What <strong>in</strong>spired you to start Golden Ribbons chocolate, and<br />

how do your personal experiences <strong>in</strong>fluence <strong>the</strong> chocolate mak<strong>in</strong>g<br />

process and product offer<strong>in</strong>gs <strong>in</strong> your company?<br />

I was brought <strong>in</strong>to this project by my husband, who had always<br />

dreamt of open<strong>in</strong>g a boutique sell<strong>in</strong>g high-quality products. He<br />

was particularly <strong>in</strong>spired by <strong>the</strong> chocolate I made dur<strong>in</strong>g my time<br />

at cul<strong>in</strong>ary school <strong>in</strong> Dubai, and he wanted to feature it <strong>in</strong> our shop.<br />

This project allowed me to br<strong>in</strong>g elements of my rural upbr<strong>in</strong>g<strong>in</strong>g <strong>in</strong><br />

nor<strong>the</strong>rn Ohio <strong>in</strong>to our venture. I grew up on an island surrounded<br />

by v<strong>in</strong>eyards and fruit trees, where fresh, homemade food was <strong>the</strong><br />

norm. We rarely relied on supermarkets, as we sourced much of<br />

our food locally through garden<strong>in</strong>g, fish<strong>in</strong>g, and relationships with<br />

nearby farmers. This upbr<strong>in</strong>g<strong>in</strong>g greatly <strong>in</strong>fluenced my approach<br />

to cook<strong>in</strong>g and nutrition. I prioritize fresh, unprocessed <strong>in</strong>gredients<br />

and aim to keep sugar levels low <strong>in</strong> my recipes. I believe <strong>in</strong> <strong>the</strong><br />

importance of nurtur<strong>in</strong>g your body with nutritious foods, and this<br />

philosophy extends to my cook<strong>in</strong>g and bak<strong>in</strong>g. Some may argue<br />

that fresh cook<strong>in</strong>g is time-consum<strong>in</strong>g and impractical, but I’ve found<br />

that once you start provid<strong>in</strong>g your body with wholesome, delicious<br />

foods, it craves <strong>the</strong>m. Just a few m<strong>in</strong>utes of chopp<strong>in</strong>g and sauté<strong>in</strong>g<br />

fresh vegetables can result <strong>in</strong> a far healthier and more satisfy<strong>in</strong>g<br />

meal than order<strong>in</strong>g fried or processed foods from outside. I’m passionate<br />

about encourag<strong>in</strong>g people to embrace fresh, homemade<br />

food for its numerous health and taste benefits.<br />

What advice would you give to <strong>in</strong>dividuals who face dietary<br />

restrictions and aspire to pursue a career <strong>in</strong> <strong>the</strong> cul<strong>in</strong>ary <strong>in</strong>dustry?<br />

Celiac disease is not someth<strong>in</strong>g to be taken lightly. People often<br />

misunderstand it, th<strong>in</strong>k<strong>in</strong>g it’s a dietary trend. But for those like me<br />

with severe allergies, even a small amount of gluten can send us to<br />

<strong>the</strong> hospital. It’s similar to a nut allergy <strong>in</strong> seriousness. However, dietary<br />

restrictions shouldn’t discourage you from pursu<strong>in</strong>g a cul<strong>in</strong>ary<br />

career. I, for <strong>in</strong>stance, focus on gluten-free recipes for safety and<br />

enjoy <strong>the</strong> process.<br />

For aspir<strong>in</strong>g chefs, start by collect<strong>in</strong>g recipes and network<strong>in</strong>g<br />

with peers <strong>in</strong> <strong>the</strong> <strong>in</strong>dustry. Extensive research is key, understand<strong>in</strong>g<br />

<strong>in</strong>gredient <strong>in</strong>teractions and cook<strong>in</strong>g science. Know<strong>in</strong>g <strong>the</strong>se fundamentals,<br />

like <strong>the</strong> reaction between bak<strong>in</strong>g soda and v<strong>in</strong>egar, is<br />

crucial, especially <strong>in</strong> gluten-free cook<strong>in</strong>g, where leaven<strong>in</strong>g agents<br />

might need creative substitutes.<br />

Cul<strong>in</strong>ary careers require dedication and passion. It’s my hobby; I<br />

explore recipes and <strong>in</strong>gredients, constantly learn<strong>in</strong>g. If you’re genu<strong>in</strong>ely<br />

<strong>in</strong>terested <strong>in</strong> <strong>the</strong> cul<strong>in</strong>ary world, it becomes a way of life. Most<br />

chefs share this enthusiasm, allow<strong>in</strong>g us to persevere despite life’s<br />

challenges.<br />

Could you share some of your favorite gluten free <strong>in</strong>gredients<br />

or subsidies that you frequently use <strong>in</strong> your creations and<br />

do <strong>the</strong>se substitutes necessarily impact <strong>the</strong> taste and texture of<br />

your product?<br />

Be<strong>in</strong>g <strong>in</strong> a kitchen, especially as aspir<strong>in</strong>g chefs, comes with significant<br />

pressure. You’re constantly under pressure to deliver dishes<br />

<strong>in</strong> a small space, work<strong>in</strong>g with o<strong>the</strong>r chefs who have <strong>the</strong>ir own personalities<br />

and egos. This can be even more challeng<strong>in</strong>g for women<br />

<strong>in</strong> <strong>the</strong> <strong>in</strong>dustry. However, <strong>the</strong>se challenges should not deter you. It’s<br />

essential to ma<strong>in</strong>ta<strong>in</strong> professionalism, keep your workspace clean,<br />

and expect <strong>the</strong> same from your colleagues.<br />

When it comes to gluten-free cook<strong>in</strong>g, <strong>the</strong>re are various <strong>in</strong>gredients<br />

at play. Rice flour, particularly white rice flour, serves as <strong>the</strong><br />

foundation for many gluten-free recipes. Brown rice flour can provide<br />

additional b<strong>in</strong>d<strong>in</strong>g and structure to your dishes. Potato starch<br />

aids <strong>in</strong> leaven<strong>in</strong>g and lighten<strong>in</strong>g <strong>the</strong> texture of your creations. Each<br />

gluten-free flour serves a specific purpose <strong>in</strong> different recipes.<br />

For gluten-free bread, golden loaf is a preferred choice, and <strong>the</strong>ir<br />

pizza rounds have received acclaim from gluten-free and non-gluten-free<br />

<strong>in</strong>dividuals alike. Various stores <strong>in</strong> <strong>the</strong> UAE, such as Sp<strong>in</strong>neys,<br />

Marks and Spencer, and Gibsons, offer an array of gluten-free<br />

products and flours, mak<strong>in</strong>g it easier for those with gluten sensitivities<br />

to enjoy diverse and delicious foods. Dubai and <strong>the</strong> UAE are fortunate<br />

<strong>in</strong> this regard, with a wealth of options for gluten-free d<strong>in</strong><strong>in</strong>g<br />

and cook<strong>in</strong>g compared to some o<strong>the</strong>r regions like <strong>the</strong> United States.<br />

As someone who has triumphed over personal health challenges,<br />

what message and advice would you like to share with<br />

that audience?<br />

It’s crucial, especially for women deal<strong>in</strong>g with breast cancer, to<br />

prioritize self-care. If you’re not feel<strong>in</strong>g well or have suspicions about<br />

your health, don’t delay – consult a doctor and get regular checkups.<br />

Your well-be<strong>in</strong>g is not only important to you but also to your<br />

family, children, spouse, parents, and everyone who relies on you.<br />

Sometimes, we treat our cars better than our health. If your car<br />

breaks down on <strong>the</strong> highway, you immediately get it fixed. But when<br />

it comes to health issues, people often ignore or hope <strong>the</strong>y’ll disappear.<br />

With breast cancer, early detection is everyth<strong>in</strong>g for survival<br />

rates. Take it seriously; it can be <strong>the</strong> difference between m<strong>in</strong>imal,<br />

manageable treatment and a term<strong>in</strong>al diagnosis where <strong>the</strong>re’s little<br />

that can be done.<br />

I encourage all women to <strong>in</strong>vest some time <strong>in</strong> self-care. Whe<strong>the</strong>r<br />

it’s watch<strong>in</strong>g a sunset, pursu<strong>in</strong>g your passions, or simply tak<strong>in</strong>g a<br />

moment for yourself, <strong>the</strong>se small acts of self-care can make a significant<br />

difference.<br />
