Crunchy Cheese Tortellini 

These crunchy, cheesy appetizers 

are so easy to make, even the little 

ones can help. 

Ingredients: 

1 pound fresh or defrosted cheese 

tortellini 

1 egg 

2 tablespoons milk 

1 cup Italian-seasoned panko 

or breadcrumbs 

Olive oil spray 

Marinara or pizza sauce for 

dipping 

Directions: 

Preheat oven to 400 degrees. Line 

baking sheet with aluminum foil. Beat 

Cinnamon Roll Pizza can be prepared as a dessert or breakfast. 

egg and milk in medium bowl. Place 

breadcrumbs in gallon-sized zipclose 

bag and crush lightly. Place tortellini 

into egg mixture to coat well, 

and then drain in a colander. Place 

into bag with breadcrumbs, close 

the bag and shake to coat tortellini. 

Pour onto prepared pan, and spray 

lightly with olive oil spray. Bake for 

20 minutes or until crumbs are crisp. 

For browner tortellini, turn on broiler 

for 1 minute, watching closely so 

they don’t burn. Serve with marinara 

or pizza sauce. 

Cinnamon Roll Pizza 

Surprise Dad with this unusual 

treat for dessert or even breakfast. 

Buy prepared pizza dough for one 

crust. Roll out dough and place on 

lightly greased pizza pan. Let dough 

rest for 10 minutes. 

Meanwhile, mix the cinnamon 

sugar spread: 

1/2 cup butter, softened 

1/2 cup brown sugar 

1/2 cup old fashioned oats 

3 teaspoons cinnamon 

Spread over pizza dough and 

bake at 400 degrees for 12-15 minutes. 

Remove from oven. Let it cool 

for 10 minutes. 

Prepare the cream cheese glaze: 

4 tablespoons unsalted butter 

2 ounces of cream cheese, 

at room temperature 

3/4 cup powdered sugar 

1/2 teaspoon vanilla extract 

Beat together butter and cream 

cheese, and then mix in powdered sugar 

and vanilla. If mixture is too thick, soften 

briefly (5-7 seconds) in microwave. 

Drizzle over cooked pizza. ª

What is a 

Court Appointed 

Guardian?

Martha, a 75 year old widow, fell in her own home and was unable 

to get up. Two days later, Martha’s next door neighbor happened to hear 

yelling and crying coming from Martha’s home. The neighbor peered in 

through a window and saw Martha lying on the floor in an incapacitated 

state. Realizing she needed immediate help, the neighbor called 911. The 

police and an ambulance arrived, entered the home and carried Martha to 

the hospital emergency room. Martha was diagnosed with a broken hip. 

From that point Martha’s well being took a downward spiral. Martha’s 

doctor learned that she lived alone and was partially blind. Although she had 

all of her mental faculties, following a hip operation she would need physical 

therapy. Martha said she had no living care documents and no living relatives 

with whom she maintained a close relationship other than a granddaughter. 

After several unsuccessful attempts to contact the granddaughter the doctor 

contacted the Department of Children and Families (DCF). Because 

Martha was unable to care for herself, DCF petitioned the court to appoint 

a Professional Guardian for Martha. Once a Guardian was appointed, 

Martha’s life dramatically changed. 

After visiting Martha’s home and witnessing complete disarray, 

such as filthy dishes, spoiled food, unattended cats, cat feces throughout 

the home, and much more, the Guardian having authority over Martha’s 

health and financial well being, reported to the court that Martha should not 

return home and placed in an assisted living facility. 

Martha argued to the court she wanted to go home and not to be 

placed in an assisted living facility as suggested by her Court Appointed 

Guardian. Even though Martha had all of her mental faculties, the court 

sided with the Guardian stating that because of Martha’s physical disability, 

partial blindness and the condition of her home Martha should be placed in 

an assisted living without any hope of ever returning home. 

In order to pay for Martha’s living expenses or subsequent costs 

for application for Medicaid benefits, the Guardian sold Martha’s home, 

liquidated her bank accounts and set up a trust account to pay for the 

guardian’s salary, assisted living facility and any Medicaid costs that may 

become necessary. 

Could Martha have avoided the need for a Court Appointed 

Guardian and retained ownership of her home and other assets? Could 

Martha have returned home after her surgery rather than being placed in an 

assisted living facility? The answer to these questions is yes. 

Had Martha prepared living care documents such as a Preneed 

Guardian, Health Care Surrogate and a Durable Powers of Attorney naming 

someone she trusted to assist her in her time of need, 

she could still be living at home in control over 

her own life and assets. To find out more about

On Sept. 25, 2016, the world lost 

a golf legend and Central Florida 

lost a community champion. 

Arnold Palmer’s celebrated 

golf career saw seven major titles, 

including four Masters Tournament 

championships, 62 PGA Tour wins, 

95 professional victories, 26 amateur 

victories, 10 Champions Tour 

victories, and six Ryder Cup appearances 

and World Cup appearances, 

respectively, until his retirement on 

Oct. 13, 2006. He then served as 

an honorary starter for the Masters. 

His unique style of golf garnered 

a legion of fans, known as Arnie’s 

Army, and the famous nickname 

“The King.” 

Born Sept. 10, 1929, in Latrobe, 

Pennsylvania, Arnold first acquired 

his driving ambition to play the game 

of golf from his father, Milfred 

“Deacon” Palmer, who was the 

head professional and superintendent 

at Latrobe Country Club. 

Arnold would later attend college 

on a golf scholarship before serving 

in the U.S. Coast Guard for three 

years. He continued to play golf 

throughout, and, in 1954, after significant 

amateur success, he decided 

to turn pro. His decision would alter 

the course of golf history. 

Golf Legend 

“It is literally impossible to describe 

his impact on golf,” said Suzann 

Pettersen, a professional golfer. “It 

is impossible to put into words what 

he’s given to the game. His greatness 

was just enormous. I’m very fortunate 

I was able to spend some time getting 

to know him. There was always 

something to pick up and learn.” 

Pettersen also sought Arnold’s 

advice regarding his successful 

golf-related business career, which 

included Arnold Palmer’s Bay 

Hill Club & Lodge, where she’s 

been a member since she moved to 

Orlando in 2003. She was elated 

at his friendliness and readiness to 

share his knowledge. 

“I wanted to ask him about sports 

management, as I was looking to 

start a business,” she said. “Two 

hours later, he told me the whole 

story. He took the time. I expected 

two minutes, and he gave me two 

hours. He gave me all the stuff you 

can’t read in a book. Those kinds of 

moments are priceless, literally.” 

Throughout those years, Arnold 

sent Pettersen several personal letters 

offering continued advice, encouragement 

and even humor. 

“Every time a letter came in the 

mail, I was ecstatic,” she said. “And 

there was a story behind every letter. 

I have maybe 12 to 13 letters framed 

in my office. They are all great memories. 

Sometimes they gave me a 

laugh. It was a very professional 

touch, a very unique thing to do. He 

[wrote letters] for other players, as 

well. He was a great man to know. 

“And he was always super generous 

and humble,” she added. “He 

cared. He had this aura, you could 

feel it. You felt like you were the only 

one in the world talking to him.”

“If you didn’t see him coming, 

you’d hear him whistling or saying

hall,” she said. “He was very jolly. 

“He’s everything you’ve 

heard and more,” she added. 

“He was a kind, giving 

person. And he was humble. 

It’s an honor to continue 

his legacy — a legacy 

that will live well past his 

years.” 

After Arnold passed, 

Doyle and her team worked 

diligently to keep the 

Arnold Palmer Invitational 

one of the top events on 

the PGA Tour, while paying 

tribute to Palmer. With 

a focus on new traditions, 

such as an Arnie cardigan 

awarded to the champion 

and tributes to Palmer during 

the opening ceremony, 

the tournament will continue 

to thrive. 

“Our team’s biggest objective 

was honoring him without being 

too flashy,” she said. “He didn’t 

like to be put on a pedestal. It was 

finding the right balance.”

This year’s tournament featured a 

new opening ceremony and a host 

committee that included professional 

golfers Peter Jacobsen, Graeme 

McDowell, Annika Sörenstam, 

Curtis Strange and the first U.S. 

Secretary of Homeland Security 

Tom Ridge. They also placed 

Arnold’s golf cart, unoccupied, in his 

favorite place to watch the play. 

As a tribute to the late Arnold Palmer, his golf cart 

is placed in his favorite watching spot during the 2017 

Arnold Palmer Invitational. 

“It was his spot,” Doyle said. “He 

would sit there and watch. He was 

the only one that could drive right 

up on the 16 tee box, and everyone, 

even all the players, loved it. He was 

magnanimous.” 

Bay Hill 

Arnold fell in love with the Bay 

Hill area after playing nearby in 

golf tournaments. He purchased 

the Bay Hill Club & Lodge in 1974, 

and it quickly became a PGA 

Tour stop. 

“He had come down to play the 

Citrus Open several times, and he 

realized he loved the area here,” 

Doyle said. “He went up in a helicopter 

around the Isleworth and 

Bay Hill area and said, ‘That’s 

what I want.’ He saw all the citrus 

groves and got the feel of the 

area, and he purchased it. He 

had a major connection from the 

beginning.”

In the early 1980s, Arnold’s connection 

to Central Florida would 

forever change the course of health 

care for children, women and families. 

He and his wife, Winnie, 

were invited to tour the Orlando 

Regional Medical Center with 

John Bozard, then the CFO of 

Orlando Regional Healthcare 

System, and neonatologist 

Gregor Alexander, M.D. The 

couple witnessed firsthand the busy 

neonatal and pediatric intensive 

care unit areas.

“At the end of the tour, we asked 

him, ‘What did you think?’” said 

Bozard, now the president of the 

Arnold Palmer Medical Center 

Foundation. “He said, ‘Well I 

think you’re doing great work here, 

but I think we could do better for our 

kids.’ The rest is history, so to speak.” 

“’We can do better,’ that was his 

motto,” Doyle said. “He was always 

working to make things better.” 

On Arnold’s 60th birthday, he 

helped to officially open Orlando’s 

first hospital dedicated to women 

and children — Arnold Palmer 

Hospital for Children. In 2006, 

Winnie Palmer Hospital for 

Women & Babies opened just 

across the street. 

Dr. Alexander, a neonatologist 

at Winnie Palmer Hospital and its 

NICU’s namesake, recalled that he 

was swiftly impressed with Arnold. 

“I quickly learned he was generous, 

caring, compassionate and 

committed,” he said. 

Arnold’s follow-through was equally 

impressive, Bozard said. He was 

known to visit the hospitals, offering 

comfort and encouragement to the 

patients and staff. 

“On one visit, he went to see a 

little boy who had just had open 

heart surgery and was really down, 

really depressed,” Bozard said. 

“[Arnold] walked in and said, ‘Do 

you know who I am?’ And the boy 

responded, ‘No.’ He said, ‘This hospital 

has my name 

on it’. And they began 

chatting. Soon 

the boy's [food] 

tray came, and he 

started eating. The 

nurse came in and 

said, ‘Oh my gosh, 

he hasn’t eaten in 

two days.’ He just 

had this way about 

him.” 

Legacy 

Arnold tirelessly 

ensured that the 

medical center 

would continue to 

flourish with The 

Arnold Palmer 

Invitational and the Arnold Palmer 

Medical Center Foundation as benefactors. 

Future plans for the hospital 

include a new patient wing expansion, 

programs, neuroscience area, 

heart surgery and pediatric oncology 

area. 

“While his claim to fame was his 

legendary talent and his fresh and 

exciting approach to the game of 

golf, which captivated the attention 

of millions of people, Arnold’s mark 

on this world was so much more,” 

Bozard wrote in a letter published 

by the Orlando Health Foundation. 

“I am sure that history will be kind to 

Arnold for the incredible impact he 

had on that sport, but I believe all of it 

will pale in comparison to the impact 


that his generosity has made on the 

lives and well-being of children and 

families throughout Central Florida 

— and even the world. His commitment 

to help us make his hospital 

the best it could be never wavered. 

Through the years, I asked him for his 

help in so many different ways, and 

never did he turn down any request 

ever made of him. He always gave

An army of volunteers joined Windermere Mayor 

Gary Bruhn and Orange County Environmental 

Protection Division employees for the recent 

Mayor’s Earth Day Cleanup Event. Three 

different groups spent their morning discarding 

invasive plants and trash at Fernwood Park, 

Maguire Road and Bird (Egret) Island. Bird 

Island is a designated bird sanctuary owned 

mostly by the Florida Audubon Society, and 

despite signs stating it is illegal to land a boat or 

walk on the island, it is continually compromised 

by weekend partiers. Volunteers kayaked and 

canoed along the shoreline, picking up bottles, 

cans and trash, while another small group went 

onto the island with permission to do the same. 

Twenty-five large bags of trash were taken from 

the island. Meanwhile, at Fernwood Park, 

volunteers were given a crash course by Orange 

County EPD employees about how to identify 

invasive species of plants and the safest way to 

remove them. At the end of the half-day cleanup, 

two dumpsters were filled with trash and debris 

from the three sites.

Cancer Patients & Survivors 

Breast cancer patients will receive 

free, organic vegetables grown by 

breast cancer survivors at Orlando’s 

Pink Ribbon Garden. 

“For every bag harvested, we 

give one to someone in treatment,” 

said Robin Maynard, founder of 

Libby’s Legacy Breast Cancer 

Foundation of Orlando. “Eating 

organically can decrease the risk of 

recurrence.” 

Libby’s Legacy, which provides 

comprehensive breast health care 

to underserved patients in Central 

Florida, created the Pink Ribbon 

Garden, the first-of-its-kind organic, 

shared garden, in Lake Druid Park. 

The garden is a 29-foot-by-17-foot 

raised vegetable bed in the shape 

of a breast cancer awareness ribbon. 

The wood is painted pink. The 

bed is in the center of the Lake Druid 

community garden, one of 17 in the 

city. 

Orlando Commissioner Patty 

Sheehan said that many people 

made the garden a reality and encouraged 

people to “grow some 

vegetables.” 

Orlando Health is the presenting 

sponsor, with Vitas Healthcare, 

Orlando City Foundation and 

Lowe’s as active co-sponsors. The 

city provided space for the garden. 

“The Pink Ribbon Garden matches 

up with our team’s focus on treating 

the entire person, not just the cancer,” 

said Brian Wetzel, chief operating 

officer at UF Health Cancer 

Center Orlando Health. “We 

wanted to be involved with Libby’s 

Legacy on this project, because its 

mission to educate breast cancer 

survivors on the value of a healthy 

lifestyle aligns with what we do at 

the cancer center to provide the best 

care possible.” 

Maynard called the University of 

Florida Health Cancer Center “the 

best” while praising its holistic approach 

to cancer treatment. 

Maynard and singer Melissa 

Etheridge, cofounder of the garden, 

believe food injustices occur 

in the United States. Many women 

cannot afford organic vegetables, so 

Maynard and Etheridge plan to take 

the Pink Ribbon Garden concept 

nationwide. 

The garden will help breast cancer 

patients and survivors eat healthier 

foods. No matter a survivor’s economic 

status, she can give back 

through the garden. 

“I love survivors, because they keep 

going and growing,” Etheridge said. 

“It’s sisters helping each other.” ª

Soaring to New Heights With Napa Nights 

Slate’s Three-Course Menu Pairs Creative Cuisine With Wines 

Since opening two years ago, 

Slate restaurant in the heart of Dr. 

Phillips has become a neighborhood 

favorite and gained the attention 

of national media. In a recent 

article, the Boston Globe described 

the restaurant’s brunch as “phenomenal” 

and highlighted Slate’s brilliantpink 

deviled eggs as one of the top 

things to eat in Orlando. 

It’s no surprise then that this casually 

elegant restaurant with a hint of 

Southern style will be soaring to new 

heights this summer with the introduction 

of Napa Nights, a prix fixe 

menu paired with award-winning 

Napa Valley wines. 

In order to highlight some of the 

most iconic wine producers of the region, 

paired with creative, fresh cuisine, 

Slate’s executive chef, Jacob 

Woolf, has put together a threecourse 

menu to take guests on a culinary 

journey of the Napa Valley. 

“I have always admired the chefs 

of the Napa region and how they 

utilize the best products and flavors 

around them,” said Woolf, 

who draws on the incredible local 


harvest available from area farmers 

and fishermen to create an exquisitely 

prepared menu that showcases 

peak-of-the-season ingredients. 

“I wanted to do the same here in 

Florida.” 

Debuting June 19 and taking 

place Sundays through Thursdays, 

the Napa Nights dinner menu offers 

guests a choice of starter, main 

course and dessert — an outstanding 

value for $34 per person or $50 

with wine pairings (tax and gratuity 

not included). For the first course, 

diners have the difficult, yet delicious, 

task of choosing between a 

Florida peach salad prepared with 

herbed goat cheese, arugula, fennel 

and toasted almonds, or Cape 

Canaveral shrimp with a tostone, 

avocado mousse and serrano mojo. 

Selecting a main course doesn’t 

get any easier, with a choice between 

a flat iron steak with grilled 

sweet potatoes, asparagus and a 

jalapeño pimentón hollandaise or 

the seasonal fish with smoked field 

pea succotash, beech mushroom 

confit and roasted lemon vinaigrette. 

PROMOTIONAL FEATURE 

Chef Woolf’s creative flair is evident 

in the beautiful balance of seasonings, 

textures and acids that each 

dish encompasses. 

For the evening’s finale, guests can 

indulge in heavenly rum raisin bread 

pudding with pineapple compote or 

decadent dark-chocolate terrine with 

honey-roasted peanuts and raspberry 

coulis for dessert. 

From light and summery rosés to 

rich, ripe cabernets, the accompanying 

wine pairings were carefully chosen 

from prestigious award-winning 

Napa Valley wineries, including 

Silverado Vineyards and Chateau 

Montelena Winery by Slate’s sommelier 

and general manager, Leslie 

Johnson, to enhance and complement 

the menu perfectly. In addition 

to the wine pairings, cocktail-lovers 

will delight in the inventive list created 

by Rob Terfehr, bar manager. 

One of the most popular cocktails is 

the London Bell, featuring Sipsmith 

gin, red bell pepper, lemon, rosemary 

and cracked black pepper. 

“I like to think my food is approachable 

but exciting at the same 

time, giving guests a chance to try 

something bold that is also balanced 

and delicious,” Woolf said. “I am really 

excited to offer this new culinary 

adventure to our local friends and 


neighbors, as well as to out-of-town 

guests visiting our great city.”

United Way’s Day of Action is a 

communitywide volunteer event that 

aims to reduce summer reading loss, 

which is the gradual decline of reading 

proficiency while children are 

away from the classroom. By providing 

low-income students with access 

to books, the nonprofit hopes 

to encourage reading and enhance 

literacy during the summer months. 

Last year, HFUW distributed more 

than 20,000 books to 2,300 local 

children.

n Challenge is on to find 

homes for shelter animals 

For the second year in a row, animal 

shelters in Orange, Seminole 

and Osceola counties launched the 

Great Summer Challenge, a summerlong 

effort to see which shelter 

can garner the highest percentage 

of adoptions, reunifications and releases 

among the community’s three 

“open admission” shelters. Openadmission 

shelters are public animal 

shelters, which means they do not 

ever turn away a dog or cat in need. 

In 2016, the challenge helped facilitate 

more than 5,000 adoptions, 

reunifications with lost families, and 

releases to foster and rescue partners. 

Last year, Seminole County 

Animal Services took home the title 

after increasing its live-release numbers 

by 14.2 percent, helping 953 

animals. Osceola County reported 

966 animals successfully released, 

and in Orange County, 3,370 animals 

were either adopted, reunified 

or released to rescue and foster 

parents. 

To look for animals available for 

adoption, officials at the shelters encourage 

residents to visit in person 

or view their websites and Facebook 

pages.

The city of Ocoee Parks and 

Recreation Department hosted its annual 

Big Orange Games at Ocoee 

High School. The event gives 

physically challenged 

youth an opportunity to 

participate in sporting 

events, where they can 

show that “disabled” 

doesn’t mean “unable.” 

Participants showcased 

their skills in a fun environment 

with the support 

of friends, family, 

volunteers and staff. 

Ocoee is the only 

municipality in Central 

Florida that hosts an 

event like this. The city 

has sponsored the competition 

for more than 

10 years. Athletes competed 

in the following 

track and field events: 

60-, 100-, 220-, 440- 

and 880-yard dashes; 

club, discus, shot put 

and softball throws; and 

long jump. The competition 

was followed by 

an awards ceremony 

recognizing the athletes’ 

achievements.

competition and a hard-fought 

double-header against the Mighty 

Brewers to capture the Spring 2017 

Majors District Tournament. The 

boys were led by coaches David

Miller, and team mom was Erika 

Kessler. 

Orlando hosted the Flag 

Football World Championship 

Tour over Memorial weekend. 

The family-friendly event had 

brackets for adults, youth, men 

and women, all competing for a 

$30,000 purse. Partial proceeds 

were donated to Honor Courage 

Commitment Inc. and 22Kill, two 

organizations dedicated to helping 

the nation’s veterans. 

In addition to flag football, the 

event also featured Blaster Battle, 

a massive toy pistol fight that took 

place at Simmers-Young Park in 

Winter Haven. Participants fell short 

of the 2,289 needed to break the record 

for the largest toy pistol fight; 

however, children and adults had a 

great time battling each other with 

Nerf gear.

compared 293 of the largest

Orlando ranked No. 1 in NBA
