decision to move to bi-monthly publication for the<br />

foreseeable future. We want to ensure we can keep<br />

This month, we’ve chatted to Lichfield first-time author<br />

Jaime Craven about the incredible inspiration for her<br />

children’s book, My Magical Memories, and we welcome<br />

on board Lichfield chef Jack Dubberley, who’ll be<br />

sharing his expertise on produce throughout the seasons<br />

and giving some top tips on what to try now.<br />

TRAUMATIC CHILDHOOD<br />

EXPERIENCE<br />

Jaime Craven’s debut book, My Magnificent<br />

Memories, may have been written for children - but<br />

it definitely doesn’t have the typical fantasy storyline.<br />

Instead, the book - which has already hit the Amazon<br />

top ten bestseller list in its genre - looks at feelings of<br />

grief within children, and how difficult topics can be<br />

spoken about.<br />

Although mum-of-three Jaime first started writing<br />

her book 12 months ago, it was something she had<br />

long wanted to do. The idea of writing a book had<br />

stemmed from her own experience of a traumatic<br />

event while she was on holiday as a youngster which,<br />

she says, consumed her teenage years.<br />

“When I was 13 years old, my family and I went on<br />

holiday to Sri Lanka in 2004 for Christmas as we had<br />

family living there,” explains Jaime. “We were on a<br />

boat and the skipper realised that something wasn’t<br />

quite right. We were in a remote part of Sri Lanka<br />

and communication-wise, he didn’t really know how<br />

to tell us what was happening.”<br />

It was Boxing Day, and Jaime and her family were<br />

caught up in one of the deadliest natural disasters in<br />

recorded history.<br />

A massive tsunami with waves up to 30m high, now<br />

known as the Boxing Day Tsunami, devastated<br />

communities along the surrounding coasts of the<br />

Indian Ocean, killing an estimated 227,898 people in<br />

14 countries.<br />

“The skipper sailed us out as far as he could because<br />

tsunamis actually travel on the seafloor so the further<br />

out at sea we were, the safer we were,” says Jaime.<br />

“The tsunami went straight underneath us, which<br />

was an absolute miracle. But of course, I had seen<br />

a lot of things that any 13-year-old should not have<br />

had to see because of the impact the disaster had<br />

caused.”<br />

After travelling back home to the UK, Jaime said<br />

she was able to deal with what she had experienced<br />

and felt okay, mentally. But around five years later<br />

she went travelling to Malaysia with her partner<br />

and found that visiting that side of the world<br />

again brought back thoughts and memories which<br />

impacted her physical and mental wellbeing.<br />

“Going to Malaysia just triggered something in my<br />

brain and as soon as I got home, I had PTSD (posttraumatic<br />

stress disorder),” explains Jaime.<br />

“I had it for about a year and I just couldn’t shift it. I<br />

couldn’t leave the house and I just felt frightened of<br />

everything, it was just a feeling that I had. I learned<br />

a lot about myself and my brain - grief, loss, guilt -<br />

through all those years.<br />

“And now I’m an adult and I can reflect on it a little<br />

bit, I realise how little support there is for children<br />

suffering with grief. You don’t really know what it<br />

feels like to be a child going through grief unless<br />

you’ve been that child, so I think that was a big<br />

driving factor for me.”<br />

With the support from loved ones and professional<br />

help, Jaime found her path to recovery. Having<br />

experienced this, she was able to notice and relate<br />

to a younger family member who was also going<br />

through a difficult period in their life.<br />

“I’ve got a younger family member who’s been<br />

through grief recently and I recognised in her some<br />

of the things that I felt,” says Jaime.<br />

“Although it was a different type of grief, I could<br />

see the cycle that she was going through, and I’ve<br />

done it. So, I told her this story because what used<br />

to work for me was understanding why I felt the way<br />

I did and that I wasn’t unusual and that it wasn’t<br />

something that was going to be with me forever. It<br />

was literally a trigger response to a trauma. It’s your<br />

brain trying to protect itself, and it’s a very normal<br />

and a very healthy thing for your brain to do.<br />

“This story was me basically explaining to her,<br />

through a child’s story, that an event will happen,<br />

you’ll feel rubbish for a bit, then you’ll feel better<br />

because you’ll start to heal from the trauma with<br />

your friends, family and your memories. And then<br />

once that cycle is finished, you’ll realise how much<br />

better you’ve become as a person, how much you’ve<br />

learned and if this was to happen again, you would<br />

know how to handle it, you can grow through these<br />

terrible things; although they are terrible, they don’t<br />

define you.”<br />

Jaime had carried the effects of her history and<br />

past experiences throughout her life. She no longer<br />

wanted them as reminders and writing a book was<br />

a way for her to channel that energy into creating<br />

something positive to help others.<br />

“My past was rubbish, and I was fed up with it being<br />

like that,” Jamie says. “I knew that I always wanted<br />

to do something and when this family member of<br />

mine went through this difficult period as a mother<br />

who has a young daughter of a similar age, I really<br />

felt for her and that’s what triggered it off. It was me<br />

sitting with her and saying ‘I know what you’re going<br />

through’ and that is the story that is in the book, My<br />

Magnificent Memories; it’s exactly the same story I<br />

told her.”<br />

Themes of feelings are represented throughout My<br />

Magnificent Memories, which are broken down in a<br />

way for a child to have a better understanding of the<br />

experiences they may be going through and a way to<br />

deal with it and process it.<br />

“I explained it as having a castle in your brain<br />

and then when something happens in your castle,<br />

everybody living in your castle is going to feel a<br />

little bit on guard which is the anxiety you feel,”<br />

says Jaime. “You may be a little bit worried about<br />

things, and normal things that you would do every<br />

day can make you feel worried because of what has<br />

just happened. Then it turned into this story, and it<br />

helped her at the time, and she felt better. It was my<br />

husband that said you should write this story down.”<br />

After writing the initial story, there were many<br />

changes made along the way because Jaime wanted<br />

to ensure that the story was written for children. So<br />

her 6-year-old daughter Mila had her creative input -<br />

which was exactly what Jaime needed.<br />

“Because it’s a story about grief I didn’t want it to be<br />

too sad and I had to be careful around the wording<br />

that I used because of the age range and I rewrote<br />

it quite a few times,” says Jaime. “I’ve got three<br />

children and two businesses, so we did a lot of this in<br />

the evenings - and my husband has heard this story a<br />

million times!<br />

“My daughter had a big input with the characters,<br />

and she’s got such a good imagination. I think we<br />

write something that we think that a child is going<br />

to perceive as brilliant, but actually a child’s input<br />

is exactly what you need when you’re writing a<br />

children’s book because my daughter would think<br />

about things like the fact that the character Amelia<br />

has a pet hedgehog and that’s something that I<br />

perhaps wouldn’t have thought of. My daughter was<br />

very involved, and she loved it.”<br />

After getting the story just right, it was time to bring<br />

the vision to life, Jaime wanted to include a little<br />

piece of her own life experience which had a deeper<br />

connection to her as the author of the book - and<br />

representation was at the heart of it.<br />

“The character Amelia has got a hearing aid and I<br />

wanted to include this because I used to be a sign<br />

language interpreter and deaf communities do not<br />

get represented very often, so I wanted to make sure<br />

that if I was going to do something, they would be<br />

represented in my book,” Jaime says.<br />

Jaime had initially planned to give<br />

the published book as a present to her<br />

young family member who was the root<br />

of inspiration to write the story. But she<br />

soon found out that it wasn’t only her<br />

shelf the book was about to be sitting<br />

on.<br />

“My young family members’ birthday<br />

was very close to the publication date,<br />

she knew that the story was based on<br />

her and she gave me the inspiration and<br />

I wanted to make sure that she had that<br />

book for her birthday,” says Jaime. “I<br />

wrote a message in the book that when<br />

it’s World Book Day, you’ll be able to go<br />

as yourself because the book is based<br />

on her. So, my goal was that she would<br />

realise how fantastically amazing she is<br />

and hopefully it would help her through<br />

anything she went through and that she<br />

could go as herself on World Book Day<br />

because that’s all she needs to be.”<br />

Since the release of My Magnificent Memories, it<br />

has reached number seven in the Amazon best sellers<br />

list within its genre and Jaime has received a lot of<br />

support around it.<br />

“I didn’t really think that I would get the support that<br />

I have,” she admits. “It started out as a book that<br />

would be on my family members’ and daughter’s<br />

shelf, I didn’t really think about it, and it was literally<br />

one of those bucket list things to write a children’s<br />

book. I hadn’t planned for it to be like this at all, but<br />

it’s been great.”<br />

Moving forward, Jaime said that she would like to<br />

write another book purely out of passion, but for<br />

now, if there is something that people can take away<br />

from My Magnificent Memories, then this is it:<br />

“I feel responsible, as a child that went through grief<br />

- that grief is normalised for our children. When<br />

I went through the tsunami, at that time, mental<br />

health was not talked about, and I was ‘the tsunami<br />

girl’ which made me feel different to everybody else<br />

and I hated it. What happened to me was not my<br />

fault, and how my brain reacted to that was not my<br />

fault - and this happens to children everywhere and<br />

there is not enough in our day-to-day life to support<br />

children with those absolutely ginormous feelings.<br />

There isn’t enough, so this is my contribution, and<br />

I would hope that any child that reads the book<br />

would realise that grief, guilt and loss are a part<br />

of everybody’s life and there are days past the<br />

darkness.”<br />

It’s fair to say that the last few months of<br />

2022 tossed both house buyers and sellers<br />

alike into turmoil as they watched interest<br />

rates climb and scanned scaremongering<br />

headlines about plummeting house prices,<br />

leaving us all in a state of ‘what do I do?’<br />

limbo.<br />

With thousands of us starting <strong>2023</strong> with a<br />

‘new year, new home’ mindset, Chris Stuart,<br />

area manager at Chosen Home, says the<br />

crucial thing to consider when evaluating the<br />

housing market is that 2020 and 2021 were<br />

abnormal years that cannot realistically be<br />

used as a real-time comparison for year-onyear<br />

house price figures.<br />

“When the pandemic hit us and the UK<br />

went into lockdown in March 2020, the<br />

general consensus was that the property<br />

market would tank. Agents weren’t able to<br />

conduct viewings and everything stalled.<br />

In reality, spending months confined to our<br />

homes threw everything into perspective and<br />

far from tanking, the market went absolutely<br />

crazy!” said Chris.<br />

“We have seen many gloomy headlines<br />

in the last few months, but in reality, the<br />

property market is performing better than<br />

it was at the end of 2019 – the last realistic,<br />

non-pandemic timeframe we have to use<br />

as a comparable. In fact, there’s a four per<br />

cent increase in demand for new homes, so<br />

these doom laden forecasts that house prices will fall<br />

significantly in the coming months are inaccurate –<br />

unfortunately for buyers. We remain very much in a<br />

sellers’ market, but the activity we’ve seen over the<br />

past three years, with house prices increasing by five<br />

and six per cent each month, is behind us: it simply<br />

wasn’t sustainable,” he added.<br />

“<strong>2023</strong> will be an exciting year for the housing<br />

market. There are going to be far more opportunities<br />

for people who simply haven’t had an opportunity<br />

in the past couple of years, but they shouldn’t be<br />

holding out for a mythical 20 per cent drop in asking<br />

price. At Chosen, we’re finding that demand is still<br />

strong for high-value homes in desirable locations<br />

and I don’t see that changing.<br />

“The question I’ve been asked more than any other<br />

over the past couple of months is ‘Should I hold off<br />

on viewing or putting an offer in on this house in<br />

case it comes down in price…’ and my answer is an<br />

emphatic NO: if you see the home you like, don’t<br />

risk missing out, put in an offer and enjoy living in it<br />

rather than waiting for a price reduction that might<br />

never materialise,” he advised.<br />

A family legacy<br />

LICHFIELD STALWARTS TATLOW CARPETS ARE CELEBRATING AN IMPRESSIVE HALF-<br />

CENTURY IN BUSINESS AS THE GO-TO NAME FOR FLOORING IN THE AREA<br />

Ken Tatlow started his eponymous flooring<br />

business back in 1972; today, some 50 years<br />

later, his daughter Jayne Beard and grandson<br />

Tom carry on the family legacy.<br />

Tatlow Carpets started life based at City<br />

Arcade in the heart of Lichfield, offering<br />

flooring sales and fitting. Initially working<br />

by himself, Ken would be in the showroom<br />

selling during the day, and fitting orders for<br />

customers in the evenings. As Ken got busier,<br />

his wife Anne started to work some days in<br />

the showroom, and after a year the company<br />

had enough business to employ two fitters.<br />

As a business with family at its heart, Ken’s<br />

children soon became part of the team.<br />

Ken’s son Stephen joined aged 22, training to<br />

become a fully-fledged fitter and also working in the<br />

estimating and measuring side of the business, then<br />

five years later Ken’s daughter Jayne joined at the<br />

same age to work in sales and accounts.<br />

Over the years, Tatlow’s became the name for<br />

flooring in and around Lichfield, providing all<br />

floorings for the home and light commercial areas.<br />

The company offers a wide selection to suit all needs,<br />

styles and budgets, from wool and man-made carpets<br />

from leading names such as Axminster, Ulster,<br />

Cormar and Crucial Trading among others, to<br />

luxury vinyl tiles such as Karndean, Distinctive and<br />

Project Floors, sheet vinyls, laminate, and natural<br />

and sisal carpets.<br />

Rugs are another Tatlow speciality, with plenty<br />

of choice in store covering wool and man-made,<br />

modern and contemporary styles. Rug and runner<br />

binding is also done in-house, while Tatlow’s stock a<br />

variety of accessories including indoor and outdoor<br />

mats, rug stop, cleaning products and protectors.<br />

Tatlow’s are also one of the only flooring companies<br />

in the Midlands that provide the full start-to-finish<br />

service, from free estimating and samples, written<br />

quotes, to uplift and disposal of existing flooring,<br />

moving furniture, bespoke door bars and thresholds,<br />

and door easing.<br />

TATLOW TEAM TODAY<br />

In August 2004, Ken’s son Stephen suddenly passed<br />

away due to a rare condition called sudden adult<br />

death syndrome (SADS). This devastating, lifechanging<br />

event left a huge hole in both the family<br />

and the business, meaning the team had to adapt and<br />

overcome the tragedy.<br />

The business relocated out of the city centre in 2013<br />

to Britannia Enterprise Park at Lichfield Trent Valley,<br />

where they remain to this day. Ken Tatlow sadly<br />

passed away a year after the move, being very much<br />

involved in the business right until the end.<br />

Ken’s legacy lives on in his daughter Jayne and<br />

grandson Tom, who joined the business in 2018.<br />

Jayne, Tom and David Hatton, head estimator and<br />

sales who’s been with Tatlow’s for more than 15<br />

years, make up the team today.<br />

Tom said: “We are so proud to say we have reached<br />

50 years of Tatlow’s, and would like to take this<br />

opportunity to thank all of our customers for their<br />

support over the years. It’s incredible when we visit<br />

homes and they say ‘Your grandfather fitted this’ or<br />

‘Your uncle screeded that’.<br />

Fish and chips. When it comes to food, fish and chips<br />

are a national staple. The traditional Friday treat<br />

at the end of a working week, the ultimate comfort<br />

food and (whisper it quietly) one of the healthier<br />

options when it comes to takeaways. It’s just about as<br />

classically British as you can get. Until it isn’t.<br />

If you thought the good old fashioned British fish<br />

and chips couldn’t be improved upon, then you’ve<br />

probably never sampled The English Indian’s fine<br />

fayre. And if you haven’t, it’s probably high time you<br />

did.<br />

Lichfield street food favourites, The English Indian<br />

burst onto the foodie scene back in 2016 with their<br />

decidedly spicier twist on a takeaway classic. Taking<br />

the teatime staple and infusing it with a heady dollop<br />

of Indian spices created a foodie phenomenon so<br />

good they were named People’s Choice at the British<br />

Street Food Awards just a year after setting up.<br />

A firm fixture on the UK’s festival list, you can find<br />

The English Indian touting their wares everywhere<br />

from huge occasions like Glastonbury and Latitude,<br />

to local festivals too - not to mention an array of<br />

street food events and dining clubs around the<br />

country.<br />

And during the pandemic lockdown they brought<br />

a little bit of cheer to those dismal dining days<br />

when they popped up with their trusty van around<br />

Lichfield and the surrounding areas.<br />

The English Indian have gained a loyal band of<br />

foodie followers over the years, so when the news<br />

came last October that they would be opening up<br />

their Lichfield unit once a month for a pop-up dining<br />

event, it was greeted with great delight.<br />

Ever since encountering The English Indian at<br />

Lichfield Food Festival many moons ago, team<br />

<strong>J’AIME</strong> have been fans of their small but perfectly<br />

formed selection of dishes. And with the promise of<br />

an expanded menu featuring brand new treats to try,<br />

we couldn’t resist checking it out.<br />

Now, the location of the pop-up isn’t exactly<br />

glamorous - they’re based on an industrial estate just<br />

off the Birmingham Road, after all - but when we<br />

arrived we discovered the unit had been transformed<br />

into a rustic yet bustling dining space. Fairy lights<br />

and foliage aplenty gave the space a quirky, inviting<br />

vibe while music added to the convivial atmosphere,<br />

alongside the large wooden tables and benches for<br />

communal dining.<br />

A bar stocked with prosecco, craft beers and plenty<br />

of soft drink options means you can enjoy a cheeky<br />

beverage or two while you dine.<br />

The set-up is a casual affair; simply pop to the<br />

counter and place your order, then take a buzzer<br />

which will beep when your food is ready to collect.<br />

We managed to grab a drink and a seat before our<br />

order was ready, not much more than five minutes<br />

later.<br />

As a huge fan of The English Indian’s signature fish<br />

and chips, my hubby stuck to what he knew - and he<br />

wasn’t disappointed. Beautifully firm fish in a crispy<br />

batter with a hint of spice, a pile of moreish chaat<br />

masala chips, unctuous Indian chip shop curry sauce<br />

and those delectable chilli and mint garden mushy<br />

peas are a match made in heaven. This is next-level<br />

fish and chips which delivers in spades on flavour.<br />

I’d heard good things about the new Kashmiri<br />

chicken burger and couldn’t resist eschewing my<br />

usual fish-and-halloumi combo for something<br />

different. And I was so pleased I did. The chicken<br />

was succulent and tender, in a delicious spiced<br />

coating, laden with poppadom, cheese, lettuce, red<br />

onion, sweet chilli, spicy mayo and coriander. It was<br />

a behemoth of a burger, spilling out of its brioche<br />

bun, and with an accompanying heap of chaat<br />

masala chips, it was a hearty meal indeed - although<br />

so tasty I polished it off in its entirety. I did miss those<br />

exceptional mushy peas - but for £1 extra you can<br />

order a portion on the side.<br />

Not wanting to miss out on the fried chicken, my<br />

husband also ordered a side portion of Kashmiri<br />

chicken strips, topped with spicy mayo, sweet chilli,<br />

red onion and coriander, which he found just<br />

delicious. It meant that I didn’t have to share my<br />

burger either, so a win all round.<br />

With vegetarian halloumi wedges and a vegan<br />

artichoke ‘vish’ option, the menu may be small, but it<br />

really does cater for everyone.<br />

And when it comes to delivering on dietary<br />

requirements, one of the other attractions<br />

of The English Indian is that their entire<br />

menu - with the sole exception of their<br />

pop-up special, that Brummie favourite<br />

the chicken balti pie - is entirely, and most<br />

often naturally, gluten-free. The pakora<br />

batter which coats the fish, artichoke and<br />

halloumi wedges is made - as traditional<br />

Indian pakoras are - using chickpea-based<br />

flour, while the new Kashmiri chicken<br />

burger boasts a gluten-free breading and<br />

a specially-sourced gluten-free brioche<br />

bun. I’ve got several friends with gluten<br />

intolerances, and being able to eat from the<br />

same menu without compromises is a rare<br />

treat - while as a non-gluten-free diner, I<br />

noticed absolutely no difference in taste.<br />

In fact, as we arrived at the pop-up, one<br />

of my gluten-free friends was just leaving,<br />

over the moon at finally having found a<br />

fully gluten-free chicken burger of such<br />

deliciousness and quality.<br />

The English Indian’s monthly pop-ups are<br />

currently scheduled to run in February,<br />

on Friday 9 and Saturday 10, and March,<br />

again on Friday 9 and Saturday 10, after<br />

which festival season kicks back in, taking<br />

the team all over the country once more. So<br />

if you haven’t already paid them a visit on<br />

their Lichfield home turf, the time is now.<br />

For the love of plants<br />

WITH PLANT-FOCUSED MENUS WHICH ARE NOTHING SHORT OF CULINARY WIZARDRY,<br />

BIRMINGHAM RESTAURANT LAND IS ENOUGH TO TEMPT EVEN THE MOST ARDENT<br />

MEAT-EATER TO GO VEGAN, AS AMY NORBURY DISCOVERS<br />

Every time January rolls around, I’m<br />

tempted to take on the Veganuary<br />

challenge. But with a committed<br />

meat-eater for a husband, and two<br />

kids who’d happily eat their own<br />

bodyweight in ham, bacon, sausages<br />

and the like, my attempts to foist<br />

entirely vegetable-based meals upon<br />

them more often than not go down like<br />

the proverbial lead balloon.<br />

Me, well I enjoy a good fillet steak as<br />

much as the next person, but I’m often<br />

just as happy with vegetarian options.<br />

Although I’m less of a fan of things<br />

masquerading as meat; I’d rather just<br />

enjoy veggies for veggies’ sake. So a<br />

fine-dining restaurant which offers purely plantbased,<br />

seasonal tasting menus sounded right up my<br />

street.<br />

Based in Birmingham’s pretty Great Western Arcade,<br />

Land bills itself as a ‘modern, plant-focused, casual<br />

dining restaurant’. Taking inspiration from around<br />

the world, Land’s menus showcase the very best<br />

produce from, well, the land.<br />

Leading culinary critic Jay Rayner - you know, the<br />

one who puts the MasterChef contestants through<br />

their paces - called Land’s offerings ‘vegan cooking to<br />

file under thrilling.’ Which boded well for a meatfree<br />

meal to write home about. In an age where<br />

wild mushroom risotto too often still represents the<br />

heights of vegetarian culinary excellence - and god<br />

help you if you’re vegan and want more than a plate<br />

of salad! - Land’s offerings could be classed as a<br />

veggie manna from heaven.<br />

So when <strong>J’AIME</strong> was invited over late last year to<br />

give plant-based a go, I was all for it. The hubby,<br />

a rather more carnivorous sort, was less enthused<br />

about seven courses of plants, but remained open to<br />

having his mind changed. So off we went.<br />

Overflowing with Victorian charm,<br />

Great Western Arcade is home to an<br />

array of small independent shops and<br />

boutiques, eateries and bars, making a<br />

lovely destination for an evening out in<br />

the heart of Birmingham, yet away from<br />

the hustle and bustle of the city centre.<br />

Land itself is an intimate, stylish affair<br />

with an open kitchen at the back where<br />

you can spy head chefs Adrian Luck and<br />

Tony Cridland working their magic.<br />

We arrived for an early Friday evening<br />

slot to find the restaurant already in full<br />

swing. The welcome was warm and the<br />

vibe relaxed as we were shown to our table<br />

- a prime window seat perfect for watching<br />

the world go by. Rather than paper, the<br />

menu was a QR code which zapped you<br />

straight to Land’s website - to ensure<br />

the best seasonality, the menu changes<br />

frequently so going paper-free is the sound<br />

environmental choice.<br />

If the menu is designed to take you on<br />

a culinary journey, the wine list, too,<br />

encourages diners to step out of their<br />

comfort zone, offering alternative grape<br />

selections for popular choices.<br />

The tasting menu started with a couple of<br />

delightful chef ’s snacks; a miniature feast<br />

of mushrooms snuggled in the crispest<br />

of pastry shells which packed a wonderfully earthy<br />

punch, and a delicate celeriac remoulade atop a<br />

seaweed cracker which was just divine.<br />

The standard was set, and what followed was course<br />

upon course of breathtaking deliciousness.<br />

A rice porridge fragrant with onion and thyme<br />

and adorned with beautifully iron-rich spinach<br />

was the perfect winter warmer; hearty, robust and<br />

deeply satisfying. A terrine of squash, wonderfully<br />

sweet, balanced with a fair whack of chilli and<br />

accompanied by sunflower seeds transformed into<br />

an indulgent cream with a liberal sprinkling of seeds<br />

adding a bit of crunch. Just delightful.<br />

And then there was the potato. Oh, how the<br />

humble potato was transformed. In a pool of dashi<br />

buttermilk broth with salty samphire and sweet, crisp<br />

green grapes, it was nothing short of majestic. I’d sail<br />

through Veganuary in a breeze fuelled by this dish<br />

alone. No word of a lie.<br />

The main course, so to speak, was a riff on a<br />

massaman curry, with silky aubergine ribbons,<br />

crunchy peanuts and an almost sculptural fried<br />

rice noodle adornment. Perfectly spiced, perfectly<br />

balanced.<br />

The final savoury affair arrived, and it was the turn<br />

of that British favourite, the carrot, to receive the<br />

five star treatment. Generous hunks of sweet roasted<br />

carrot perched on a slather of indulgent almond<br />

cream - nuts doing all the heavy lifting of a dairy<br />

addition nicely. A generous dressing of zhoug, the<br />

Middle Eastern cousin of Argentinian chimichurri<br />

packed fragrance and heat, while delicate charcoal<br />

crisps brought the umami goodness.<br />

Desserts of banana and coffee creams with sweetly<br />

tangy tamarind, and a beetroot cake with rich oat<br />

ice-cream and cherry, were delightful, as was the<br />

wonderful roast on the coffee for a perfect flat white.<br />

Jay Rayner called Land’s cooking ‘thrilling’ and I<br />

can only concur. It was a meal which surprised and<br />

delighted with every morsel, leaving huge question<br />

marks over what meat would actually bring to the<br />

table when plant-based cooking can be this good. It<br />

was, I’d go so far as to say, a strong contender for our<br />

best meal of 2022 - what a way to<br />

round out the year in style.<br />

And at just £45 a head for a<br />

seven-course tasting menu, it<br />

represents superb value for money;<br />

a superlative culinary experience for<br />

not much more than your average<br />

three courses of good pub grub.<br />

So if you’re inspired by Veganuary<br />

to go more plant-based in <strong>2023</strong>,<br />

then Land should be right at the<br />

top of your list. And if you’re a<br />

dedicated meat eater then get out of<br />

your comfort zone and go anyway;<br />

we guarantee you won’t regret it.<br />

Since opening his unique fine dining chef ’s table<br />

in Lichfield back in May 2021, Jack Dubberley<br />

has cemented his place as one of the city’s top<br />

foodie finds. Offering bespoke fine dining menus<br />

from his tiny space in a cabin at The Plant<br />

Plot garden centre, Jack’s not-a-restaurant -<br />

Dubberley Delicious - has earned rave reviews<br />

for its innovative approach to fine dining.<br />

Jack has begun <strong>2023</strong> with the exciting<br />

announcement that he is moving his eponymous<br />

chef ’s table experience into Lichfield city centre<br />

- with the new restaurant due to open in spring.<br />

The larger space, in the heart of Lichfield on<br />

Tamworth Street, will remain a private fine<br />

dining experience, but will allow Jack to cater for<br />

larger parties than his current maximum of ten.<br />

Key to Jack’s success has been his passion<br />

for produce, using only the finest in-season<br />

ingredients - including many he has foraged<br />

himself. Preserving foraged ingredients for yearround<br />

use is particularly important to Jack - with<br />

techniques including pickling, fermenting and<br />

turning produce into oils all ways in which Jack<br />

gets the most from his bounty.<br />

Jack says: “One of my favourite chefs Tommy Banks<br />

talks about ‘the hunger gap’, which is the difficult<br />

time early in the year when very little fresh produce<br />

can be harvested in the UK.<br />

“To get through this, as we go through the year and<br />

ingredients come into season we can make<br />

the most of them by preserving things for<br />

later use. It’s particularly useful when you get<br />

to this time of year and there’s not so much<br />

fresh, seasonal produce around.”<br />

The first big target in Jack’s foraging<br />

calendar is wild garlic, which usually comes<br />

into season in February - weather permitting.<br />

There are plenty of good garlic foraging<br />

spots around Lichfield, where the plant<br />

grows in abundance. One of Jack’s signature<br />

dishes is his wild garlic popcorn, which he<br />

serves year-round - meaning he needs to<br />

stock up and preserve as much wild garlic as<br />

he can when the time comes.<br />

wild garlic oil to last me the year,” says Jack. “I use it<br />

for popcorn mostly, but you can use it to dress a dish,<br />

to make a mayonnaise to go with langoustines, there<br />

are so many uses for it.<br />

“You can also ferment the leaves, which gives a really<br />

intense flavour. With wild garlic you also have the<br />

buds before the plant starts flowering, the flowers<br />

themselves which you can use as a fresh garnish,<br />

and then a few weeks after the flowers have died the<br />

garlic capers come out.<br />

“You have to be there at exactly the right time to get<br />

the capers though; and if it’s windy then you can<br />

find they’re all gone. The capers are great though;<br />

you have to salt them down for a couple of weeks<br />

because they’re really hard, just like normal capers,<br />

and then pickle them. They just explode with flavour,<br />

you can use them in a beautiful sauce for fish, or to<br />

add to a salad - they’re great if you really like garlic!”<br />

When it comes to pickling, Jack mostly prefers to<br />

use a neutral rice vinegar to let the flavour of the<br />

produce shine through.<br />

“For me, rice vinegar has the least amount of flavour<br />

to it; it’s not overpowering. If you use something like<br />

sherry vinegar it’s really tangy and can be too much.<br />

“I use rice vinegar for most of my preserving. A<br />

lot of chefs will have their own pickle recipes with<br />

combinations of vinegar and aromats but, for me, I<br />

feel it often masks the flavour of the ingredients.”<br />

In the land-locked Midlands, Jack says after wild<br />

garlic season is finished you should be on the lookout<br />

for elderflower and cherry blossom - both of which<br />

are perfect for making cordials. However, he says,<br />

you need to be careful when foraging elderflower as<br />

it has a near-identical appearance to a member of<br />

the nightshade family.<br />

“Elderflower grows everywhere but it has a similar<br />

appearance to a nightshade plant so you need to<br />

be careful; elderflower has an unmistakable scent<br />

though, so if you’re unsure just smell it!”<br />

While seasonal vegetables are thin on the ground<br />

at this time of year, Jack says that a couple of lesscommon<br />

root veggies are good to try right now.<br />

“Jerusalem artichokes are great to use now; they’re<br />

similar to a potato and are particularly great as a<br />

delicious puree - I featured a Jerusalem artichoke<br />

puree with some Jerusalem artichoke crisps on our<br />

New Year’s Eve menu. You can also just roast them<br />

whole, scoop out the flesh and cook it down with<br />

some shallots, onion, garlic, then dry out the skins<br />

and fill them back up like loaded skins. It’s really<br />

versatile.”<br />

Jack’s other top tip to try is kohlrabi, a member of<br />

the turnip family which works particularly well with<br />

white fish. The earthy flavour is brought out by using<br />

plenty of butter in the cooking process - one of Jack’s<br />

favourite ideas is to top and tail the kohlrabi and peel<br />

with a knife before roasting in a pan with plenty of<br />

butter then cooking slowly in a low oven until soft.<br />

HOW DO YOU BUILD AND MAINTAIN WEALTH<br />

IN TIMES OF RECESSION?<br />

The term ‘recession’ has been bandied about a lot over<br />

the last few months and I doubt that we have seen the end<br />

of it yet. It is a depressing term, but one that few really<br />

understand. Rather than go into the complexities of how<br />

a recession is measured by economists, suffice to say it<br />

is a downturn or shrinking of a country’s economy over<br />

a period of time, and the reality of it is – it’s happened<br />

before and it’s reasonable to assume it will happen again.<br />

KEEP CALM AND CARRY ON<br />

Therefore, it’s important to be prepared to deal with<br />

a downturn in our financial lives. So think about how<br />

to handle your short and long-term needs and, when<br />

necessary, don’t be afraid to seek expert advice.<br />

Market volatility can be unsettling, but is by no means<br />

unusual, so keep your longer-term goals in mind and don’t<br />

let it distract you away from them.<br />

While speaking to your adviser is always a good idea<br />

no matter what is going on in the wider world; during a<br />

recession it becomes even more important. Watching stock<br />

markets turn into rollercoasters can prompt some investors<br />

to make rash knee-jerk decisions that could cause serious<br />

damage to their long-term plans.<br />

Fundamentally, it’s important to think about time in the<br />

market, not timing the market.<br />

HOW CAN WE MANAGE THROUGH A<br />

RECESSION IN <strong>2023</strong>?<br />

There are actions you can take which may help smooth<br />

your journey.<br />

In a higher interest rate and higher inflation environment,<br />

consider reducing any debt you have if you can; especially<br />

if you have expensive credit card debt. You should also<br />

look at increasing your emergency savings to avoid<br />

you needing to access your ‘nest egg’ monies held in<br />

investments for any emergencies.<br />

If you have time on your side and money available to<br />

invest, then market volatility can be beneficial. Falling<br />

stock prices can be considered a buying opportunity. Fund<br />

managers are well aware of this and will seek to find the<br />

‘bargains’ on offer. Trying to time the very bottom of the<br />

market is rarely a good idea. It’s having your money in<br />

the market riding out any short term volatility that makes<br />

most sense.<br />

A way of potentially reducing risk is drip-feeding money<br />

regularly into the markets over time to benefit from<br />

‘pound-cost averaging’. This means that by investing the<br />

same amount each month into a fund or market, when<br />

prices are high you buy fewer units, but when prices are<br />

low you buy more. As markets recover, the assets held<br />

will average out, smoothing the volatility you would have<br />

suffered had you put all your investment into the market in<br />

one go.<br />

When reviewing investments with clients at times like<br />

these, I consider the most important actions to take are:<br />

• Review your portfolio to ensure your investments are<br />

well-placed to benefit from recovery. Then sit tight.<br />

• Do not expect things to turn around overnight. If you<br />

are lucky they just may do that, but history and common<br />

sense tell us that the greatest likelihood of success rests in<br />

being able to take the longer-term view and having the<br />

patience to do so.<br />

IN CONCLUSION<br />

After nearly 33 years of investing and advising clients<br />

on their investments, I have learned that whilst the song<br />

may say ‘The Only Way Is Up’ in reality this is not true<br />

for most investments on a day-to-day basis. However,<br />

accepting this fact, taking the longer term view and<br />

adopting a sensible approach should stand you in good<br />

stead to reap the rewards investing can offer.<br />

The value of an investment with St. James’s Place will be<br />

directly linked to the performance of the funds you select<br />

and the value can therefore go down as well as up. You<br />

may get back less than you invested.<br />

At least this trend is practical for the winter, as<br />

snow, sleet, and salted roads call for shoes that<br />

can stand up to the elements. While still looking<br />

stylish, of course.<br />

Biker and combat styles, too, are proving to be<br />

particularly on-trend this year - with amped-up<br />

soles, of course. So look out for the addition of<br />

straps and tough embellishments like studs. Wear<br />

with your everyday litany of jeans and leggings,<br />

or give pretty dresses a 90s grunge-era twist by<br />

One of the benefits of a healthy – and I stress,<br />

healthy – vegan diet is that it can be great for your<br />

skin because it encourages you to eat more fruits<br />

and vegetables. Because plant-based foods are rich<br />

in antioxidants and bioactive compounds – such as<br />

vitamin C, vitamin E and beta carotene – they lower<br />

inflammation, promote blood flow and boost the<br />

structural support of the skin.<br />

Meat can have a toxic effect on our complexion,<br />

especially when teamed with too much alcohol over<br />

Christmas and New Year. So giving it up – even for<br />

a couple of weeks – allows our bodies to detox in<br />

a healthy way. When we detox, changes take place<br />

in our skin: the jaw line becomes more defined as<br />

fluid is released; and the under-eye area becomes<br />

less swollen as the high salts in animal protein are no<br />

longer present to retain water.<br />

If you’re not ready to give up meat entirely, you<br />

can instead ditch diary, especially if you suffer<br />

from eczema or acne. There are many plant-based<br />

alternatives readily available and almond milk, for<br />

example, is naturally free of cholesterol, lactose<br />

and saturated fat, while being rich in calcium and<br />

essential vitamins A, D and E.<br />

ON THE DOWNSIDE …<br />

You do need to be aware of the negative impact<br />

when opting for such a restrictive diet. Simply<br />

replacing meat with carbohydrates, bingeing on<br />

sugary snacks or eating the same processed meals<br />

day in day out means you’ll miss out on healthy<br />

nutrients and protein. This can lead to breakouts and<br />

sensitivity issues; while a lack of iron and vitamin<br />

B12 can cause dark circles under eyes as well as<br />

brittle hair and nails.<br />
