I was born in Zambia, and lived there until I was 11, but I came over in 1984, after my father passed away, because my mum couldn’t run the farm on her own. I think about it a lot, because I had a real hunting, shooting, fishing, falling out of trees childhood in a very different place from here. So you went to school in <strong>Lewes</strong>? At first in Haywards Heath, then at the Tertiary College in Mountfield Road. I just fell into bar work: I was a caretaker at the Brickmakers in Ridgwood for a bit, then I went into the Elly for a pint, in 2001, and didn’t come out again for fifteen years. What do you like about the job? It’s very social. I’ve got to know a lot of people, to say the least. I have to allow for an extra twenty minutes to half hour when I go to Tesco, to allow for all the chatting. The Black Horse, which you now manage, has a lot of different teams… I love playing games. I was captain of <strong>Lewes</strong> Hockey 4ths and 5ths for 20 years, and we have cricket and fishing teams – the latter called the Beer Monsters – as well as participating in the local stoolball, darts and toads. The Black Horse are current toads World Champions. But toads is just <strong>Lewes</strong> teams, isn’t it? Not at all. There are teams from all over: Hailsham, Eastbourne, Horsham… It’s a Sussex game, really, but we know there’s a guy who has got a table in Australia. You’re the Black Horse chef at the moment. What do you recommend? The pork belly roast on a Sunday. It goes into the oven at 110° at 10pm the night before, in a bed of carrots, rosemary, thyme, garlic and two pints of cider. Which pubs do you go to other than your own? I love going to other pubs, because I can sit down. I like to go to the Rights of Man, and I pop into the Brewers. I live behind the Lansdown, so I have been known to go in there. My favourite beers? Burning Sky’s Plateau, Harvey’s Wharf IPA, Thorbridge’s Jalpur, or anything I see made by Holler, Gunn, and Dark Star, though they’ve just been taken over by Fullers. I’m also a G&T man. There’s a distillers called Harley House in Seaford and they distill the whole product on site, instead of getting in ready-made base liquor, which a lot of others do. The tonic world has really upped its game recently, too. What do you do for exercise? Apart from the cricket and stoolball? I like to go for a walk. There’s a nice short one over Juggs Way to the Juggs… Where would you live if not in <strong>Lewes</strong>? I’ve got brothers in Australia and Canada, so I’d have to consider those countries. But if I had to live anywhere else, I’d choose a village outside <strong>Lewes</strong>. One with a nice country pub. Interview by Alex Leith 13
