then brought down to allow<br />

the centre to roast, resulting<br />

in a perfect caramelised crust<br />

with the middle part being<br />

tender and juicy. It is one of<br />

the most expensive cuts of<br />

lamb and should be roasted<br />

until pink, or medium at most.<br />
