In this exclusive <strong>in</strong>terview, we explore <strong>the</strong> remarkable journey of<br />

Chef Aisha. Her story is a testament to determ<strong>in</strong>ation and seiz<strong>in</strong>g<br />

opportunities. Tra<strong>in</strong>ed <strong>in</strong> <strong>the</strong> cul<strong>in</strong>ary arts, Chef Aisha transitioned<br />

from her background <strong>in</strong> education to embrace Middle Eastern culture<br />

and eventually become an artful chocolatier. Dur<strong>in</strong>g <strong>the</strong> COVID-19<br />

pandemic, she realized her dream with Golden Ribbon Chocolates,<br />

offer<strong>in</strong>g Belgian chocolates with homemade fill<strong>in</strong>gs and a fusion of<br />

French-Arabic flavors. Chef Aisha’s commitment to quality and susta<strong>in</strong>ability<br />

Q & A<br />

Can you share your personal journey of becom<strong>in</strong>g a chef, especially<br />

<strong>in</strong> light of your experience as a breast cancer survivor and<br />

a celiac? How did <strong>the</strong>se challenges shape your cul<strong>in</strong>ary career?<br />

I aspired to be a chef from <strong>the</strong> age of 14. Despite <strong>in</strong>itial plans to<br />

pursue cul<strong>in</strong>ary arts, I ended up becom<strong>in</strong>g a teacher due to family<br />

expectations and life events. However, at 34, a breast cancer<br />

diagnosis reshaped my perspective. It wasn’t until COVID-19 hit<br />

that I f<strong>in</strong>ally decided to chase my cul<strong>in</strong>ary dreams. I started with a<br />

chocolate-mak<strong>in</strong>g course, and chefs at <strong>the</strong> school encouraged me<br />

to undertake a full pastry chef diploma. I completed <strong>the</strong> diploma<br />

<strong>in</strong> six months, despite be<strong>in</strong>g over 50. My dream of runn<strong>in</strong>g a small<br />

cul<strong>in</strong>ary bus<strong>in</strong>ess has far exceeded my expectations. This journey<br />

has taught me <strong>the</strong> importance of pursu<strong>in</strong>g your passion, regardless<br />

of your age or life circumstances.<br />

So liv<strong>in</strong>g with celiac disease can be quite demand<strong>in</strong>g. How did<br />

you adapt to your dietary restrictions and managed to create a<br />

delectable array of dishes while ensur<strong>in</strong>g <strong>the</strong>y are gluten free?<br />

Over two decades ago, I developed celiac disease due to <strong>the</strong><br />

impact of chemo<strong>the</strong>rapy dur<strong>in</strong>g my breast cancer treatment. This<br />

life-alter<strong>in</strong>g condition forced me to reevaluate my diet and learn<br />

gluten-free bak<strong>in</strong>g from scratch. The resources and <strong>in</strong>formation for<br />

gluten-free liv<strong>in</strong>g were limited at <strong>the</strong> time.<br />

Celiac disease required me to absta<strong>in</strong> from gluten for about a<br />

year to allow my body to recover. This journey was isolat<strong>in</strong>g and<br />

challeng<strong>in</strong>g, as I had to watch my food closely. However, my love for<br />

cook<strong>in</strong>g and my engagement with onl<strong>in</strong>e support groups helped me<br />

adapt and develop my gluten-free recipes.<br />

Today, <strong>the</strong> landscape for gluten-free liv<strong>in</strong>g has improved significantly,<br />

with more available resources and <strong>in</strong>formation. My experiences<br />

have <strong>in</strong>spired me to share my knowledge and recipes to<br />

help o<strong>the</strong>rs liv<strong>in</strong>g with celiac disease or gluten <strong>in</strong>tolerance. Rais<strong>in</strong>g<br />

awareness about allergies and <strong>in</strong>tolerances, particularly <strong>in</strong> children,<br />

is essential to improv<strong>in</strong>g <strong>the</strong>ir quality of life.<br />

Proper nutrition is crucial, both dur<strong>in</strong>g and after breast cancer<br />

treatment. While undergo<strong>in</strong>g treatment, your diet is limited, and after<br />

treatment, it’s essential to focus on nutrition, diet, and exercise to<br />

support your overall well-be<strong>in</strong>g.<br />
