for some sun in our lives! And hopefully the arrival<br />

And in this issue we’ve got a veritable feast for<br />
foodies as Lichfield chef Jack Dubberley talks us<br />
through the season’s best produce, Thyme Kitchen<br />
offer a fiesta of flavour with a Mexican-inspired<br />
recipe, and we take a look at one of Lichfield’s<br />
newest foodie hotspots.<br />
We take a look ahead at to one of the highlights of<br />
the Midlands entertainment calendar as Lichfield<br />
Festival’s stellar lineup gets set to bring the very best<br />

LICHFIELD’S FLAGSHIP 11-DAY MULTI-ARTS FESTIVAL RETURNS TO THE CITY THIS SUMMER<br />
WITH A STELLAR LINEUP OF WORLD-CLASS PERFORMERS FROM ACROSS THE ARTS<br />
Stars of classical, folk, world, jazz, cabaret<br />
and popular music, theatre, dance, and the<br />
written word, are set to converge on Lichfield<br />
as this summer’s Lichfield Festival takes ove3r<br />
the city from July 4 to 14..<br />
Headline acts in Lichfield Cathedral include<br />
multi-talented folk singer and Mercury Music<br />
Prize nominee Seth Lakeman and swashbuckling<br />
sea-shanty singers The Longest<br />
Johns along with the all-singing, all-plucking<br />
spectacle that is George Hinchcliffe’s Ukulele<br />
Orchestra of Great Britain. Elgar’s Cello<br />
Concerto is among the majestic concert<br />
classics from the BBC National Orchestra of<br />
Wales, and renowned Baroque violinist and<br />
Associate Artist Rachel Podger plays Vivaldi’s<br />
much-loved The Four Seasons to open the Festival.<br />
The Cathedral is also the backdrop for Ballet<br />
Cymru’s exquisite Romeo and Juliet, and is the<br />
atmospheric setting for a late-night concert by <strong>2024</strong><br />
RPS award-winning sitar player Jasdeep Singh<br />
Degun, and a magical candlelit concert by pianist<br />
and Associate Artist Danny Driver to close the<br />
Festival.<br />
There are more contributions from the Festival’s<br />
Associate Artists including five concerts by the<br />
Brodsky Quartet in which they play the complete<br />
Shostakovich Quartets, a brand-new comedy from<br />
Lichfield’s own award-winning story-teller Katie<br />
Arnstein, and cabaret shows with Jessica Walker and<br />

Also returning to the Festival is comedienne,<br />
songstress and one third of the iconic Fascinating<br />
Aida, Liza Pulman who teams up with Joe Stilgoe for<br />
A Couple of Swells. Charles Court Opera bring their<br />
latest Gilbert and Sullivan production, The Sorcerer,<br />
and wine-writer and broadcaster Oz Clarke reunites<br />
with Armonico Consort for a light-hearted look at<br />
music and wine.<br />
In Holst150 Lichfield Festival marks the 150th<br />
anniversary of the Cheltenham-born composer<br />
Gustav Holst with choral music by The Carice<br />
Singers, his tone poem Egdon Heath<br />
played by the BBC National Orchestra of<br />
Wales, and Holst arrangements from BBC<br />
Folk Musician of the Year Will Pound and<br />
percussionist Delia Stevens.<br />
Jazz nights include Jeremy Sassoon’s Ray<br />
Charles Project and Wendy Kirkland’s tribute<br />
to the music of Blossom Dearie. Joyful soul<br />
music comes from the 100-strong Lichfield<br />
Gospel Choir, while globally renowned<br />
qanun player Maya Youssef introduces<br />
Lichfield to the 78-stringed zither, and there’s<br />
folk from Jim Causley and Miranda Sykes<br />

History is a rich seam at this year’s Festival. Lesley<br />
Smith raids her wardrobe to present the story of<br />
Mary Queen of Scots in full Elizabethan costume,<br />
recorder quartet Palisander’s historical concert<br />
experience follows the wives of Henry VIII, and The<br />
Lord Chamberlain’s Men perform Shakespeare’s<br />
Hamlet in the open air, in period costume, with an<br />
all-male cast, just as it would have been in Elizabeth<br />
I’s day.<br />
Among literary events are historical writer and new<br />
Lichfield Festival patron Tracy Borman, forensic<br />
investigator Jo Ward, Einstein expert Samuel<br />
Graydon, and Philip Modiano who explores the<br />
Lichfield paintings of pre-Impressionist artist J L<br />
Petit.<br />
<strong>2024</strong> also sees the return of the popular Midlands<br />
Choir of the Year, the final taking place in the<br />
Cathedral.<br />
For younger audiences, Waterperry Opera returns<br />
with Peter and The Wolf, and music, art and drama<br />
projects on the theme of Vivaldi’s The Four Seasons<br />
take place with local schools for this year’s Aspire!<br />
community and participation programme.<br />
Making a show-stopping climax, the Festival<br />
Fireworks is free to all at Beacon Park on Friday, July<br />
12, in collaboration with Fuse and Lichfield Arts.<br />
The Festival is supported by Arts Council England,<br />
Lichfield District Council, its Major Festival Partners<br />
McArthurGlen West Midlands, Pegasus Homes and<br />
Roxane UK (Aqua Pura), and from its corporate<br />
and individual supporters, all of which enables the<br />
Festival to bring stellar artists and events to the city<br />

The Echoes of history<br />
AN IMMERSIVE THEATRE EXPERIENCE BROUGHT TOGETHER BY THE<br />
LICHFIELD COMMUNITY COMES TO LICHFIELD CATHEDRAL THIS MONTH<br />
Echoes is a community theatre performance<br />
that will see the audience taken on a journey<br />
through the ages with theatre, dance and<br />
music, which will be hosted by Lichfield<br />
Cathedral on May 11 and 12.<br />
The project, supported by the National<br />
Lottery Heritage Fund and Westhill<br />
Endowment, has brought together individuals<br />
and arts groups from across the local area. A<br />
core cast from the local community between<br />
the ages of 13 and 70-plus, have been devising<br />
a script and rehearsing since the start of the<br />
year.<br />
On a weekly basis the project has been<br />
supported by a small team of committed<br />
creatives including young producer Emily<br />
Lowe, BOA student Millie-May Terrington<br />
and director Emily Summers of Bostin’<br />
Creative.<br />
Emily Summers says: “Our talented cast<br />
applied to take part last year and since<br />
January have spent weeks researching and exploring<br />
the history of Lichfield Cathedral. Developing<br />
scenes, concepts, and characters in rehearsals at the<br />
Old Stables - close enough to hear the bells ring!”<br />
Using the magnificent Lichfield Cathedral as its<br />
backdrop, Echoes is a time machine performance,<br />
lasting roughly 60 minutes, that will see the audience<br />
walk through different spaces in the Cathedral and<br />
encounter tales from the past.<br />

Emily continues: “The audience will be taken on<br />
an intimate journey through time, and around<br />
the Cathedral. Coming face to face with Saints,<br />
Stonemasons, Victorians, Roundheads, Royalists,<br />
and more, with pop up performances from a number<br />
of community groups - but we don’t want to give too<br />
much away!<br />
“Echoes promises to be an immersive experience full<br />
of secrets, history, heart, and hope. We’re very proud<br />
of it. Don’t miss out!”<br />
Tickets for Echoes are free with a ‘pay what you can’<br />
message, but they are limited to 70 per performance<br />
on a first-come-first-served basis. Performances will<br />
take place on Saturday, May 11 at 7.30pm, and<br />
Sunday, May 12 at 5pm and 7.30pm.<br />
All performances will be BSL interpreted. Of the<br />
hour-long performance, approximately 40 minutes<br />
takes place on the move. All performance areas are<br />
wheelchair accessible and there will be clusters of<br />
accessible seating available in each performance<br />

HEART OF THE COUNTRY IS CELEBRATING<br />
ITS 40TH ANNIVERSARY<br />
Once a working farm, and the home of the Stubbs<br />
family for more than 40 years, Heart of the Country<br />
Shopping Village is an iconic shopping experience<br />
just two miles from Lichfield.<br />
If you haven’t visited yet, Heart Of The Country<br />
Village is a shopping village with a difference. It is<br />
a perfect day out, with clothing and gift and home<br />
decor shops, restaurants, a children’s soft play and<br />
luxury services including hairdressing, beauty and<br />
dog grooming.<br />
But what makes Heart of the Country special is that,<br />
although situated just outside the city, it is nestled in<br />
peaceful countryside, away from the hustle and bustle<br />
of big retail parks. Sheltered from the road by a<br />
thick hedge, and boasting a natural woodland where<br />
children can roam, the courtyards are full of trees,<br />
flowers and greenery.<br />
Back in 1984, Lesley Stubbs swept out the pig barn<br />
and opened her first shop selling eggs, honey and<br />
dried flowers. Lesley’s Canadian influence saw her<br />
introduce North American folk art to the shop,<br />

One shop became two with the addition of Paul<br />
Martyn Furniture, spearheaded by the visionary<br />
Paul, utilising an old tractor shed to renovate pine<br />
furniture. This was the beginning of the respectful<br />
conversion of the red brick barns into workshops,<br />
eateries and shops.<br />
Throughout, the Stubbs’ have been careful to protect<br />
the traditional features of the buildings, preserving<br />
the integrity of the traditional farm buildings such<br />
as the threshing barn and the red-brick stables.<br />
Today, Heart of the Country Village is a symbol<br />
of lasting success and home to a variety of long<br />
standing businesses. Run by the sons of Lesley and<br />
Simon Stubbs and their wives, it offers unique items,<br />
skilled craftsmanship, and friendly service.<br />
A recent addition is the development of the Village<br />
woodland, a natural sanctuary complete with fairy<br />
doors and two friendly pigs. This green space<br />
welcomes visitors of all ages, including well-behaved<br />
dogs, to enjoy time in nature.<br />
Throughout the year, the Village hosts a variety<br />
of special events, such as the Step into Spring<br />
celebration in March and the Scarecrow Festival in<br />
October. These events embody the Village’s spirit of<br />
joy, creativity, and togetherness, drawing visitors from<br />

To mark its 40th anniversary, Heart of the<br />
Country Village will be hosting a Big Birthday<br />
Party on Saturday, June 8, from 10am to 5pm<br />

Landlord Q&A<br />
At Jayman, we have a very busy lettings department dealing with landlords with one<br />
property, to those with excess of 30 buy to lets across the country. We frequently<br />
receive questions regarding what a landlord can and can’t do and have listed below<br />
some of the most frequently asked questions regarding buy to let properties.<br />
Can I increase the rent the tenant is paying?<br />
If the tenancy is within a fixed term period, you can only increase the rent if both parties agree. This is<br />
unlikely as the tenant is contracted to pay the rent as stated in the tenancy agreement until the end of the<br />
tenancy. It may be that you could negotiate a renewal agreement at the increased rent for a longer period<br />
of time that is remaining on the initial term to give the tenant assurance that the rent would not increase<br />
again within the next fixed period.<br />
If the tenancy is on a periodic tenancy after the expiry of the fixed term, you can serve notice to increase<br />
the rent. The minimum period for a rent increase is 1 month.<br />
How much notice do I need to give my tenant if I want to sell my property?<br />
If the tenant is in a fixed term tenancy, unless they agree to leave early, you cannot make them leave<br />
earlier than the end date of the tenancy. You must serve two months notice to end on the last day of the<br />
fixed tenancy to get the property back.<br />
If the tenancy is on a periodic tenancy, you can serve two months notice at any time. The end date must be<br />
in line with the rent payment date. Ie if the tenancy started on the 12th, you should serve notice from the<br />
12th to end on the 11th of the following month.<br />
Can I sell the property with the tenant still in?<br />
Yes. Although be advised that this limits the pool of buyers to buy to let landlords only as purchasers<br />
seeking to buy a property to live it in themselves will want assurances that the property will be empty at<br />
the planned point of completion. Another factor to bear in mind is that investor purchasers are looking for<br />
the most competitive price on an investment property whereas a owner occupier purchaser is looking for<br />
a “home” and often will pay more for the property.<br />
If there is any issue with the tenant moving out, this may mean the sale falls<br />
through. It is advisable to at least have served notice on the tenant before you<br />
start marketing the property for sale.<br />

have in common? They are all bee enthusiasts.<br />
But why are bees the bee’s knees?<br />
Bees are essential for the health of people and the<br />
planet. Honey and other products have medicinal<br />
properties, and the role of bees as pollinators makes<br />
them vital for food supplies. They pollinate 75<br />
percent of our food crops - estimates suggest it would<br />
cost UK farmers an incredible £1.8 billion a year to<br />
manually replicate their work.<br />
We all know the toll being taken on bees across the<br />
board – habitat loss, pesticide use, air pollution,<br />
changes in farming practices, a huge reduction in<br />
wildflower meadows, disease, climate change and<br />
invasive species are all contributing to the decline of<br />
both wild and honeybees.<br />
Did you know there are 1.6 billion bees in the UK,<br />
with up to 30 million in Birmingham alone. But<br />
how can you play your part? It’s so easy to feel<br />
overwhelmed in the face of multiple threats to both<br />
wild and honeybees, but there are many things we<br />
can do to help.<br />
Mowing the lawn less often to allow ‘weed’ flowers,<br />
avoiding pesticide use, providing water as well as<br />
nest sites in messy corners and bee boxes, planting<br />
trees and shrubs that bloom throughout the growing<br />
season and sowing bee-friendly seeds with the open,<br />
nectar rich flowers so crucial to supporting our<br />
pollinators – all these actions add up. Research has<br />
shown that home gardens in cities and towns are<br />
the biggest source of food for pollinating insects,<br />
providing around 85 per cent of the nectar produced<br />
in urban areas.<br />
Birmingham-based Brumblebee Seeds specialise in<br />

A MULTI-MILLION POUND REFURBISHMENT HAS BROUGHT A CITY<br />
CENTRE PUB BACK TO LIFE TO CREATE A WELCOME ADDITION TO THE<br />
LICHFIELD DINING SCENE, AS AMY NORBURY DISCOVERS<br />
In a city renowned for its foodie offerings,<br />
new openings in Lichfield are always<br />
bound to cause a bit of a stir. It’s a<br />
competitive market, so any new pretender<br />
has a lot to live up to if it wants to stand<br />
out from the crowd and make a name for<br />
itself.<br />
And that’s exactly what The Quill and<br />
Scholar is trying to do.<br />
The multi-million pound refurbishment<br />
of what once was The Crown in the heart<br />
of the city has been big news among the<br />
foodie faithful. The sizable venue has been<br />
taken over by award-winning pub company<br />
Heartwood Inns, which specialises in<br />
creating stylishly cosy venues which take pride of<br />
place at the centre of their communities.<br />
And The Quill and Scholar certainly delivers style in<br />
spades. The warm and welcoming bar offers plenty<br />
of space in which to enjoy drinks and bar snacks,<br />
while the stunning dining room is large enough to<br />
accommodate a whopping 122 guests. A gorgeous<br />
heated terrace to the rear of the pub is sure to be a<br />
popular spot when summer hits.<br />
The pub has been infused with Heartwood’s<br />
signature quirky style with design touches including<br />
a wood-burning fire, cosy snugs and House of<br />
Hackney fabric-covered banquettes. A large skylight<br />
to the rear of the pub has transformed this area into<br />
a light-filled garden room.<br />
The transformation is, indeed, impressive, and makes<br />
a real statement of intent. The name, too, a nod to<br />
the city’s history of academia, paying homage to<br />
famous sons including Samuel Johnson and Erasmus<br />
Darwin.<br />
With top marks for the setting, the question was<br />
whether the food could live up the surroundings.<br />
And ahead of the official opening, team <strong>J’AIME</strong> was<br />
invited along to discover for ourselves.<br />
We opted to enjoy a drink in the spacious bar before<br />
dinner and enjoy the warmth from the roaring fire -<br />
a most welcome reprieve from the unseasonal chills.<br />
The Quill and Scholar offers an impressive variety of<br />
aperitifs, spritzes, cocktails and signature gin serves,<br />
as well as bar snacks including popcorn, chorizo bites<br />
and rustica olives.<br />
We opted for a couple of spritzes - a rose petal spritz<br />
and a citrus version - both of which were perfectly<br />

efreshing, the citrus one in particular a perfect<br />
summer tipple.<br />
General manager Stuart Kennedy popped over<br />
to introduce us to the Heartwood Inns concept.<br />
Formerly manager at Swinfen Hall, Stuart is no<br />
stranger to the Lichfield dining scene, and was<br />
on hand all evening to ensure service standards<br />
remained impeccable throughout.<br />
Drinks done and table ready, we were shown through<br />
to the dining room, which was a hive of activity,<br />
packed with handpicked guests invited to put the<br />
kitchen and front-of-house teams through their<br />
paces.<br />
Ours was one of the cosy banquettes, perfect for an<br />
intimate evening of fine wine and good food.<br />
The menu offers elevated pub dining, where<br />
traditional classics such as pies, burgers and fish<br />
and chips sit alongside more premium fayre such as<br />
slow cooked duck and dressed crab, meaning there’s<br />
something to suit most palates.<br />
To start, I opted for that retro classic, the prawn<br />
cocktail - although The Quill and Scholar’s version<br />
mixes prawns and crayfish, with the option to add<br />
king prawn too. And who am I to say no to king<br />
prawn? Bound in a zesty lime mayonnaise and with<br />
the addition of avocado, it was a satisfying start<br />
to the meal - the enormous king prawn topper a<br />
particular delight.<br />
My husband chose the Morteau sausage salad with<br />
Burford Brown egg and a zingy Dijon mustard<br />
dressing, and was equally impressed.<br />
Onto the main event and we were spoilt for choice.<br />
The menu presents a hearty array of delicioussounding<br />
options including several mouth-watering<br />
fish and seafood options which I was sorely tempted<br />
by. But the lure of what is proving to be a Quill<br />
and Scholar signature was too strong. The slowcooked<br />
duck leg with dauphinoise potatoes poached,<br />
blackberries and blackberry sauce was a delectable<br />
plateful. The duck was beautifully pink and meltingly<br />
tender, with the sweet-sharp sauce cutting through<br />
the richness of the potatoes.<br />
My husband’s rump steak was also cooked to a<br />
perfect rare, with a seared crust adding a deep<br />
chargrilled flavour. A mound of crisp chips and a<br />
luscious roquefort sauce completed a satisfying meal.<br />
The portions, while not overwhelming, were certainly<br />
ample. But there’s always room for a sweet treat -<br />
and again, The Quill and Scholar delivered. My<br />
black cherry and chocolate mousse was decadent,<br />
a classic combination which never fails to please.<br />
But the standout was my husband’s<br />
pistachio souffle - a behemoth of a<br />
pud yet so light and airy, it was the<br />
perfect note to end on.<br />
It was back to the cocktail menu<br />
for a couple of after-dinner drinks<br />
- a salted caramel espresso martini<br />
for me and a Woodford Reserve<br />
old fashioned for him. Both were<br />
excellent serves and finished off a<br />
lovely meal in style.<br />
The Quill and Scholar is a welcome<br />
addition to the Lichfield dining<br />
scene, and is sure to appeal to a<br />
discerning clientele who prioritise<br />
quality, seasonality and style.<br />

As we head into the warmer months, great<br />
British staples are entering peak season.<br />
Meals are getting lighter, and salads<br />
are coming into their own - and where<br />
would a salad be without the humble<br />
tomato? Originating in Central and South<br />
America, tomatoes only arrived in Europe<br />
in the 16th Century, and it wasn’t until the<br />
1700s that they started being widely eaten<br />
in the UK. But today we eat tomatoes on<br />
a weekly, or even daily, basis and any of us<br />
even grow our own.<br />
The maritime air and sunny microclimate<br />
which enjoys more hours of sunshine than<br />
anywhere else in the UK means the Isle<br />
of Wight is the ideal spot for growing the tastiest<br />
tomatoes - and Isle of Wight tomatoes are the top<br />
choice for many chefs.<br />

“Isle of Wight tomatoes are some of the best<br />
around,” says Jack. “They’re heritage varieties so<br />
they’re more flavourful, more savoury and almost<br />
meaty in texture. And because they’re from the UK,<br />
rather than being imported, they reach us in the best<br />
possible condition. We’ve actually already had our<br />
first batch in and they were incredibly ripe and full<br />
of flavour. Just serve them sliced and sprinkled with<br />
salt - delicious!”<br />
One of Jack’s signature dishes is sweet and sour<br />
tomatoes, which will star on the menu from now until<br />
the end of season in September. Taking tomatoes at<br />
their peak and preserving them in a vinegar-based<br />
liquor makes the most of this humble fruit, and<br />
Jack’s pairing with smoked ricotta, parsley emulsion<br />
and puffed pearl barley has proved a hit with diners.<br />
And here in the Midlands we have some incredible<br />
places where you can get the best strawberries<br />
around - and even pick your own.<br />
“New Farm in Lichfield is fantastic, as is Manor<br />
Farm,” says Jack. “From mid-May onwards, British<br />
strawberries will be at their peak - but make sure<br />
your strawberries are fully red, if there’s any white<br />
around the tops avoid as they’re not quite ready.”<br />
When it comes to making the most of your<br />
strawberries, Jack suggests keeping it simple.<br />
“The best way to serve strawberries is just with<br />

nothing better, especially when you get the best<br />
British strawberries at the height of the season.<br />
“I also love vac-packing strawberries in Minus 8<br />
vinegar, which takes them to another level and adds<br />
a different dimension to your favourite fruit.”<br />
As champions of the best of British produce,<br />
Dubberley Delicious have announced a new<br />
partnership with a local English winemaker. Astley<br />
Vineyard is a family run, single estate vineyard in<br />
Worcestershire and home to some of the oldest vines<br />
in the country.<br />
“They make small batches of wines, and they make<br />
whatever’s good that particular year, so the varieties<br />
change,” says Jack. “Their most populous grape is<br />
the kerner, which was planted in 1971, and makes<br />
some beautiful wines including their Brigid, which<br />
is a sweeter wine, almost like a dessert wine, but not<br />
quite, which was a personal favourite.<br />
“They also make a piquette, which is sort of a cross<br />
between a cask ale, craft cider and a wine spritzer<br />

COMING INTO SEASON<br />
and is made using the grape skins. It’s what grape<br />
pickers would traditionally drink while harvesting,<br />
because it’s refreshing and lower in alcohol.<br />
“Astley produces three types, and we’ve got their<br />
blackberry version, which is a really delicious,<br />
really different drink. It’s great to be able to offer<br />
something a bit out of the ordinary, and hopefully<br />
people will be interested to try it.”<br />
Sweet and sour<br />
tomatoes<br />
Ingredients:<br />
For the liquor:<br />
100g sherry vinegar<br />
250g honey - ideally local<br />
2 cloves of garlic, peeled and cracked to release the<br />
flavour<br />
Sprigs of thyme<br />
Selection of baby tomatoes of your choice<br />
JACK’S SIGNATURE<br />
SWEET AND SOUR<br />
TOMATOES<br />
Pierce the top and bottom of each tomato and put in a pan<br />
of boiling salted water for around 15 to 30 seconds until<br />
you see the skin start to peel back. Refresh in ice water<br />
and leave until completely cold.<br />
Bring your liquor ingredients to the boil then pour over<br />
your cold tomatoes and leave to steep for at least 24 hours<br />
before eating. Your tomatoes will keep in the fridge for<br />
several weeks so make a batch and use throughout the<br />
season. For a vegan version, replace the honey with maple<br />
syrup or agave syrup.<br />
Use in salads, or pair with a cheese like ricotta, burrata or<br />
mozzarella and a drizzle of balsamic vinegar, and serve with<br />
a light, crisp rosé for an elegant lunch or light supper.<br />

where each guest can craft their own tostada. Get<br />
ready to savour the flavours of Mexico right in your<br />
own home!<br />
Prawn Tostadas<br />
- Serves four<br />
Ingredients:<br />
300g prawns, cooked<br />
1 cucumber<br />
1 red onion<br />
1 each red and green chili<br />
1 avocado<br />
2 large tomatoes<br />
Juice of 1 lime<br />
Salt to season<br />
1 tsp paprika<br />
1 tsp cumin<br />
1 small bunch coriander<br />
4 small tortilla wraps<br />
Optional sour cream<br />
Oil for cooking<br />
For the salsa:<br />
4-6 medium tomatoes peeled and finely<br />
chopped or use small can of drained<br />
chopped tomatoes<br />
1/2 red onion, very finely chopped<br />
1 small garlic clove, finely chopped<br />
small splash of white wine vinegar<br />
1/2 lime, juiced<br />
1/2 bunch of coriander, roughly chopped<br />
Method:<br />
In a frying pan, add 100ml of cooking oil,<br />
ensuring the base of your pan is covered.<br />
Bring up to a high heat and fry off the tortilla<br />
until golden brown, making sure to flip for<br />
even colour (approx 30-45 seconds per side).<br />
Remove from the pan and leave to cool on<br />
kitchen roll to soak up any excess oil.<br />
Dice the onion, chilli and tomato and add to<br />
the bowl with the cooked prawns. Add the<br />
paprika, cumin and lime juice and mix well<br />
before roughly chopping the coriander and<br />
adding to the mix. Season the mix with salt to<br />
taste.<br />
In a separate bowl, add the avocado and a<br />
pinch of salt, mash until chunky.<br />
Now for your really simple salsa. Combine<br />
the tomatoes, red onion, garlic, white wine<br />
vinegar, lime juice and coriander in a bowl,<br />
giving it a really good stir to mix. You can<br />
make this ahead of serving your tostadas and<br />
keep refrigerated until you are ready to serve.<br />
Build your prawn tostada by spooning the<br />
prawn mixture onto your tortilla and add the<br />
avocado. Serve with salsa and optional sour<br />
cream.<br />

GETTING YOUR HOUSE IN ORDER<br />
This month we focus on financial protection. The risk of<br />
losing family members who provide financially for family<br />
members/dependents in the sense of death or illness<br />
can be highly catastrophic. This isn’t just an emotional<br />
consideration but a financial one too.<br />
The same can be said for businesses who lose key people,<br />
directors or shareholders in the same way. This, too, can<br />
be financially damaging and hugely problematic legally<br />
causing huge stress and cost at the most difficult of times.<br />
I explore some key aspects to consider on these topics and<br />
how to attempt to establish a plan/plans to ensure that<br />
you are protected from these risks.<br />
WHAT ARE THE MAIN RISKS OF LOSING A KEY<br />
FINANCIAL CONTRIBUTOR?<br />
I think it is safe to say that we all insure our car, our home<br />
and our holidays against various risks. What we probably<br />
don’t fully consider is protecting the breadwinners who<br />
provide a source of income to cover living costs and<br />
ensure any debts can be repaid.<br />
If you have dependents and liabilities such as mortgages<br />
or other debts, the question is how would these costs be<br />
covered in the absence of a key financial contributor to<br />
the household either through illness or death?<br />
Start by working out what cover you have in savings or<br />
insurance policies and how long these would last. Is it<br />
enough? One other thing to consider is the suitability for<br />
your needs. Do they cover what is required for as long as is<br />
required?<br />
You may wish to explore ‘Income Protection’. This<br />
provides income for a time and to a certain extent where<br />
someone is unable to work due to illness or injury.<br />
‘Life and Serious Illness insurance’ can provide a costeffective<br />
way of protecting the family and cover any<br />
liabilities, medical expenses and other living costs. It is<br />
important to ensure that the level of cover and term are<br />
suitable and also to consider using trusts to protect your<br />
estate from inheritance tax (more on this later).<br />
‘Private Medical Insurance’ and ‘Health Care plans’,<br />
can provide cover for medical, dental, optician and other<br />
expenses for all of the family. All of which can allow the<br />
consistent financial functioning of the family unit to be<br />
maintained when needed.<br />
It makes sense to review this regularly and ensure that you<br />
have the financial protection that meets your needs and<br />
seeking advice to review the market for the best solutions<br />
is key.<br />
BUSINESSES – WHAT ARE THE RISKS<br />
Losing key people who contribute to the business<br />
financially should NOT be underestimated. Replacing<br />
profitability is essential to protect the business and its<br />
obligations – debts, employees etc…..<br />
Furthermore shareholders should establish an appropriate<br />
agreement on what happens to their shares in the event<br />
of death or suffering a serious illness. That would involve<br />
a suitable agreement, though care should be taken on the<br />
tax consequences of any agreement as there are a number<br />
of options.<br />
Both may involve establishing appropriate insurance<br />
to facilitate the best outcome and advice here is<br />
ESSENTIAL.<br />
TO SUMMARISE<br />
Assessing what your needs are both individually and<br />
as a business are key. Taking professional advice is very<br />
important too. The net effect of having assets, including<br />
life/health insurance, can substantially add to the value<br />
of your estate and the way that is treated for inheritance<br />
tax varies accordingly. Having understanding of this and<br />
appropriate arrangements will affect what passes to your<br />
next of kin. Inheritance tax is chargeable at 40% above<br />
the band thresholds that you qualify for at the time of<br />
assessment.<br />
The value of an investment with St. James’s Place will be<br />
