Adjustoven racks to upper-middle and lower-middlepositions. Line two bakingsheets with parchment paper or siliconemats. In food processor, finelygrind 1 cup of walnuts for about 10-15seconds. Transfer to medium bowl. Infood processor, pulse remaining walnutsabout 5 seconds. Add to mediumbowl with finely ground walnuts. Stirin flour and salt; set aside. In electricmixer bowl, combine butter andgranulated sugar. Beat 2 minutes oruntil fluffy. Scrape sides of bowl. Addvanilla; beat 1 minute. Add flour andwalnut mixture; beat 30 seconds oruntil combined. Scrape down sidesof bowl and beaters; continue handmixingdough until well-combined.Working with 1 tablespoon of doughat a time, roll into 1 1/4-inch ballsand arrange 1 inch apart on preparedbaking sheets. Scrape sides ofbowl and beaters as necessary.Reduce speed and slowly mix inflour, about 30 seconds. On flouredwork surface, form dough into ball.Divide into two equal pieces. Wraptightly in plastic wrap and press intotwo disks. Refrigerate 30 minutes oruntil firm.To make filling: Heat oven to 375degrees and place racks at uppermiddleand lower-middle positions.Line two baking sheets with parchmentpaper. In a small bowl, combinesugar and cinnamon; mix well andset aside. On lightly floured surface,roll out each piece of dough into 11-inch circles, about 1/4-inch thick. Oneach round, spread 1/4 cup jam andsprinkle 1/2 cup walnuts and 1/4 cupraisins. Evenly sprinkle 1 tablespooncinnamon-sugar mixture on each disk.Using a knife, cut each round into 16even wedges. Beginning at wide ends,roll each wedge up into cookie. Placecookies on prepared baking sheet withpointed end underneath each cookie.Space cookies about 2 inches apart.Using pastry brush, brush melted butterover cookies. Sprinkle remainingcinnamon-sugar over top.Bake cookies about 20 minutes untilslightly puffed and pale gold, rotatingbaking sheets halfway through.
