A LEGO figure, a shark<br />

breaching the water, a five<br />

tier wedding cake, or even a<br />

mathematical equation: When<br />

it comes to cake orders, Penny<br />

Ritchie has to be ready for<br />

anything.<br />

But her biggest challenge this<br />

year has not been fondant or<br />

buttercream.<br />

She opened the doors of her<br />

New Regent St shop, Penelope’s<br />

Cakery Deli, last month.<br />

As well as selling food and<br />

her own custom-made cakes<br />

there, it was designed as a place<br />

where home decorators could<br />

get support, advice and supplies,<br />

which were difficult to find in<br />

Canterbury, she said.<br />

Although she had always<br />

enjoyed creating cakes for<br />

her children or friends, she<br />

only began decorating cakes<br />

commercially about four years<br />

ago.<br />

She owned a confectionery<br />

store in Rangiora, and she<br />

said it had been a challenge to<br />

attract customers there after the<br />

earthquakes.<br />

Branching into cake making<br />

was a way to turn the store into a<br />

destination, she said.<br />

But finding the supplies and<br />

tools she needed had often been<br />

challenging.<br />

“It was just through not<br />

wanting to say no to anything, I<br />

forced myself to learn,” she said.<br />

She hoped the Christchurch<br />

shop would make it easier for<br />

beginner cake decorators to give<br />

it a go.<br />

“We have moulds and cutters<br />

for most things and, with so<br />

much information and tutorials<br />

on the internet, now it is very<br />

easy for people to get into it, even<br />

if they have never done it before,”<br />

she said.<br />

Although creating some cakes<br />

could be a challenge, she said<br />

delivering them was often<br />

the most terrifying part of the<br />

job.<br />

“Some are quite elaborate<br />

wedding cakes that have to be<br />

absolutely perfect and the biggest<br />

challenge is working out how to<br />

transport them,” she said.<br />

“I always take an emergency<br />

repair kit, but I haven’t ever –<br />

touch wood – needed to use it.”<br />
