SAUSAGE, TOMATO AND MIXED PEPPER SOUP<br />

This recipe helped me chew larger<br />

chunks of food and it also made me<br />

realise that I could eat tomatoes after<br />

radiotherapy. It’s a lovely hearty soup<br />

that I enjoyed hot and cold.<br />

INGREDIENTS<br />

METHOD<br />

• 2 tbsp butter or oil<br />

• 6 Heck! pork sausages, each cut on<br />

the diagonal into 3 pieces<br />

• 4 mixed peppers, de-seeded and cut<br />

into chunks<br />

• 2 white onions, cut into chunks<br />

• 6 fresh tomatoes, roughly chopped<br />

• 4 cloves garlic, minced<br />

• 2 400g tins chopped tomatoes<br />

• 1 tbsp tomato ketchup<br />

• 1 tsp Marmite, heaped<br />

• 600ml chicken stock<br />

• Salt and pepper<br />

Melt the butter in a large pan. When it starts to sizzle, reduce the heat and add in the<br />

sausages. Cook until browned all over. Remove with a slotted spoon and fry the onions<br />

for a couple of minutes until they start to soften. Tip in the garlic and peppers. Keep<br />

frying until they are starting to colour and become fragrant.<br />

Add the chopped tomatoes and browned sausage chunks (including any juices), then<br />

increase the heat a bit more. You want the tomatoes to fall apart.<br />

Then add the tinned tomatoes, Marmite and tomato ketchup. Combine everything<br />

together and pour in the stock. Bring to the boil and then reduce to a gentle simmer.<br />

Simmer for 15 minutes until the sausages are cooked through.<br />

Taste and season accordingly.<br />

Everything should be nice and soft to bite. If you are unable to bite and chew, blend until<br />

it’s the desired consistency. You can add water to thin it down, or milk/cream to enrich.<br />

Make it veggie by replacing the<br />

sausages with Heck! Meat-Free Magic<br />

Chipolatas or Veg With Edge Vegan<br />

Frankfurter, and use vegetable stock<br />

to replace the chicken stock.<br />

It’s also great to add a little bit of smoked paprika for a lovely smoky taste. You can<br />

replace the ketchup for some BBQ sauce. Add in some kidney beans and chickpeas for<br />

extra texture.<br />

Make it veggie by replacing the sausages with Heck! Meat-Free Magic Chipolatas or Veg<br />

With Edge Vegan Frankfurter, and use vegetable stock to replace the chicken stock.<br />

In the picture I’ve shown the soup after I had blended it and then added a chopped<br />

cheese slice for extra flavour. I am now able to eat bread but when I was in recovery I<br />

would allow the bread to soak in the soup until it nearly dissolved.<br />
