RUMP STEAK WITH<br />

KUMARA AND TOMATOES<br />

Ingredients<br />

400g kumara<br />

½ red onion<br />

1 courgette<br />

½ bag baby spinach<br />

1 Tbsp mayonnaise<br />

1 tsp mustard<br />

30g feta cheese<br />

300g beef rump steak<br />

1 pack beef spice mix<br />

4 tomatoes<br />

2 tsp balsamic vinegar<br />

2 tsp brown sugar<br />

Directions<br />

Preheat oven to 220 deg C.<br />

Dice kumara 2cm; cut onion into<br />

1cm wedges; cut courgette into<br />

1cm rounds. Toss kumara and<br />

onion with a drizzle of oil on a<br />

lined oven tray.<br />

Season and roast for 25min,<br />

until golden and tender. Add<br />

courgette to tray and roast for a<br />

further 10min.<br />

Heat a drizzle of oil in a large<br />

fry-pan on medium-high heat.<br />

Pat steak dry and toss with<br />

beef spice mix and a drizzle of<br />

oil. Season and cook for about<br />

3-4min each side (depending on<br />

thickness), or until cooked to<br />

your liking. Reserve pan and set<br />

beef aside to rest before slicing<br />

thinly.<br />

Cut tomatoes into quarters.<br />

Heat a drizzle of oil in reserved<br />

pan.<br />

Add tomatoes, vinegar and<br />

sugar to pan and cook for about<br />

2min, until starting to soften.<br />

Fold spinach, mayonnaise and<br />

mustard through kumara and<br />

season. Crumble feta on top.<br />

Serve kumara topped with<br />

beef and a spoonful of balsamic<br />

tomatoes.<br />

BLACKBERRY, RASPBERRY AND BLUEBERRY CRUMBLE<br />

Ingredients<br />

1/2 cup fresh blackberries<br />

1/2 cup fresh raspberries<br />

1/2 cup fresh blueberries<br />

1 tablespoon white sugar<br />

80g plain flour<br />

60g rolled oats<br />

90g packed brown sugar<br />

Good pinch of both ground<br />

cinnamon and ground nutmeg<br />

125g butter<br />

Directions<br />

Preheat oven to 180 deg C.<br />

Gently toss together<br />

blackberries, raspberries,<br />

blueberries and white sugar in a<br />

bowl then set aside.<br />

In a separate bowl, combine<br />

flour, oats, brown sugar,<br />

cinnamon and nutmeg. Rub in<br />

the butter until crumbly. Press<br />

half of mixture in the bottom of a<br />

baking dish.<br />

Cover with berries. Sprinkle<br />

the remaining crumble mixture<br />

over the berries.<br />

Bake in the pre-heated oven for<br />

30-40min, or until fruit is bubbly<br />

and topping is golden brown.<br />
