THE COOKBOOK Do they ever argue? “ Yes, like in a movie,” he says with a laugh, pointing finger-guns at me. “ Sometimes arguments are good for the future. People have stress, they argue, and after, they understand each other more. Like a marriage.” I would not bet on De Niro winning: When Nobu Milan opened in partnership with Giorgio Armani, the chef persuaded the designer to accept his no-smoking policy in the dining room, and to make him a set of chef’s whites. The De Niro connection and the wider endorsement of the great and the good — none better than Kate Winslet’s assessment: “ Heaven on Earth, sex on a plate” — have led to some surprising turns in his life. He acted in Casino and Austin Powers in Goldmember, and “ when Donald Trump owned Miss Universe, I was a judge several years ago in Moscow, with [Aerosmith’s] Steven Tyler”. (The Trump daughters frequent his restaurants in New York and Aspen, but he has yet to create a dish for them: There’s no Ivanka Rice.) The English-language version of Matsuhisa’s autobiography is published today (it is, of course, titled Nobu). In spare style, he discusses his life, business and famous friends, but also what it is like to be a grandfather in the ‘fourth corner’ of life. He was hit hard by the recent suicide of his childhood friend Sakai, who supported him through his early travails and designed the family’s Japanese holiday home in Hakone: He becomes speechless with tears when we discuss it. Unbeknown to him, Sakai’s construction business had suffered financial problems. Matsuhisa, calling from LA, noticed his friend sounded offhand. Irritated, he didn’t probe. “That is why I feel so guilty,” he says. “ If I had asked him and he talked to me about more money or what is going on, maybe I could have saved his life. But he died, so . . .” The loss has left him with a terrible sadness, but also a desire to embrace every opportunity that comes his way. “ I never think about retiring because I appreciate my life,” he says. “And I like to pass [my ideas] on to the next generation of people. Retirement means nothing to do for me. I like as much as possible to work, to see people, stay in the kitchens. This is my tomorrow. 95 january/february 2018 | TM
