INGREDIENTS<br />

1 pound butter<br />

5 pounds mushrooms<br />

1 pound spinach, roughly chopped<br />

1 ½ cups flour<br />

10 cups chicken broth<br />

4 cups heavy cream<br />

1 tablespoon salt<br />

1 teaspoon pepper<br />

¼ teaspoon nutmeg<br />

½ teaspoon cayenne pepper<br />

INSTRUCTIONS<br />

Saute mushrooms with melted butter.<br />

Add chopped spinach. Stir until<br />

wilted.<br />

Mix flour in 2 cups of warmed<br />

chicken broth.<br />

Add flour mixture and remaining<br />

chicken broth to pot. Add remaining<br />

ingredients.<br />

Stir until temperature of 165F reached<br />

for five minutes. Yields 23 cups.<br />
