Award-winning Dallington<br />
garden like a ‘restaurant’<br />

ABOUT 30 years ago, you<br />
couldn’t see Ian Foster’s<br />
Dallington home from the<br />
street because the garden was<br />
so overgrown. Then last week,<br />
it won gold in a gardening<br />
competition.<br />
Mr Foster and his wife Val<br />
bought the house three decades<br />
ago but have since landscaped,<br />
pruned, planted and cut their<br />
garden into a winner.<br />
They used to have a vegetable<br />
garden but have recently been<br />
taking it more seriously. And<br />
now they have a gold medal to<br />
show for it.<br />
In a recent Canterbury<br />
Horticulture Society<br />
competition, the Fosters won<br />
the small residential category for<br />
properties up to 500 sq m.<br />
Mr Foster said he had entered<br />
the competition in years gone<br />
by, and had won “several” prizes<br />
over that time.<br />
“(We’re) very pleased because<br />
we got a gold for the garden this<br />
time,” he said.<br />
The Fosters enjoy sharing their<br />
garden with friends and family,<br />
who have given a nickname to a<br />
particular part of the garden.<br />
“Whenever we host friends<br />
and family and are having<br />
something to eat, we take them<br />
to a part of the garden they say<br />
is like a restaurant setting. They<br />
call it Fosters on Gayhurst,” Mr<br />
Foster said.<br />
Mr Foster said his favourite<br />
part of his award-winning<br />
garden is a collection of maple<br />
trees, but he loves it on the<br />
whole.<br />
“We’ve got about 40 (maple<br />
trees) in the garden . . . I’m only<br />
in the garden about a day a<br />
week, but I’m always snipping at<br />
things.<br />
“I know I’m a skite but it’s<br />

really very different and it’s<br />
colourful. Ian Fryer is our<br />
landscaper, so he was helping to<br />
lay it all out,” he said.<br />
The garden was landscaped,<br />
pruned and planted over the<br />
course of the year and even<br />
required the removal of a<br />
swimming pool to complete the<br />
look.<br />
