The Sweet Air of The Southwest<br />

One of the most typical local specialities in Bordeaux is known as the Cannelé – delicious little<br />

cake-like sweets that are a favourite for tourists. Perhaps the most famous are made by the House<br />

of Baillardran. We thought it would be interesting to ask Madame Angèle Baillardran herself to<br />

tell us a little more about her city and what makes it so special…<br />

The beauty of the place and its history, the old<br />

Bordeaux that has such incredible charm and the new<br />

town that is increasingly dynamic, with the beautiful<br />

quays, the gardens, the waters mirrors, and the trams.<br />

Do you have a favourite restaurant and/or wine bar?<br />

The Brasserie Bordelaise in Rue St Rémy, run by<br />

Nicolas Lascombe. It’s very typical of the southwest<br />

with a good atmosphere and delicious food. There are<br />

numerous local specialties, including, of course, foie<br />

gras, delicious red meats, fresh fish and above all, a<br />

style of cuisine that one only finds here. The dishes are<br />

simple, but cooked to perfection with quality products.<br />

Visitors from abroad will adore this place because not<br />

only is the food good, but the place itself is attractive<br />

while also being simple. In terms of wine, I have a<br />

preference for Pessac-Léognan red, from the Graves<br />

region.<br />

Can you suggest a ‘must’ for those on a first visit to<br />

the city?<br />

La Place de la Comédie with the Grand Théâtre, built<br />

in the later part of the 18th century and now home<br />

to the national Opera of Bordeaux. The square was<br />

recently renovated when the tramway was launched<br />

in the city around five years ago. Facing the theatre,<br />

is the Grand Hôtel de Bordeaux, which has beautiful<br />

terraces: a wonderful place to stop and refresh oneself.<br />

Can you recommend an unusual place for the visitor<br />

to discover?<br />

The water mirror on the docks of Bordeaux. This is<br />

a new feature here, as while the quays are from the<br />

18 th century, the entire area was recently restored to<br />

perfection, in the style of yesteryear, with beautiful<br />

gardens and open spaces, and in particular this<br />

extraordinary water feature that gives the illusion of<br />

having deep water, but on which the visitor can stroll<br />

as though walking on its surface. The perspective is<br />

magnificent.<br />
