Shangri-la Dubai has made a priority. As <strong>the</strong> Resident Manager for <strong>the</strong><br />

Shangri-La Dubai, he shares <strong>the</strong> <strong>in</strong>itiatives that he is tak<strong>in</strong>g under his<br />

supervision.<br />

Can you tell us about Shangri-La Dubai’s approach to susta<strong>in</strong>able<br />

d<strong>in</strong><strong>in</strong>g and how it aligns with <strong>the</strong> hotel’s overall susta<strong>in</strong>ability<br />

<strong>in</strong>itiatives?<br />

At Shangri-La Dubai, we take a comprehensive approach to susta<strong>in</strong>able<br />

d<strong>in</strong><strong>in</strong>g, align<strong>in</strong>g with our overarch<strong>in</strong>g susta<strong>in</strong>ability <strong>in</strong>itiatives.<br />

Our goal is to provide a memorable d<strong>in</strong><strong>in</strong>g experience while<br />

m<strong>in</strong>imiz<strong>in</strong>g our environmental impact. We source locally and ethically,<br />

reduce food waste, and raise awareness among our guests.<br />

What steps has <strong>the</strong> hotel taken to ensure that its d<strong>in</strong><strong>in</strong>g outlets<br />

prioritize susta<strong>in</strong>ability, from sourc<strong>in</strong>g <strong>in</strong>gredients to food waste<br />

reduction?<br />

In 2014, <strong>the</strong> Shangri-La Group launched a cul<strong>in</strong>ary <strong>in</strong>itiative,<br />

“Rooted <strong>in</strong> Nature” to empower our hotels to choose locally and<br />

ethically sourced <strong>in</strong>gredients and provide environmentally friendly<br />

menu choices for our guests, while support<strong>in</strong>g local producers <strong>in</strong> atta<strong>in</strong><strong>in</strong>g<br />

susta<strong>in</strong>able bus<strong>in</strong>ess growth by choos<strong>in</strong>g <strong>the</strong>m as our bus<strong>in</strong>ess<br />

partners and enhanc<strong>in</strong>g <strong>the</strong>ir market exposure. S<strong>in</strong>ce <strong>the</strong>n,<br />

Shangri-La Dubai has diligently worked towards curat<strong>in</strong>g “Rooted <strong>in</strong><br />

Nature” menus across all our F&B outlets, proactively encourag<strong>in</strong>g<br />

our guests to select this menu as <strong>the</strong> susta<strong>in</strong>able choice.<br />

Could you share examples of susta<strong>in</strong>able food sourc<strong>in</strong>g practices<br />

or partnerships that Shangri-La Dubai has established with<br />

local suppliers or farmers?<br />

We have established partnerships with local suppliers and farmers<br />

to source fresh, seasonal <strong>in</strong>gredients. This not only supports local<br />

bus<strong>in</strong>esses but also reduces transportation emissions. We also<br />

work closely with <strong>the</strong>se partners to ensure susta<strong>in</strong>able agricultural<br />

practices.<br />

How does <strong>the</strong> hotel promote awareness among guests about<br />

<strong>the</strong> importance of susta<strong>in</strong>able d<strong>in</strong><strong>in</strong>g and <strong>the</strong> impact of <strong>the</strong>ir<br />

food choices?<br />

To raise awareness among our guests, we provide <strong>in</strong>formation<br />

about <strong>the</strong> susta<strong>in</strong>ability efforts <strong>in</strong> our d<strong>in</strong><strong>in</strong>g outlets through menu<br />

descriptions and <strong>in</strong>-room materials.<br />
