Substance Found
in Makgeolli
The anticancer substance “Farnesol”
was discovered in Korean traditional
liquor makgeolli. The amount of
Farnesol in makgeolli is 25 times than
that of wine or beer. According to the
research of Dr. Ha Jae-ho of the Korea
Food Research Institute (KFRI), Farnesol,
one of the major aroma constituents of
fruit wine, is effective in preventing cancers.
Dr. Ha says that “if people drink
makgeolli twice a week, three or four
bowls at a time, they can actually experience
the anti-cancer effect of the liquor.”
Mineral Water made in Korea
the mineral water ‘N38’ to Hubei where it
is going to be sold in over 1,500 stores.
The company is planning to use the experience
Korean Rose Taps
the Global Market!
Several promotional events have been
held to expand exports of the Korean
rose. aT(Korea Agro-Fisheries Trade
Corp.) promoted the Korean rose to local
buyers and consumers in Shanghai,
China (April 13-14) and Vladivostok,
Russia (April 29-30). Seeking to enter
the European market with the product,
on April 30, aT market tested the flower
with wholesale traders and retailers in
the Netherlands, the world’s strongest
floricultural industry and market.
On display at the overseas promotional
events were Korean hybrid tea roses
and spray roses. Chinese buyers especially
liked the “Gold Rose” and
pointed it out as a promising item in
the Chinese flower market. Hybrid tea
roses received praise for their large
buds and vivid color and spray roses also
raised interest among visitors.
According to Kim Yong-sub, chief of the
export team of Daedong Nonghyup
(rose exporter), “overseas buyers highly
appreciated the beautiful colors and
high quality of the Korean rose.
We will actively promote the Korean
rose by customizing exports in accordance
with the preferences in each
country.”
Campaign Starts in New York
Hansik (Korean food) captivates the taste
of New Yorkers.
On April 18, the MIFAFF (Ministry for Food,
Agriculture, Forestry, and Fisheries) and
KFF (Korean Food Foundation), in cooperation
with famous Korean chefs and 10
Korean restaurants in New York, started
the “Hansik Mobile Kitchen” campaign.
Through April 20, free tasting events for
bulgogi, kimchi, bibimbap, japche and
other Korean dishes were held under the
slogan “Discover Delicious Secrets of
Korea,” in Bryant Park.
The event caused an unusual scene: New
Yorkers lined up from dawn to try the
Korean dishes. According to one of the
visitors, Mike Surabian, “New Yorkers
have a picky taste, but hansik is an exciting
choice. I think kimchi will be popular
with New Yorkers because it has a
unique spicy taste and is good for your
health.”
The campaign will continue until May 20 in
other main tourist spots of New York,
such as Columbus Circle, Korea Town on
32nd Street in Manhattan, Broadway, and
Union Square, from 11:30am to 2:00pm
on weekdays. You can check the details
of the events by SNS in real time (on
Korea’s Standard for Pesticide Residue in Ginseng
Becomes “Global Standard”
Last April 4-9, at the 43rd Codex Committee for Pesticide Residue
(CCPR) held in Beijing, it was decided that the standard for pesticide
residue “Difenoconazole,” suggested by Korea will be
applied worldwide as the international standard for ginseng.
The decision of the CCPR, based on the newly established standard,
opens doors to exporting Korean ginseng products such as
extracts, beverages, and red ginseng to overseas markets.
Korean Marine
Products Go Global
Three Main Factors: Clean Sea, Wide Mudflats, and
World-Class Aqua-Farming Technology
Korea, a country surrounded by seas on three sides, is blessed with favorable conditions
for the development of its fishing industry as it possesses vast mudflats (2,489.4) and
cutting-edge technology in the fisheries area.
Accordingly, the export of marine products from Korea is rising rapidly. Last year, on a
year-to-year comparison, the amount of exports increased 30.6 percent to a whopping
USD$1,798.50 million. The primary export items include tuna, squid, seaweed, flatfish,
oysters, Manila clams, conger, abalone, and so on. And the demand for Korean marine
products has been increasing all the more since the recent devastating earthquake in
neighboring Japan, especially as fear of the nuclear plant’s radiation leakage is growing. The
demand for seaweeds such as laver and kelp is soaring because seaweed possesses
abundant iodine that is known to be effective in enhancing immunity to radioactive materials.
Let’s find out more about Korea’s representative marine products - laver, oysters, sea
mustard, kelp, and abalone - all of which are cultivated in the nutrient salts of mudflats.
aver is one of the items that never fails to
be on the shopping lists of Japanese
tourists when they visit Korea. Last year,
the export amount of Korean laver exceeded
USD$100 million for the first time in its production
history. About 9,000 tons of Korean laver was exported
to 64 countries. The Korean Ministry of Food,
Agriculture, Forestry, and Fisheries (MIFAFF) projects
that the export amount will increase to a staggering
USD$500 million by 2020.
The denser texture and better flavor of Korean
laver, compared to the Japanese products, are attributed
to these favorable conditions: clean water, appropriate
amount of sunshine, fine temperature, and access
to fresh water. Korean laver differs from Japanese
and Chinese in that it is cultivated on a mudflat and,
therefore, can absorb many nutrients from it. Not surprisingly,
it has abundant vitamin A - almost 1400-
fold of that found in beef. Koreans usually eat seaweed
with freshly cooked rice or make gimbap (rice
rolled in laver). These days, Korean seaweed is gaining
popularity in other countries as a healthy snack or
as munchies to be served with alcoholic drinks.
The main laver-producing areas in Korea are
Seocheon in South Chungcheong province, Haenam,
Wando, Shinan in South Jeolla Province, and Busan.
Korean laver is exported to many countries. Last year,
USD$25.68 million worth of Korean laver was exported
to Japan, the largest importer of Korean laver, followed
by the U.S.A, Thailand, China, and Taiwan.
Korean companies are planning to explore new markets
in European, South American, and African countries by
developing and launching various laver products.
Oyster
Oyster, or “milk spouted by the sea,” is a popular
ingredient in foods throughout the world.
It contains much taurine, glycogen, zinc, selenium,
and other elements that make us healthier.
About 80 percent of the total yield of Korean oysters
comes from the clean waters on the southern
coast - places like Tongyoung, Geoje, Goseong, and
Yeosu. The waters there abound with plankton, and
are considered to be the best place for oyster growth
as the climate is moderate and the waves are not too
high. Particularly renowned oyster-producing areas
are Ganwoldo nestled in the fertile land of Seosan,
South Chungcheong Province, and Cheonbukmyeon
where the gap between the ebb and flow of the tide is
large and the amount of sun exposure during low tide
is long.
The hanging culture method was introduced in
Korea in the 1960s and the yield of plump, fragrant
milky oysters has greatly increased since 1972 when
Korea signed the Shellfish Sanitation Agreement with
the U.S.A., the biggest oyster-consuming country.
The export amount of Korean oysters reached
USD$66.05 million last year. The raw and refrigerated
oysters are all exported to neighboring Japan,
while frozen, smoked, and canned oysters are exported
to Japan and the U.S.A. The demand for Korean
dried oysters has been rapidly increasing in the
Orders Surge after Radiation Accident
The farm of sea
People in Korea celebrate birthdays with a
serving of miyeokguk (sea mustard soup) on
the table. And after a woman gives birth to a
child, she eats miyeokguk for more than a month. This
is because sea mustard is believed to help contract a
dilated uterus, and thin and stanch the blood. What’s
more, sea mustard has 763mb of calcium content per
100g and is rich in dietary fiber and iodine, therefore it
is beneficial for weakened bones and protects against
constipation and obesity after delivery.
According to the “Yuseo: Chohakgi” written during
the Chinese Dang dynasty, the people of Goryeo
(the kingdom of Korea from 918-1392AD) started
consuming sea mustard after they saw whales nibbling
at seaweed to heal scars after giving birth to baby
whales. The record implies that whales were the
first creatures to learn that seaweed is good for postnatal
care. It may also explain the coincidence that
Jeongja in Ulsan and Gijang in Busanm are the most
famous sea mustard-producing areas and whales frequently
appear there. The southern coastal areas in-
cluding Goheung, Jangheung, Jindo, and Wando in
the South Jeolla Province produce 90 percent of the
total sea mustard in Korea.
The export amount of Korean sea mustard reached
USD$19.039 million last year. Major importers are
Japan, the U.S.A, China, Canada, and Australia.
Domestic demand for sea mustard has also been rising
since the radiation accident in the wake of the catastrophic
quake in Japan.
Kelp
136.5mg of Iodine Content per 100g
Surging Demand among
Radiation-Conscious Consumers
Can Be Eaten as Powder or Pills
In Korea, kelp is used in most kinds of soup.
This is because the glutamic acid (a type of
amino acid) in kelp adds more flavor.
Kelp contains 136.5mg of iodine per 100g, far
more than sea mustard and laver which contain
11.6mg and 3.8mg of iodine, respectively. After the
news about the radioactive accident in Japan, kelp
producers have been inundated with domestic and
overseas orders. Dried kelp contains 708mg of calcium
per 100g (103mg in raw kelp) and 7.5g of potassium.
Potassium is known to be effective at controlling
blood pressure whereas laminin, a type of protein
also contained in this seaweed, helps lower blood
pressure. Thus it is highly recommended for hypertensive
patients. In addition, kelp is rich in dietary
fiber that helps peristalsis and drags long-lingering feces
and bodily wastes out of the body. Therefore,
steady ingestion of this product can be good for those
who suffer from constipation or are interested in
beauty treatment and dieting.
These latent benefits have been the reason for
kelp’s popularity as a healthy food, and now the seaweed
can be consumed as powders, pills, or noodles.
Specialists in medicine, medical supplies and cosmet-
Gathering kelp in Wando-gun
ics are actively researching the Korean kelp and trying
to develop new products with it.
The biggest kelp-producing area is Geumil-eup in
Wando, South Jeolla Province. It yields 80 percent of
the total kelp production in Korea. Korean kelp is exported
to the U.S.A, Japan, Canada, Russia, and the
Philippines, with the export amount tallied at
USD$5.987 million last year.
Feeds on Seaweed
Rich in Protein and Minerals
Export Markets are Expanding to
Southeast Asia
Abalone is called the king of shellfish as it is
the most expensive and rare among the
shellfishes. Korean abalone farming started
in the 1980s by cultivating the product in water
tanks on land, but by now has evolved into sea fencing
that enables mass production. With 5,300-odd
tons a year, Korea is the second leading abalone-producing
country after China, which (as of 2008) produced
33,000 tons of abalone.
The marine mollusk feeds on raw kelp and sea
mustard. That is why the best abalone farms are located
in Wando, South Jeolla province, a main production
area of kelp and sea mustard. Some abalone is also
produced in Shinan and Haenam in South Jeolla
Province, Tongyoung in South Gyeongsang Province,
and on Jeju Island. Unlike other shellfishes, abalone
has a high protein content and abundant minerals. It is
good for the liver and bowels, protects eyesight, prevents
obesity and cardiac infarction, and helps overcome
fatigue. Abalone can be eaten in a variety of
ways - raw as sashimi, in porridge, stew, or made into
abalone samgyetang (chicken soup).
Last year, Korea exported USD$36.82 million
worth of abalone, mostly to Japan whose abalone is
similar to Korea’s in scent and flavor. The future of
processed abalone foods looks very rosy as Korea has
been able to export canned abalone to Hong Kong,
the world’s biggest abalone importer. There is also a
plan to expand to markets in China, the U.S.A,
Taiwan, and Southeast Asian countries.
food that’s rich in nutrition. Amongst a variety
of vitamins and minerals, saponin, in
particular, helps to restore energy and enhance immunity
and blood circulation. Ginseng can be processed
in different ways and made into extract, capsules,
powder, candies, and more. Consumers can therefore
easily eat it at any time and in any place.
“Ginseng equals Korea” is an established notion:
Korea holds an unchallenged position as the birthplace
of ginseng. Compared to products from other
countries, Korean ginseng contains more than twice
the saponin. Organic ginseng produced in Korea is
farmed in an eco-friendly way and has recently been
exported to the overseas markets for the first time.
The event is receiving a lot of attention at home and
abroad. And in the middle of spotlight is “GINSENG
& ORGANIC ILHAN CO., LTD,” located in
Guemsan-gun.
All ginseng products of GINSENG & ORGANIC
ILHAN CO., LTD are produced organically. The
most notable point is that instead of pesticides and
chemical fertilizers, the company uses only a natural
and fermented fertilizer. According to Kang In-chul,
currently exporting various organic ginseng products
such as extract, tonic, and roots to overseas markets.
Healthy red ginseng contains highly enriched products
Delicious red ginseng products, on the other hand, are
for the consumers such as children who dislike a bitter
A Mouthful of Nutrition
Cherry Tomato
Exploring the Global Markets with Eco-Friendly
and Compactly-Packaged Products
There is an old Western adage, “The doctor
will be blue, when the tomato is red.” It
shows how much tomatoes benefit our
health. Tomatoes are a rich repository of nutrition.
Lycopene is effective in reducing the risk of cancer
and can prevent cardiovascular diseases.
In addition, the fruit contains fiber, vitamins, and
minerals. That is why it slows aging and is good for
patients with diabetes and osteoporosis. As they are
low in calories, tomatoes are also good when on a diet.
Korean tomatoes, especially cherry tomatoes (or
mini tomatoes), are becoming increasingly popular in
overseas markets. Now consumers in ten countries -
Japan, Hong Kong, Taiwan, Russia, and others - can
taste Korean tomatoes.
The main tomato-producing regions are Damyang
and Hwasun (in Jeollanam-do), Boeun (in
Chungcheongbuk-do), Nonsan (in Chungcheongnamdo),
and Buan (in Jeollabuk-do). The farms of these
areas are actively pioneering their way into overseas
markets, promoting the Korean tomato to the world.
In Production of
cherry tomato, automated
systems
such as the ‘Cherry
tomato sorter’ ensure
that every single
fruit meets the
quality standards
Damyang-gun: Organic Production of
Korean cherry tomatoes
are becoming increasingly
popular in overseas market.
Especially, cherry
trust in safety
The Damyang cherry tomato is an environmentally
friendly agricultural product exported overseas under
the brand name “Bamboo Grove & Clean Cherry
Tomato.” The major export markets are Japan and
Taiwan where it receives favorable evaluation for its
taste and quality. Over 70 farms in Damyang have
obtained “pesticide-free and organic” or “low-pesticide
and organic” certifications.
The species they produce ‘Unicorn’ is known for
its long lasting freshness. Instead of pesticides and
chemical fertilizers, the farms grow the product with
natural fertilizers which contain microorganisms.
What’s more, automated systems such as the “Cherry
the quality standards.
with Compactly-Packaged Products
Hwasun’s “Love in Nature” brand is actively exported
to overseas markets including Japan, China,
Russia, and Hong Kong. In addition to the main
country of export - Japan - Hwasun is known for trying
to tap into new markets. The greatest advantage
of the product is that it is made specifically for the
overseas consumers’ tastes. For example, Hwasun
cherry tomatoes are particularly popular in Hong
Kong because the farms, in order to expand export
volume, have developed 200g packages. This was
done based on the results of market research in Hong
Kong showing that local consumers prefer small
the opportunities in overseas markets.
Nonsan-si and Boeun-gun boast the largest tomato
growing areas and the longest exporting history. They
amount to 40 percent of all cherry tomato production
in Korea. Above all, under the leadership of the
Tomato Research Institute for Export (TRIE), they
have accumulated export know-how and are confident
that the system of: quality management diffusion
chase away the diseases and pests.
Last April, Buan eco-friendly tomatoes
were exported to Taiwan for the first time.
What do you think of the competitiveness in
Nowadays, organic is the trend in the global food
market. We started researching eco-friendly and
organic methods of cherry tomato production
quite early and were able to accumulate a lot of
know-how. We’ve never encountered any problems
in the quarantine processes for exports, so
Do you have any other export plans?
We think the important thing is raising awareness
in the world about the Korean cherry tomato. To
achieve this goal, we will hold various promotions
for the Korean cherry tomato in Japan and
Taiwan in the latter half of this year. When advertising
Secret of Chewy Taste in
Five Colors
EUNSUNG FOODS CO., LTD. pays particular attention
to packaging. It offers noodles in 50g singleserving
they sell well in department stores and are popular
gift items in companies. EUNSUNG FOODS
Plus Information
How to Cook Plain Noodles
Cooking plain noodles is very easy. Put them in
boiling water and simmer for two to three minutes.
Next, rinse the noodles in cold water two or
three times and drain the water. Boiled plain
noodles can be eaten with meat broth or sauces
depending on a customer’s preference.
plain noodles are supplied to airlines means our noodles
are competitive in taste and quality.”
The taste of smooth and chewy noodles produced
by EUNSUNG FOODS CO., LTD.
is beyond comparison. Why? The wheatflour
dough is matured and worked in several stages,
according to the temperature, season, weather, and
other conditions.
Check out the manufacturing process: first, they
knead carefully selected, high-quality flour into dough
and apply pressure to deflate the air. The dough is
then drawn out in long, pencil-size noodles and left to
rest in a maturing tank.
In the second stage, the matured dough is wound
around stainless steel sticks, each 50cm long, and put
in the maturing tank again. The dough, after maturing
twice, becomes more elastic and the smell of wheat
disappears. Making delicious noodles becomes easy.
When the two stages of maturing and kneading are
complete, the noodles are extended to two meters.
One more extension, and the manufacturing process
is finally over. In short, the key to making tasty noodles
is aging the dough twice and extending it three
times.
According to Kim Hyung-kyi, the president of EU-
not become mushy and break down after boiling because
they are made with matured and extended
dough. Consumers will enjoy the chewy texture of
the product.”
EUNSUNG FOODS CO., LTD. also makes
unique types of noodles. Their colorful noodles are
different from common products available in stores.
With the support of Iksan-si Agricultural Technology
Service Center, the company developed the technology
to manufacture noodles of various colors by
adding chlorella, yam, red koji rice, and black rice.
Depending on the ingredients, the noodles come in
one of the five colors: green, ivory, red, yellow, or
grey. Consumers can enjoy the noodles of their
choice in distinct colors and tastes.
President Kim explained that by adding other ingredients
made of agri-products, they were able to
“increase the nutrition of the noodles, provide a
unique taste, and maintain the high quality of the
products.”
The company has participated in many international
Saongwon is a food producing and exporting company
established in 1995. They make a variety of
foods - haemul pajeon, assorted fried foods, japchae,
topokki, etc., and recently their jeon products have become
particularly popular. Saongwon started to export
jeon in 2003, first to Japan, and now the products
are being exported to 17 countries including the
United States, Canada, Australia, New Zealand, the
European Union, Hong Kong, Singapore, and countries
of the Middle East. As of 2010, 350 tons were
exported (USD$320,000).
Saongwon’s jeon can be made into a meal, used as
side dishes for alcoholic beverages, or served as a nutritious
snack for kids. Each of the ingredients - kimchi,
seafood, mung beans, and vegetables - has its
Delicious Korea _ MAMMOS CONFECTIONERY CO., LTD.
“Whole Grain Snack”
No Artificial AdditivesProduct Safety Assured
A Healthy Snack for People around the World
As safe, healthy foods rise as an issue
around the world, more and more people
are turning their attention to whole grain
snacks.
MAMMOS Confectionery Co., Ltd. is a leading
Korean producer of grain snacks and candy.
Established in 1985, the company is proud of its 25
years of experience in manufacturing whole grain
snacks.
The company’s President, Shin Sung-bum, emphasizes
that they “produce snacks in accordance with
the company’s spirit of making safe and healthy food,
with hope and confidence.”
The whole grain (rice, wheat, and corn) snacks of
MAMMOS are made in high temperatures and under
high pressure. Most of the rice snacks are stickshaped
and are at least 80 percent rice. They are not
fried with oil, so they are free of trans fat and gluten.
Anyone can enjoy these snacks and not worry about
allergies.
MAMMOS also offers consumers unique products
such as “Cereal Bar,” which is made with red ginseng
and citrus, and uses white, brown, and black rice.
The machine that forms the snacks in the shape of
long round sticks is patented (10-0328477) and represents
just one out of the many technologies that are
the power of the company.
The biggest advantage of grain snacks produced by
MAMMOS is safety. Normally, snacks include artificial
additives such as antioxidants, synthetic preservatives
and pigments, but MAMMOS does not use any
of these.
According to Mr. Shin, “the food safety problem is
a chronic headache of the growing world snack industry.
Even if a manufacturer uses a small, permitted
amount of artificial additives, the product could cause
someone a problem. Thus snacks should be made
safe for everyone, so that even a small baby could enjoy
them!”
In addition to rice and other grain snacks, MAM-
MOS produces candies and cookies. Especially large
are its variety of candies made of rice, ginseng, red
ginseng, citrus, citron, and green tea.
The products are distributed all over the world - in
Japan, the United States and other countries - under
the “Friend” brand name and under the names of big
companies using OEM contracts. These snacks can
be found on the shelves of Costco and Whole Food
Market in the U.S. and Daiso in Japan. For two years
It’s New ! It’s New !
Fresh & Sweet ‘Sliced Apples’
Product Launch of Dried Fruits Rich in Vitamin C
Organic Fruit Juices, ’DUREA’
Made with Organic Pears and PumpkinsNo Artificial Sweeteners!
ILHAK INTERNATIONAL CO., LTD. has released
“Dried Fruits,” a new product that is
rich in vitamin C and contains no artificial additives
such as synthetic preservatives.
“Dried Fruits” is a perfect snack for children, the
elderly, and people with weak health because the item
preserves the original fruit flavors and its texture is
soft. What’s more, “Dried Fruits” stays fresh for a
long time and, compared to other processed fruit
snacks, ensures a minimum loss of nutrition.
To guarantee the excellent quality and safety of the
product, the manufacturer uses only fruits grown in
Korea as the main ingredients. Currently, the main
items are apples, pears, and strawberries. As the development
of “Dried Fruits” was supported by MI-
FAFF (Ministry for Food, Agriculture, Forestry, and
Fisheries), you can trust the product’s quality.
Healthy Snack without Artificial Additives
Let’s look at the process of making “Dried Fruits.”
First, the fruits are carefully washed, peeled, and cut
into bite-sized pieces. Second, they are treated with
heat and sugar is added. After that, the product is
dried two times.
Most parents have the same feeling about
food for their children: “If this is going
to be for my kids, let it be healthy and
safe.” In other words, many consumers are extremely
concerned about the taste and safety of food.
Naturally, parents prefer that their children drink fruit
beverages rather than carbonated drinks that contain
unnecessary chemical additives.
Gaining Popularity among Young Parents
with Infants
Juices made in Korea with organically farmed
pears and pumpkins have been steadily exported
overseas and receive a positive response from local
consumers. The pear juices and pumpkin juices exported
abroad under the “DUREA” brand name have
an especially high purchase rate among young parents
raising infants. This is because - despite the absence
of chemical additives - the taste of the products is
sweet. What’s more, these juices also contain ginger
and jujube. In sum, DUREA juices are every bit as
good as other premium fruit beverages. Currently,
DUREA juices are actively exported to many countries
including the United States, China, Indonesia,
Malaysia, and Australia. DUREA FOOD Co., Ltd.
plans to develop a bigger variety of juices in the future
and look for new markets in Asia and Europe.
People
Bibimbap on the Wheel
Will Visit You Soon
People around the world, celebrities included, love bibimbap because the
ingredients are the perfect harmony of taste and nutrition.
Bibimbap is also well known as a healthy food because it contains a variety
ingredients such as vegetables, grains and meat that give us strength.
Unlike other Korean diet foods, you don’t need to prepare side dishes
separately because they all come in one bowl - just mix them up with a spoon or
chopsticks and eat! But even if you want to have bibimbap,
it may be difficult to find a place to buy it. Of course, there are ready-to-eat
bibimbap products on the store shelves and recipes in English, Japanese,
Chinese and Spanish are available on the internet and in books
but, still, it is only in a Korean restaurant that you can really enjoy it.
What if bibimbap came to your neighborhood?
The members of ‘Plusminers’ team:
Three young men and a young woman will visit
you with bibimbap. The ‘Plusminers’ team - Kang
Sang-kyun, Kim Myeong-sik, Chung Kyu-woon, and
Kim Su-chan - started their world tour with bibimbap
on April 5th. The first country they went to was
China.
The team’s leader, Mr. Kang explains: “I’ve been
thinking I wanted to do something valuable for two
years and gathered people who shared the same
thoughts. While I was searching for a subject that
would give positive thoughts about Korea to foreigners,
I realized that bibimbap is easy to eat and nutritious,
so it would appeal to people from different cultural
backgrounds.”
They introduce bibimbap as “a better mixture of ingredients.”
For example, sugar and flour by themselves
are not food but if we mix and bake them, it
becomes delicious food - bread or cake. In a similar
way, bibimbap is a perfect mixture of common ingre-
Simple Korean Cooking
Refreshing, Sweet and Spicy Pasta Salad
“Bibim Guksu”
Now that it’s May, spring has really
come. In this season, people often
feel drowsy and weary. Why not try
the Korean style spicy pasta salad - bibim guksu
- and chase away the fatigue?
Bibim guksu is made by boiling thin noodles
made of flour or rice powder, then washing them
in cold water, and mixing them with a variety of
vegetables and gochujang sauce. The dish looks
similar to naengmyeon (cold noodles) but if
naengmyeon uses starch noodles with spicy
sauce and just a few vegetables, bibim guksu
contains many kinds of vegetables - cucumbers,
onions, carrots, and more, so it not only tastes
good but fills you with the energy of vitamins!
To make the noodles chewy, follow these
steps: 1. Put the noodles in the water after it
starts boiling. 2. When the water with noodles
reaches the boiling point, add a cup of cold water.
3. Once the bubbles appear for the third time,
sieve the noodles. 4. Put them in a bowl of ice
water, rinse well and filter again.
The sauce made of vinegar (or lemon juice),
sugar (or oligosaccharides), gochujang, and
sesame oil, will make your mouth water. And
the harmony of chewy noodles with crispy vegetables
will double the joy of eating!
If you are a fan of kimchi, you can make the
sauce by mixing together 200g of chopped yeolmu
kimchi or baechu kimchi, 1/2tbsp of sugar,
and sesame oil. The dish made with this sauce
and washed noodles is called “kimchi bibim guksu.”
It is easy to make and the taste is great!
How about waking up your tired body with
the spicy and fresh bibim guksu that Agrafood
introduces here?
Bibim Guksu:
Sauce: 1 gochujang, 1/2 spoon
vinegar (or lemon juice), 1/2 spoon
sugar, 1/2 spoon sesame oil, a dash
of sesame
Ingredients: dried thin noodles
(somyeon), 70g of onions, 70g of
carrots, 70g of cucumbers, 50g of
paprika pepper, 1 egg
1. Put the noodles in boiling water
and stir well. As soon as the water
starts boiling again, add a cup of
cold water. When the water reaches
its boiling point for the third
time, wait for one minute and sieve
the noodles. Wash the cooked
noodles in ice water and filter the
water out.
2. Put an egg and 1/2 a spoon of
salt in a pot and pour water in so
that the egg sinks. Boil for ten
minutes and put the egg in ice water.
It will make the egg easy to
peel. Cut the boiled egg in half.
3. Mix the gochujang, vinegar, and
sugar together.
4. Cut all the vegetables 5cm long
and thin (like noodles but a little
thicker). Put the onion in cold water
for ten minutes to reduce its
spicy taste and smell.
5. Mix the noodles, vegetables, and
sauce. Be careful not to mix too
hard, as it will spoil the taste. Mix
the ingredients with chopsticks or
gently with a hand covered in a
vinyl glove.
6. Add sesame oil and toss.
7. Put the noodles on two plates,
sprinkle some sesame, and put
half an egg on top of each dish.
Interesting Story of Hansik
A Scrumptious Combination of Sweet
Gravy and Soft Beef Bulgogi
By Lee Myeong-ah
A food culture columnist who
writes about the healthy
Korean diet, traditional Korean
food, and local cuisine, she
contributes to a series dedicated
to the farmers who produce
high-quality agricultural
products and to a travel column
searching for the best
foods.
Bulgogi, is the world-famous Korean dish,
made by beef in a mixture of various ingredients
such as soy sauce, vegetables
Bulgogi, or Korean
Barbecue, is a delicious
Korean dish made by
marinating beef in a mixture of
‘ganjang’ (soy sauce), honey,
crushed garlic, and ground pepper;
and then roasting the marinated
beef. From olden times, Koreans
have had this beef dish on special
occasions or get-togethers. Even
now, the dish never fails to be on a
menu when people feel like dining
out.
The original name of bulgogi is
“neobiani” (gilled slice beef). The
royal court and noble families used
the term to refer to a minced beef
pad. The tradition of Korean roast
beef developed from “maek-jeok,”
or a beef kebab made by skewering
and grilling lumps of beef. The
“maek” in maek-jeok is the name
of a region in northeast China,
where the ancient kingdom of
Goguryeo (one of the three kingdoms
of Korea from the early age
[37 BC-668 AD]) was located.
“Jeok” stands for “grill.”
With the advent of a gridiron,
Koreans no longer needed to
skewer the lumps one by one, and
thus bulgogi was born. It is said
that bulgogi is the only dish in
world culinary history that is made
by soaking beef in a sauce and
roasting it. There are similar dishes
in China, but they all skip the
preparatory marinating stage and
are made by seasoning beef with
sauces just before roasting.
Harmony of
Charcoal-Broiled Beef and
Lettuce, Ssam
There are a variety of ways to
savor every mouthful of bulgogi.
Both a spoonful of beef stock and
charcoal-grilled beef with no stock
can be ways to enjoy the dish.
Either way, we can fully feel the
tenderness of the meat, and so bulgogi
has become one of the favorite
Korean meat dishes among
Koreans and non-Koreans alike.
Lettuce ssam (food wrapped in lettuce)
cannot be left out when it
comes to bulgogi. A lettuce leaf
pouch of bulgogi with ssamjang (a
mixture of doenjang - soybean
paste) and gochujang (red pepper
paste), and various ingredients inside
offers unheard-of deliciousness.
The charm of enjoying beef
and veggies at once appeals even
to non-Koreans and, as soon as
they see bulgogi, putting a leaf of
lettuce on their palm is a knee-jerk
reaction.
These days, bulgogi comes in
diverse names and recipes. In particular,
Eonyang Bulgogi and
Gwangyang Bulgogi are receiving
renewed love from Koreans.
These two dishes are named after
regions of Korea. Eonyang
Bulgogi is the dish following the
recipe from Eonyang, which is located
in the Gyeongsang Province
of southeastern Korea. The elaborate
recipe starts with careful selection
of each ingredient. First,
they choose a young cow that has
had only one or two calves and
cook its meat within 24 hours
while it’s still fresh.
“Gwangyang” refers to the
Jeolla Province in the southwestern
part of Korea. Local bulgogi is
made by selecting the fatty beef
part and marinating it right before
grilling it over an oak-tree charcoal
fire. On the subdued fire, this cookery
renders the meat soft and sweet.
Ttukbaegi Bulgogi Has
Tastier Stock
Ttukbaegi bulgogi (bulgogi in a
stone pot) is a genus of bulgogi
dishes that are made by adding
and boiling some water in the dish.
With the taste fortified by the rich
juice of the meat and sauce, the
dish stimulates appetite. When
feeling like having a mixture of
cooked rice and sweet beef broth,
ttukbaegi bulgogi is just what the
doctor ordered.
Until only 20 or 30 years ago,
Koreans enjoyed bulgogi mainly
as jeongol (stew). This kind of
bulgogi dish was cooked in a big
pan with vegetables in the central,
deeper part and marinated meat on
the edges. As the meat juice trickled
down to the vegetables, the
broth made a perfect accompaniment
to cooked rice. Now the pans
for the bulgogi dish of this sort
have disappeared, but the taste of
bulgogi broth is not forgotten.
Those who want to have the olden
day’s taste of bulgogi have come
up with a new way of reviving it
in a ready-to-boil ttukbaegi (stone
pot). Ttukbaegi bulgogi, a favorite
dish of the older generation and
children, is all the more welcome
as a lone diner can enjoy it.
There are many Chinese restaurants where you can
eat jajangmyeon (black bean sauce noodles) with a
more than a century-long history and stores where
you can buy Chinese souvenirs, traditional items,
food, and liquor.
Jajangmyeon can be regarded as one of the first fusion
foods - it originated in China but by adding
sweet caramel sauce to salty black bean paste it has
developed into something far different from the
Chinese version. The price for a serving is quite reasonable
- about 5000 won.
Once you’ve bought traditional Chinese clothes for
women or babies and ate a bowl of jajangmyeon,
you’ve completed the most important tasks on the
and floundering (there is no danger at all) in
Disco.
When you are done with the rides, let’s go to the
Shinpo is the most famous outdoor market of
Incheon and the most popular food here is dakgangjeong,
A long line of people is always there waiting
to get it. Dakgangjeong with a bottle of cold beer
* Warning! Some restaurants prepare dakgangjeng
very hot, so ask them to serve you a milder one when
you order. The market is full of foods - including
has some beautiful lakes, and Lakes Uiam and
Soyang are not to be missed.
Soyang Dam, one of the biggest dams in Asia, offers
a fantastic view of the lake. And
Cheongpyeongsa (a Buddhist temple) and Obong
Mountain are near! You can also enjoy fishing for
leather carp, masou salmon, and pond smelt. It is not
too much to say it is perfect!
Lake Uiam in the southern part of Chuncheon is also
enjoyable - you can fish and look at the beautiful
scenery.
Representative Foods of Chuncheon,
Dakgalbi and Makguksu
No doubt most people associate Chuncheon with
dakgalbi (spicy, stir-fried chicken meat). Some even
say that your Chuncheon trip is worthless if you don’t
eat dakgalbi. Although the “galbi” in “dakgalbi”
means “rib,” it is quite different from beef or pork
galbi. The dish is made by stir-frying chicken meat in
a big pan with spicy sauce and vegetables. Even
though you will be full after having a dish of
dakgalbi, don’t miss another local specialty - makguksu
(buckwheat noodles with sauce, mustard and vinegar
seasoning, and radish water kimchi). There are
three dakgalbi towns in Chuncheon: Myeong-dong,
Onul-dong, and Hupyeong3-dong.
