Spicy buns prevail<br />

What makes the best hot cross bun in the<br />
country?<br />

Ron van Til says it is all about the<br />
combination of spices, the quality of<br />
fruit, and the sheer creativity of the<br />
people getting imaginative with the<br />
recipe and governing the ovens.<br />
Describing how the bakery snaffled<br />
the country's top award for <strong>2020</strong> for its<br />
celebrated seasonal festive pastry, Ron<br />
says it is all about evolving what the<br />
bakery has always done.<br />
‘‘We will never stop making the<br />
traditional hot cross buns our customers<br />
have enjoyed for decades,’’ he says.<br />
‘‘That said, every year, my production<br />
manager and his team get abit inventive<br />
with anew take on that bun, just for the<br />
competitions.<br />
‘‘This year, it involved adding<br />
cranberries to the mix and tweaking the<br />
glaze.’’<br />
The result so impressed the judges of<br />
the Baking Industry Association of New<br />
Zealand's Hot Cross Bun <strong>2020</strong> contest<br />
that they awarded the bakery first place<br />
nationwide.<br />
The results were announced in<br />
Wellington last week.<br />
