1 ½ ounces Lemon Hart 151-proof

Demerara rum

Shake with ice cubes. Strain into a

chilled cocktail glass.

1 ounce fresh lime juice

1 ounce lychee nut puree (see page 227)

½ ounce Maraschino liqueur

2 ounces light Virgin Islands rum

Shake well with plenty of ice cubes.

Strain into a chilled cocktail glass.

½ ounce fresh lime juice

½ ounce pimento liqueur (see page 230)

1 ¼ ounces gold Jamaican rum

½ teaspoon simple syrup

Shake well with ice cubes. Strain into

a chilled cocktail glass. Dust with

freshly ground nutmeg.
