As much as we love exotic drinks, we

have to admit they’re high-maintenance.

Exotics ask much more of you

than standard cocktails, which are a

comparatively cheap date. The thing

is, who would you rather spend happy

hour with: Miss Havisham, or Tempest

Storm?

Here’s the lowdown on equipment

and inventory for budding Tiki bartenders.

Don’t panic; the results will be

worth it.

GEARING UP

You’ll need a cocktail shaker with a

strainer top, a heavy duty electric blender,

and an electric ice-crusher. You can

go green and opt for a hand-cranked

crusher, but you’ll regret it the first time

you have to make tropical drinks for

more than two people. (And don’t even

think about the old hammer-and-canvasbag

julep gaff.)

Also essential: a juice reamer. Not

those scissored hand-held squeezers,

which are practically useless in a Tiki

bar, but a solid free-standing number

with a ribbed dome and a seed trap. If

you throw a lot of parties, you might

want to consider an electric reamer or

a lever-operated upright metal citrus

press, but don’t pay over fifty bucks for

either option (those $200-and-up juicers

are pure overkill).

The Muddler is not the name of a

Batman villain, but a very helpful piece

of bar equipment. Shaped like a miniature

baseball bat, you use it to mash, or
