Apiarist gin - husband and wife Alex and Natalie 

Conti - about the launch of their new distillery in 

Lichfield’s historic city centre. Born from a passion 

for beekeeping and inspired by their Lichfield 

surroundings, Alex and Natalie’s award-winning 

spirits are making waves in the drinks world - and 

finding fans around the globe!

Let the fun bee-gin 

HUSBAND AND WIFE TEAM ALEX AND NATALIE CONTI, THE BRAINS BEHIND

TO THEIR LATEST OFFERING - AS WELL AS LAUNCHING THEIR OWN DISTILLERY IN 

THE HEART OF THE HISTORIC CITY CENTRE. AMY NORBURY DISCOVERS MORE 

THE NEW DISTILLERY IN 

THE HEART OF LICHFIELD 

What started off as a lockdown project to keep Alex 

and Natalie Conti occupied when their day-to-day 

business of running a travel and events company had 

been thrown into Covid chaos, has turned into an 

award-winning brand which has made waves in the 

spirits world. 

The Apiarist Gin is a Great Taste Award winner 

as well as a Craft Gin Club pick, and has found 

followers on the other side of the globe where it is 

popular with Japanese gin fans. It’s an impressive 

feat for a brand which came about simply as a way 

to use the excess honey produced by the family’s 12 

beehives. 

“We came at this as beekeeping people rather 

than gin people,” explains Alex. “Natalie and I 

had bought each other a bee-keeping course as an 

anniversary present one year and really enjoyed it, 

but it wasn’t until years later when we’d had kids and 

got a house with a garden that we decided to get a 

hive.” 

One hive soon grew into more, and with 12 hives 

producing ample honey, Alex and Natalie needed a 

new outlet. 

“You can’t consume that much honey as a family 

of four, so we had to think of something to do with 

the surplus,” says Alex. “So I connected with Rory 

McKerrell, of Lichfield’s Fifth Spire gin, and we 

thought it would be fun to create a gin with our 

honey in it. We tinkered with the recipe, and came 

up with The Apiarist.” 

When their original gin proved to be a hit, the Contis 

decided to add to the range. The Apiarist’s four core 

products all showcase the family’s own honey. 

“The idea behind our original gin was to make 

something that was really balanced and had honey in 

it but wasn’t sweet,” says Alex. “So we made a really 

lemony gin, blended it with our own honey and 

then finished it with tea to give it that honey colour 

because, as it turns out, honey doesn’t actually give 

any colour, it just makes the gin cloudy. 

“We then had the idea of doing a more summery 

expression, which is where our Forager gin came

from. It’s a pink version of our original gin, 

the only difference being the tea we use is a 

team made with blackberries.” 

A rum and a whisky soon followed. 

“We don’t make them in-house,” says Alex. 

“The rum comes to us from Guyana and 

the whisky is a three-year-old whisky from 

Scotland, and we then blend them both 

with our own honey before bottling.” 

When Fifth Spire decided to close their 

business, it meant Alex and Natalie needed 

to find a new place to make their gin - 

leading them to create their own distillery in 

Lichfield city centre, with former Fifth Spire 

distiller Rory on board. 

“We were making quite a lot of gin and were looking 

to find a home for it, then this building on Tamworth 

Street came up,” says Alex. “Our offices had always 

been next door, so it just made sense for us. We’d 

been in talks with Jack Dubberley, from Dubberley 

Delicious, about finding a space for him in the city 

centre, and we had an idea for the top floor of the 

building too, so it ticked all of the boxes.”

followed, with Jack moving his Dubberley Delicious 

fine dining concept into Tamworth Street last

AFFAIR FOR THE CONTIS 

summer and the distillery officially launching in 

November. And it was their largest order which 

became a key factor when developing the distillery. 

“Our largest orders actually go to Japan,” says Alex. 

“The Japanese are really big on their gin and massive 

on beekeeping, so our gin works really well in that 

market. 

“The whole distillery was built to be able to service 

the 300 bottles for our Japanese order, so that has 

dictated our entire setup. From the size of the still 

to the space to accommodate a pallet, everything is 

built to fit 300 bottles.” 

The distillery also gives Alex and Natalie the space to 

host gin-making classes, which will see gin fans create 

their own expressions using their chosen botanicals 

from an extensive selection, under the watchful eye 

of distiller Rory. 

Another major change has been with the gin’s bottle 

itself, moving from glass to a stunning ceramic 

design, which were designed by The Apiarist’s 

neighbour, potter Andrew Matheson, a longstanding 

resident of Tamworth Street, where he has his studio 

and gallery. 

“We had an idea that we wanted a ceramic bottle so 

asked Andrew if he could come up with something,” 

says Alex. “Andrew came up with this really beautiful 

design, but unfortunately he wasn’t able to produce 

the bottle on the scale we needed by himself, so 

we had to find someone who could make it more 

commercially. 

“Andrew then put us in touch with a producer who 

said they’d be able to make the quantities we need, 

so our bottles are now made in Stoke on Trent, the 

home of pottery.” 

The beautiful ceramic bottles are something you can 

imagine taking pride of place on any gin fan’s shelf, 

which has led to The Apiarist’s latest innovation - an 

environmentally friendly refill pouch, which is set to 

launch this month and means customers can top up

their existing bottles instead of 

throwing them away. 

One of the latest challenges 

for Alex and distiller Rory has 

been to create a London dry 

gin, which is a gin where all 

the flavour comes from the 

botanicals used during the 

distillation process, with nothing 

added afterwards - unlike The 

Apiarist’s core products which 

are all flavoured with honey postdistillation. 

“We wanted to use something 

from our bees, so originally we 

made it with propolis, which is 

the sticky stuff that bees make on the inside of their 

hives, which has antibacterial properties,” says Alex. 

“It has a really distinctive taste. Our hives were 

making a lot of propolis because they’re kept in a 

wooded area and the bees use resin from the trees to 

make propolis. 

“It was an unusual botanical to use; I’ve not seen 

any other gins on the market using propolis, and 

it was only on our radar because we’re beekeepers 

ourselves.” 

The propolis gin proved successful taste-wise - but 

was quite difficult to produce, only working in small 

batches. But it gave Alex and Natalie the idea to 

create a Lichfield-inspired dry gin. 

“We thought we should have a Lichfield-based gin, 

and the propolis gin didn’t really fit because it’s so 

esoteric and such a small production,” says Alex. 

“So the first thing we did when we moved into the 

distillery was to make a batch of Lichfield gin.” 

Called No.1, because it was the first product 

developed at the new distillery, the Lichfield dry gin 

is made to a recipe developed by Natalie. 

“The recipe leans on things available foraging 

around Lichfield,” says Alex. “So there’s a lot of 

hedgerow botanicals involved and, to keep it onbrand 

we added bee pollen, which is much easier to 

harvest than propolis and still comes from our own 

bees so has that local link.” 

The No.1 Lichfield dry gin has been a hit with 

customers, with the first two batches made before 

Christmas selling out. The next batch of No.1 will 

also be in a new ceramic bottle, this time in vivid 

Tiffany blue. 

The distillery has also given Alex the chance to 

experiment with different products. The first isthat 

classic Italian favourite limoncello - and again, with

“We go to Italy quite a bit, and limoncello is 

obviously the classic drink in Sorrento,”says Alex. 

“We ended up playing around with a recipe that I 

thought was quite interesting, and Rory and I made 

this together. It was just a test batch of about eight 

bottles. 

“Limoncello’s really interesting; it’s like making 

bread, there aren’t that many ingredients but the 

amounts are really critical, the time it steeps is 

critical, and there are little adjustments you can make 

which means it comes out completely differently.” 

To put their Lichfield limoncello through its paces 

Alex ran a blind taste testing, pitting their effort 

against bottles bought in Sorrento and Sicily, as well 

as a more local brand. 

“Without any misfires, everyone picked our 

limoncello,” says Alex. “So we knew we were onto 

something. And it’s been hugely popular, our last 

batch has nearly sold out again.” 

In keeping with their ethical and environmental 

credentials, The Apiarist is run as a not-for-profit - 

with all proceeds from sales going back into the bees 

which make it all possible. 

“Everything we sell primarily goes back into the bees, 

into maintaining our hives, new colonies and making 

sure our bees are well-kept,” says Alex. 

“We’re guided by our bees; some years you might get 

colonies which are doing really well and producing a 

lot of honey, but some years they may only produce 

enough for themselves so we obviously don’t take any 

from them. If we can’t get any honey from a colony 

in a particular year, it is what it is. 

“It’s all about making sure the bees are thriving.”

Bayliss has been serving the royal town 

of Sutton Coldfield since 1929 and

Managing director Anthony Biswas says: “We 

knew we needed to work with a brand which was

why we partnered with Nolte Küchen; a brand which

A statement from the company reads: “For us, good 

is not good enough. Our aim: to be better than the 

average. This applies not only to the materials that 

we use, but also to the concept, technology and 

design.”

A seasonal star 

LICHFIELD CHEF JACK DUBBERLEY, OWNER OF FINE DINING EXPERIENCE 

DUBBERLEY DELICIOUS, TAKES A LOOK AT SOME OF THE BEST PRODUCE TO 

USE RIGHT NOW. THIS MONTH, RHUBARB IS THE STAR OF THE SHOW 

We may still be in the depths of winter, 

but when it comes to seasonal produce 

there’s a bright spark on the horizon. 

After the prominence of root vegetables 

- and the dominance of their beige and 

brown hues - we’re about to get a splash 

of colour on our plates thanks to a chef 

favourite. 

“Rhubarb is what every chef will be 

using now,” says Jack. “And this year it’s 

early because December was so mild.” 

But we’re not talking about the common 

rhubarb you’ll find in your garden. 

Forced rhubarb is grown in heated, 

darkened sheds and harvested by 

candlelight to maintain the tenderness 

of the shoots, resulting in rhubarb that is sweeter and 

more delicately flavoured with an especially vivid red 

colour.

And the best forced rhubarb available at this time of 

year comes, indisputably, from Yorkshire. Jack deals 

with one of Yorkshire’s leading rhubarb suppliers, 

Tomlinsons. 

“They’re fourth generation growers, so they’ve been 

doing this for a very long time,” he says. “Their 

produce is used by Michelin-starred restaurants and 

it’s exported around the world because it’s so good.” 

One of the main selling points of forced rhubarb for 

chefs is the vibrant red colour, which remains bright 

even when the rhubarb is cooked. 

“The biggest difference between forced rhubarb 

and outdoor rhubarb is that as soon as you start to 

cook outdoor rhubarb it goes a green-brown colour, 

whereas this forced rhubarb remains bright pink so 

looks far more appealing.” 

Jack’s menu is set to make a hero out of the produce. 

“We’re trying to do as much with the rhubarb as 

possible,” says Jack. “So we’re looking at a rhubarb 

sorbet, we’ve created a madeleine with a rhubarb 

glaze, rolled in rhubarb sugar and filled with a 

rhubarb curd or gel. 

“I’m also working on a rhubarb schnapps which will 

work as a palette cleanser, as well as a rhubarb juice 

which might also be a palette cleanser. 

“Rhubarb also works really well with seafood, so 

we’re working on a scallop or langoustine dish;

And a rhubarb dish will shine as the dessert 

course of the Valentine’s evenings menu - a 

pairing of Yorkshire rhubarb and lemon, which 

is set to encompass numerous rhubarb elements. 

The Valentine’s evenings, on February 16 and 

17, are already a sellout - but couples looking to 

sample Jack’s delights can now make a booking on 

Dubberley Delicious’s designated Dinner Dates. 

Since the move to Lichfield city centre last summer, 

Dubberley Delicious cater for tables of six to 16 only. 

But their Dinner Dates, which take place on the first 

Thursday of each month, are strictly for bookings of 

two to four people, to enjoy a communal chef ’s table 

experience. Offering an eight-course set menu priced 

at £125 per person, Dinner Dates will showcase the 

best seasonal produce available. While Jack won’t 

be able to cater for dietary requirements at Dinner 

Dates, a vegetarian evening is in the pipeline. 

“Dinner Dates give parties of two to four the

booking is usually six,” says Jack. “And they’ll also 

give us the opportunity to develop and showcase new 

dishes, because when people usually book with us 

they tend to opt for their favourite dishes rather than 

go for something new. 

“So we’re really looking forward to bringing some

75g caster sugar 

100g plain flour 

4g baking powder 

50g unsalted butter, melted 

25g milk 

Zest and juice of half a lemon

Pour the caster sugar over the whole eggs and whisk until combined. Add the lemon 

zest and juice and mix well, then add 3/4 of the milk and combine. 

In a separate bowl combine the flour and baking powder, then sieve over the wet 

ingredients and combine well with a whisk. 

Melt the butter and allow to cool, then add to the mix and whisk through with the 

remaining milk. 

Refrigerate for five minutes then put the mix into a piping bag and pipe into your 

greased madeleine mould – these are readily available from Amazon. Tap to remove 

any air then bake in the oven at 200C for around ten minutes until puffed up. Allow to 

cool in the moulds for a few minutes then remove and cool on a cooling rack. 

Jack says: “I’ll roll the madeleines in rhubarb sugar, glaze with rhubarb glaze and pipe 

with rhubarb gel. But they taste great just rolled in sugar for a sweet treat.”

The year was 1982 and with these triumphant words, five school kids from Birmingham 

named Dennis, Michael, Kelvin, Patrick and Junior launched themselves on an 

unsuspecting public and into pop and reggae history as Pass the Dutchie surged to 

number one in the UK within two weeks of release and went on to sell over five million 

copies around the world. 

Pass the Dutchie even went as far as reaching the Billboard 100 topping out at number 

10 in the US chart, becoming reggae music’s first top 10 hit in that country. For the 

next three years the hits kept on coming as the boys brought reggae out of the ghettos 

and into pop mainstream with singles like The Youth of Today, Never Gonna Give You 

Up, Heartbreaker, 007, Tell Me Why, and Sixteen, as well as two albums, The Youth of 

Today, and Different Style. 

They toured throughout the world, exchanging numbers with Michael Jackson, 

and Motown legend Stevie Wonder wrote a song especially for them. Irene Carra 

(Flashdance) and Jody Wotley (Shalamar) both sang on Sixteen, while they also duetted 

with Latoya Jackson. The band went on to record Unconditional Love with disco diva 

Donna Summer and also headlined at the world famous Montreux Jazz Festival and 

Reggae Sunsplash, eventually being nominated for a Grammy award as best newcomers 

in 1984. 

It’s now 40 years since the release of Pass The Dutchie, and Musical Youth - now a duo 

in the form of Dennis Seaton (vocals) and Michael Grant (keyboards) - are set to bring 

their generation-defining music to Tamworth this winter to celebrate the immortal

Established in 2015, Lichfield 

Lighting and MJP Eco Energy 

are a family-run business with 

customer service at the heart. 

After outgrowing their previous 

premises on Stafford Road, 

Lichfield Lighting have now 

moved to a larger space on the 

Britannia Industrial Estate. The 

new premises accommodates the 

impressive lighting showroom, 

as well as an eco energy 

demonstration centre and an 

electrical training centre. 

The lighting showroom boasts 

more than 250 decorative indoor 

and outdoor lights including 

chandeliers, bathroom lighting 

and illuminated mirrors, 

pendants, wall lights, table and floor lamps. And if 

you can’t find the lighting solution to fit your needs 

from the extensive in-house selection, Lichfield 

Lighting can help you source the right product to suit 

your requirements. 

On the first floor is the eco energy demonstration 

centre, where the expert team can demonstrate just

fully MCS accredited.
