Keng Som Fish – This sweet,<br />
sour and spicy Thai-style<br />
assam fish is a Thai Grill<br />
speciality that has managed<br />
to hit all the right notes. <strong>The</strong><br />
freshly-caught tilapia fish<br />
is deep fried to a crisp and<br />
then dunked in a crimson red<br />
broth – comprised of Thai<br />
ginger, lemongrass, onions,<br />
dried chillies, tamarind juice,<br />
fish sauce, chicken stock and<br />
vegetables like long bean,<br />
cauliflower and kangkung –<br />
that is reminiscent of tom<br />
yam soup. <strong>The</strong> fiery red<br />
colour is a mere facade as it<br />
is only slightly spicy; instead,<br />
the flavour strikes an ideal<br />
balance between sweet, sour<br />
and spicy. <strong>The</strong> fish is well<br />
done – preparing it in this<br />
method clearly removes<br />
any muddy taste that we<br />
sometimes associate with<br />
river fish. Best to dig in as<br />
soon as the dish is served<br />
to enjoy the crunchiness of<br />
the fish together with the<br />
