Apiarist gin - husband and wife Alex and Natalie<br />

Conti - about the launch of their new distillery in<br />

Lichfield’s historic city centre. Born from a passion<br />

for beekeeping and inspired by their Lichfield<br />

surroundings, Alex and Natalie’s award-winning<br />

spirits are making waves in the drinks world - and<br />

finding fans around the globe!<br />

Let the fun bee-gin<br />

HUSBAND AND WIFE TEAM ALEX AND NATALIE CONTI, THE BRAINS BEHIND<br />

TO THEIR LATEST OFFERING - AS WELL AS LAUNCHING THEIR OWN DISTILLERY IN<br />

THE HEART OF THE HISTORIC CITY CENTRE. AMY NORBURY DISCOVERS MORE<br />

THE NEW DISTILLERY IN<br />

THE HEART OF LICHFIELD<br />

What started off as a lockdown project to keep Alex<br />

and Natalie Conti occupied when their day-to-day<br />

business of running a travel and events company had<br />

been thrown into Covid chaos, has turned into an<br />

award-winning brand which has made waves in the<br />

spirits world.<br />

The Apiarist Gin is a Great Taste Award winner<br />

as well as a Craft Gin Club pick, and has found<br />

followers on the other side of the globe where it is<br />

popular with Japanese gin fans. It’s an impressive<br />

feat for a brand which came about simply as a way<br />

to use the excess honey produced by the family’s 12<br />

beehives.<br />

“We came at this as beekeeping people rather<br />

than gin people,” explains Alex. “Natalie and I<br />

had bought each other a bee-keeping course as an<br />

anniversary present one year and really enjoyed it,<br />

but it wasn’t until years later when we’d had kids and<br />

got a house with a garden that we decided to get a<br />

hive.”<br />

One hive soon grew into more, and with 12 hives<br />

producing ample honey, Alex and Natalie needed a<br />

new outlet.<br />

“You can’t consume that much honey as a family<br />

of four, so we had to think of something to do with<br />

the surplus,” says Alex. “So I connected with Rory<br />

McKerrell, of Lichfield’s Fifth Spire gin, and we<br />

thought it would be fun to create a gin with our<br />

honey in it. We tinkered with the recipe, and came<br />

up with The Apiarist.”<br />

When their original gin proved to be a hit, the Contis<br />

decided to add to the range. The Apiarist’s four core<br />

products all showcase the family’s own honey.<br />

“The idea behind our original gin was to make<br />

something that was really balanced and had honey in<br />

it but wasn’t sweet,” says Alex. “So we made a really<br />

lemony gin, blended it with our own honey and<br />

then finished it with tea to give it that honey colour<br />

because, as it turns out, honey doesn’t actually give<br />

any colour, it just makes the gin cloudy.<br />

“We then had the idea of doing a more summery<br />

expression, which is where our Forager gin came<br />

from. It’s a pink version of our original gin,<br />

the only difference being the tea we use is a<br />

team made with blackberries.”<br />

A rum and a whisky soon followed.<br />

“We don’t make them in-house,” says Alex.<br />

“The rum comes to us from Guyana and<br />

the whisky is a three-year-old whisky from<br />

Scotland, and we then blend them both<br />

with our own honey before bottling.”<br />

When Fifth Spire decided to close their<br />

business, it meant Alex and Natalie needed<br />

to find a new place to make their gin -<br />

leading them to create their own distillery in<br />

Lichfield city centre, with former Fifth Spire<br />

distiller Rory on board.<br />

“We were making quite a lot of gin and were looking<br />

to find a home for it, then this building on Tamworth<br />

Street came up,” says Alex. “Our offices had always<br />

been next door, so it just made sense for us. We’d<br />

been in talks with Jack Dubberley, from Dubberley<br />

Delicious, about finding a space for him in the city<br />

centre, and we had an idea for the top floor of the<br />

building too, so it ticked all of the boxes.”<br />

Extensive renovations of the historic building<br />

followed, with Jack moving his Dubberley Delicious<br />

fine dining concept into Tamworth Street last<br />

BEEKEEPING IS A FAMILY<br />

AFFAIR FOR THE CONTIS<br />

summer and the distillery officially launching in<br />

November. And it was their largest order which<br />

became a key factor when developing the distillery.<br />

“Our largest orders actually go to Japan,” says Alex.<br />

“The Japanese are really big on their gin and massive<br />

on beekeeping, so our gin works really well in that<br />

market.<br />

“The whole distillery was built to be able to service<br />

the 300 bottles for our Japanese order, so that has<br />

dictated our entire setup. From the size of the still<br />

to the space to accommodate a pallet, everything is<br />

built to fit 300 bottles.”<br />

The distillery also gives Alex and Natalie the space to<br />

host gin-making classes, which will see gin fans create<br />

their own expressions using their chosen botanicals<br />

from an extensive selection, under the watchful eye<br />

of distiller Rory.<br />

Another major change has been with the gin’s bottle<br />

itself, moving from glass to a stunning ceramic<br />

design, which were designed by The Apiarist’s<br />

neighbour, potter Andrew Matheson, a longstanding<br />

resident of Tamworth Street, where he has his studio<br />

and gallery.<br />

“We had an idea that we wanted a ceramic bottle so<br />

asked Andrew if he could come up with something,”<br />

says Alex. “Andrew came up with this really beautiful<br />

design, but unfortunately he wasn’t able to produce<br />

the bottle on the scale we needed by himself, so<br />

we had to find someone who could make it more<br />

commercially.<br />

“Andrew then put us in touch with a producer who<br />

said they’d be able to make the quantities we need,<br />

so our bottles are now made in Stoke on Trent, the<br />

home of pottery.”<br />

The beautiful ceramic bottles are something you can<br />

imagine taking pride of place on any gin fan’s shelf,<br />

which has led to The Apiarist’s latest innovation - an<br />

environmentally friendly refill pouch, which is set to<br />

launch this month and means customers can top up<br />

their existing bottles instead of<br />

throwing them away.<br />

One of the latest challenges<br />

for Alex and distiller Rory has<br />

been to create a London dry<br />

gin, which is a gin where all<br />

the flavour comes from the<br />

botanicals used during the<br />

distillation process, with nothing<br />

added afterwards - unlike The<br />

Apiarist’s core products which<br />

are all flavoured with honey postdistillation.<br />

“We wanted to use something<br />

from our bees, so originally we<br />

made it with propolis, which is<br />

the sticky stuff that bees make on the inside of their<br />

hives, which has antibacterial properties,” says Alex.<br />

“It has a really distinctive taste. Our hives were<br />

making a lot of propolis because they’re kept in a<br />

wooded area and the bees use resin from the trees to<br />

make propolis.<br />

“It was an unusual botanical to use; I’ve not seen<br />

any other gins on the market using propolis, and<br />

it was only on our radar because we’re beekeepers<br />

ourselves.”<br />

The propolis gin proved successful taste-wise - but<br />

was quite difficult to produce, only working in small<br />

batches. But it gave Alex and Natalie the idea to<br />

create a Lichfield-inspired dry gin.<br />

“We thought we should have a Lichfield-based gin,<br />

and the propolis gin didn’t really fit because it’s so<br />

esoteric and such a small production,” says Alex.<br />

“So the first thing we did when we moved into the<br />

distillery was to make a batch of Lichfield gin.”<br />

Called No.1, because it was the first product<br />

developed at the new distillery, the Lichfield dry gin<br />

is made to a recipe developed by Natalie.<br />

“The recipe leans on things available foraging<br />

around Lichfield,” says Alex. “So there’s a lot of<br />

hedgerow botanicals involved and, to keep it onbrand<br />

we added bee pollen, which is much easier to<br />

harvest than propolis and still comes from our own<br />

bees so has that local link.”<br />

The No.1 Lichfield dry gin has been a hit with<br />

customers, with the first two batches made before<br />

Christmas selling out. The next batch of No.1 will<br />

also be in a new ceramic bottle, this time in vivid<br />

Tiffany blue.<br />

The distillery has also given Alex the chance to<br />

experiment with different products. The first isthat<br />

classic Italian favourite limoncello - and again, with<br />

“We go to Italy quite a bit, and limoncello is<br />

obviously the classic drink in Sorrento,”says Alex.<br />

“We ended up playing around with a recipe that I<br />

thought was quite interesting, and Rory and I made<br />

this together. It was just a test batch of about eight<br />

bottles.<br />

“Limoncello’s really interesting; it’s like making<br />

bread, there aren’t that many ingredients but the<br />

amounts are really critical, the time it steeps is<br />

critical, and there are little adjustments you can make<br />

which means it comes out completely differently.”<br />

To put their Lichfield limoncello through its paces<br />

Alex ran a blind taste testing, pitting their effort<br />

against bottles bought in Sorrento and Sicily, as well<br />

as a more local brand.<br />

“Without any misfires, everyone picked our<br />

limoncello,” says Alex. “So we knew we were onto<br />

something. And it’s been hugely popular, our last<br />

batch has nearly sold out again.”<br />

In keeping with their ethical and environmental<br />

credentials, The Apiarist is run as a not-for-profit -<br />

with all proceeds from sales going back into the bees<br />

which make it all possible.<br />

“Everything we sell primarily goes back into the bees,<br />

into maintaining our hives, new colonies and making<br />

sure our bees are well-kept,” says Alex.<br />

“We’re guided by our bees; some years you might get<br />

colonies which are doing really well and producing a<br />

lot of honey, but some years they may only produce<br />

enough for themselves so we obviously don’t take any<br />

from them. If we can’t get any honey from a colony<br />

in a particular year, it is what it is.<br />

“It’s all about making sure the bees are thriving.”<br />

DUBBERLEY DELICIOUS, TAKES A LOOK AT SOME OF THE BEST PRODUCE TO<br />

USE RIGHT NOW. THIS MONTH, RHUBARB IS THE STAR OF THE SHOW<br />

We may still be in the depths of winter,<br />

but when it comes to seasonal produce<br />

there’s a bright spark on the horizon.<br />

After the prominence of root vegetables<br />

- and the dominance of their beige and<br />

brown hues - we’re about to get a splash<br />

of colour on our plates thanks to a chef<br />

favourite.<br />

“Rhubarb is what every chef will be<br />

using now,” says Jack. “And this year it’s<br />

early because December was so mild.”<br />

But we’re not talking about the common<br />

rhubarb you’ll find in your garden.<br />

Forced rhubarb is grown in heated,<br />

darkened sheds and harvested by<br />

candlelight to maintain the tenderness<br />

of the shoots, resulting in rhubarb that is sweeter and<br />

more delicately flavoured with an especially vivid red<br />

colour.<br />

And the best forced rhubarb available at this time of<br />

year comes, indisputably, from Yorkshire. Jack deals<br />

with one of Yorkshire’s leading rhubarb suppliers,<br />

Tomlinsons.<br />

“They’re fourth generation growers, so they’ve been<br />

doing this for a very long time,” he says. “Their<br />

produce is used by Michelin-starred restaurants and<br />

it’s exported around the world because it’s so good.”<br />

One of the main selling points of forced rhubarb for<br />

chefs is the vibrant red colour, which remains bright<br />

even when the rhubarb is cooked.<br />

“The biggest difference between forced rhubarb<br />

and outdoor rhubarb is that as soon as you start to<br />

cook outdoor rhubarb it goes a green-brown colour,<br />

whereas this forced rhubarb remains bright pink so<br />

looks far more appealing.”<br />

Jack’s menu is set to make a hero out of the produce.<br />

“We’re trying to do as much with the rhubarb as<br />

possible,” says Jack. “So we’re looking at a rhubarb<br />

sorbet, we’ve created a madeleine with a rhubarb<br />

glaze, rolled in rhubarb sugar and filled with a<br />

rhubarb curd or gel.<br />

“I’m also working on a rhubarb schnapps which will<br />

work as a palette cleanser, as well as a rhubarb juice<br />

which might also be a palette cleanser.<br />

“Rhubarb also works really well with seafood, so<br />

we’re working on a scallop or langoustine dish;<br />

And a rhubarb dish will shine as the dessert<br />

course of the Valentine’s evenings menu - a<br />

pairing of Yorkshire rhubarb and lemon, which<br />

is set to encompass numerous rhubarb elements.<br />

The Valentine’s evenings, on February 16 and<br />

17, are already a sellout - but couples looking to<br />

sample Jack’s delights can now make a booking on<br />

Dubberley Delicious’s designated Dinner Dates.<br />

Since the move to Lichfield city centre last summer,<br />

Dubberley Delicious cater for tables of six to 16 only.<br />

But their Dinner Dates, which take place on the first<br />

Thursday of each month, are strictly for bookings of<br />

two to four people, to enjoy a communal chef ’s table<br />

experience. Offering an eight-course set menu priced<br />

at £125 per person, Dinner Dates will showcase the<br />

best seasonal produce available. While Jack won’t<br />

be able to cater for dietary requirements at Dinner<br />

Dates, a vegetarian evening is in the pipeline.<br />

“Dinner Dates give parties of two to four the<br />

booking is usually six,” says Jack. “And they’ll also<br />

dishes, because when people usually book with us<br />

they tend to opt for their favourite dishes rather than<br />

go for something new.<br />

“So we’re really looking forward to bringing some<br />

new ideas to the table - which we hope people will<br />

really enjoy.”<br />

Makes 10<br />

2 eggs<br />

75g caster sugar<br />

100g plain flour<br />

4g baking powder<br />

50g unsalted butter, melted<br />

25g milk<br />

Zest and juice of half a lemon<br />

RHUBARB MADELEINES<br />

ARE ONE OF JACK’S<br />

LATEST OFFERINGS<br />

Pour the caster sugar over the whole eggs and whisk until combined. Add the lemon<br />

zest and juice and mix well, then add 3/4 of the milk and combine.<br />

In a separate bowl combine the flour and baking powder, then sieve over the wet<br />

ingredients and combine well with a whisk.<br />

Melt the butter and allow to cool, then add to the mix and whisk through with the<br />

remaining milk.<br />

Refrigerate for five minutes then put the mix into a piping bag and pipe into your<br />

greased madeleine mould – these are readily available from Amazon. Tap to remove<br />

any air then bake in the oven at 200C for around ten minutes until puffed up. Allow to<br />

cool in the moulds for a few minutes then remove and cool on a cooling rack.<br />

Jack says: “I’ll roll the madeleines in rhubarb sugar, glaze with rhubarb glaze and pipe<br />

with rhubarb gel. But they taste great just rolled in sugar for a sweet treat.”<br />

WHAT: MUSICAL YOUTH<br />

The year was 1982 and with these triumphant words, five school kids from Birmingham<br />

named Dennis, Michael, Kelvin, Patrick and Junior launched themselves on an<br />

unsuspecting public and into pop and reggae history as Pass the Dutchie surged to<br />

number one in the UK within two weeks of release and went on to sell over five million<br />

copies around the world.<br />

Pass the Dutchie even went as far as reaching the Billboard 100 topping out at number<br />

10 in the US chart, becoming reggae music’s first top 10 hit in that country. For the<br />

next three years the hits kept on coming as the boys brought reggae out of the ghettos<br />

and into pop mainstream with singles like The Youth of Today, Never Gonna Give You<br />

Up, Heartbreaker, 007, Tell Me Why, and Sixteen, as well as two albums, The Youth of<br />

Today, and Different Style.<br />

They toured throughout the world, exchanging numbers with Michael Jackson,<br />

and Motown legend Stevie Wonder wrote a song especially for them. Irene Carra<br />

(Flashdance) and Jody Wotley (Shalamar) both sang on Sixteen, while they also duetted<br />

with Latoya Jackson. The band went on to record Unconditional Love with disco diva<br />

Donna Summer and also headlined at the world famous Montreux Jazz Festival and<br />

Reggae Sunsplash, eventually being nominated for a Grammy award as best newcomers<br />

in 1984.<br />

It’s now 40 years since the release of Pass The Dutchie, and Musical Youth - now a duo<br />

in the form of Dennis Seaton (vocals) and Michael Grant (keyboards) - are set to bring<br />

their generation-defining music to Tamworth this winter to celebrate the immortal<br />

WELL the weather out there may be frightful, but this season’s<br />

knitwear choices are just delightful. And when the chilly<br />

temperatures arrive with full force, there’s only one thing to<br />

do - get cosy.<br />

From puffer coats to snow boots, chunky knits to fleecy mitts,<br />

there’s plenty to love about cold weather dressing. And the<br />

best way to beat the chills? Layering. Cosy jumpers and fleecy<br />

gilets, down-filled jackets and oversized coats combine to<br />

create the perfect antidote to sub-zero temperatures, ensuring<br />

you stay stylish no matter the weather.<br />

Throwing some statement knits into your circulation of winter<br />

jumpers will do wonders for your wardrobe. From bold pattern<br />

to interesting texture, wild colour or chic neutral, the right<br />

statement knit will be the foundation of your winter dressing.<br />

Pair with jean or leggings, go casual or dressy - your knit will<br />

take you wherever you need to be.<br />

For a jumper alternative, add a chunky cardigan or two<br />

As the new year rolls around, many of us give<br />

Veganuary a go as a way to kickstart a health regime<br />

and make a positive change. But if you’re embracing a<br />

vegan lifestyle, have you thought about the products in<br />

There’s never been a better time to give your beauty<br />

regime an animal-friendly shake-up as the vegan<br />

beauty market has come on leaps and bounds in<br />

recent years, with luxury brands and major cosmetics<br />

players getting on board with beauty free from animal<br />

derivatives. In fact, in December 2023 The Body Shop<br />

became the first global beauty brand to be certified<br />
