A guide to <strong>the</strong> Scotch whisky regions<br />
Like wines, <strong>the</strong> single malts of Scotland are grouped by region although <strong>the</strong>se regions<br />
offer a guideline ra<strong>the</strong>r than a rule. The regions of Scotland – <strong>the</strong> Lowlands, <strong>the</strong><br />
Highlands, Campbeltown and <strong>the</strong> island of Islay – have <strong>the</strong>ir origins in <strong>the</strong> regulation<br />
of licences and duties, but <strong>the</strong>y do also embrace certain characteristics.<br />
The Lowlands<br />
This area tends to produce softer malts, without <strong>the</strong> peat of <strong>the</strong> Highlands or <strong>the</strong><br />
brininess of <strong>the</strong> coastal malts. The Lowlands is defined by a line following old county<br />
boundaries and running from <strong>the</strong> Clyde estuary to <strong>the</strong> River Tay. The line swings<br />
north of Glasgow and Dumbarton and runs to Dundee and Perth.<br />
The Highlands, Islands and Speyside<br />
By far <strong>the</strong> largest region, <strong>the</strong> Highlands embraces wide variations in style. The<br />
western Highlands has only a few scattered distilleries, and it is difficult to generalise<br />
about <strong>the</strong>ir character. If <strong>the</strong>y have anything in common, it is a rounded, firm, dry<br />
character, with some peatiness. The far north of <strong>the</strong> Highlands has several whiskies<br />
with a notably hea<strong>the</strong>ry, spicy, character, probably deriving both from <strong>the</strong> local soil<br />
and <strong>the</strong> coastal location of <strong>the</strong> distilleries. The more sheltered East Highlands and <strong>the</strong><br />
Midlands of Scotland (sometimes described as <strong>the</strong> South Highlands) have a number of<br />
notably fruity whiskies.<br />
None of <strong>the</strong>se Highland areas is officially regarded as a region, but <strong>the</strong> area between<br />
<strong>the</strong>m, known as Speyside, is universally acknowledged as <strong>the</strong> heartland of malt<br />
distillation. This area, between <strong>the</strong> cities of Inverness and Aberdeen, sweeps from<br />
granite mountains down to fertile countryside, where barley is among <strong>the</strong> crops. It is<br />
<strong>the</strong> watershed of a system of rivers, <strong>the</strong> principal among which is <strong>the</strong> Spey. Although<br />
it is not precisely defined, Speyside is commonly agreed to extend at least from <strong>the</strong><br />
River Findhorn in <strong>the</strong> west to <strong>the</strong> Deveron in <strong>the</strong> east. Within this region are several<br />
o<strong>the</strong>r rivers, notably <strong>the</strong> Livet.<br />
The Speyside single malts are noted in general for <strong>the</strong>ir elegance and complexity, and<br />
often a refined smokiness. Beyond that, <strong>the</strong>y have two extremes: <strong>the</strong> big, sherryish<br />
type, as typified by The Macallan, Glenfarclas and Aberlour; and <strong>the</strong> lighter, more<br />
subtle style. Within Speyside, <strong>the</strong> River Livet is so famous that its name is borrowed<br />
by some whiskies from far beyond its glen.<br />

Only one may call itself The Glenlivet, only Braes of Glenlivet and Tamnavulin are<br />
produced in <strong>the</strong> valley, and only Tomintoul in <strong>the</strong> parish. These are all delicate malts,<br />
and it could be more tentatively argued that o<strong>the</strong>r valleys have malts that share<br />
certain characteristics. The Highland region includes a good few coastal and island<br />
malts, but one peninsula and just one island have been of such historical importance<br />
in <strong>the</strong> industry that <strong>the</strong>y are each regarded as being regions in <strong>the</strong>ir own right.<br />
Campbeltown<br />
On <strong>the</strong> peninsula called <strong>the</strong> Mull of Kintyre, on <strong>the</strong> west coast of Scotland,<br />
Campbeltown once had about 30 distilleries. Today, it has only two. One of <strong>the</strong>se,<br />
Springbank, produces two different single malts. This apparent contradiction is<br />
achieved by <strong>the</strong> use of a lightly peated malt in one and a smokier kilning in <strong>the</strong> o<strong>the</strong>r.<br />
The Campbeltown single malts are very distinctive, with a briny character. Although<br />
<strong>the</strong>re are only three of <strong>the</strong>m, <strong>the</strong>y are still considered by serious malt lovers to<br />
represent a region in <strong>the</strong>ir own right.<br />
Islay<br />
Pronounced "eye-luh", this is <strong>the</strong> greatest of whisky islands: much of it deep with peat,<br />
lashed by <strong>the</strong> wind, rain and sea in <strong>the</strong> Inner Hebrides. It is only 25 miles long, but<br />
has no fewer than eight distilleries, although not all are working. Its single malts are<br />
noted for <strong>the</strong>ir seaweedy, iodine-like, phenolic character. A dash of Islay malt gives<br />
<strong>the</strong> unmistakable tang of Scotland to many blended whiskies.<br />
Tasting notes<br />
We have included a brief tasting note for each of <strong>the</strong> many single malt whiskies on our<br />
list which we hope will prove useful to both novice and seasoned drinkers. By <strong>the</strong>ir<br />
nature, tasting notes are always subjective and so you may not agree with what we<br />
say! We are indebted to <strong>the</strong> many different sources who have provided <strong>the</strong>se notes,<br />

whisky enthusiast. We are lacking a few notes – so all submissions are welcome.<br />

Sou<strong>the</strong>rn Highlands, bottled by Gordon & MacPhail<br />
On <strong>the</strong> nose we find orange zest, incense and a touch of sherry. The palate is oily, with<br />
clean fruitiness and very lively, fresh flavours. The finish is like biting into a kumquat;<br />
<strong>the</strong>n a long, fruity glow.<br />
632 Aberlour “a’bunadh”<br />

A wide spectrum of saturated shades of sherry and a very fruity nose. A big, sweet<br />
and woody cask strength malt with lots of oak in <strong>the</strong> finish. Softer and sweeter when<br />
diluted.<br />

Nutty, with nutmeg and a hint of cinnamon. Although peated it is very brandy-like<br />
and warming. Not overly challenging but quite satisfying, particularly with dessert.<br />

Complex and sophisticated – a perfect balance of sherry and <strong>the</strong> malty, spicy, house<br />
character. The two elements are tightly combined, with <strong>the</strong> spicy flavours emerging<br />
slowly: nutmeg, aniseed and emphatic orange-flower. Long, soothing, with a minty and<br />
spicy finish.<br />
635 Ardbeg 10yrs<br />

The nose is amazingly smoky with a whiff of tar-covered rope. The palate is robust<br />
with more peat smoke and <strong>the</strong> flavours of turf and Lapsang Souchong. A long finish<br />
with a fragrant peaty reek. Whilst flavour-packed this is still a delicate scotch.<br />

Pronounced 'Oog-a-dal'<br />
A fine drop of Ardbeg bottled at cask strength.<br />
A marriage of Ardbeg from bourbon barrel and sherry butt which gives a sweet and<br />
smokey finish to this malt.Uigeadail is <strong>the</strong> loch from which all Ardbeg water flows.<br />
This 'huge' dram is, in <strong>the</strong> best traditions of Arbeg, intense.<br />
622 Ardbeg Airigh Nam Beist bottled 1990<br />

There is a dark place on Islay, high above <strong>the</strong> Ardbeg Distillery, called Airigh Nam<br />
Beist (pronounced'arry-nam-bayst') which in Gaelic means 'shelter of <strong>the</strong> beast'.. It is<br />
made up entirely of stock from 1990 distillate. Due to its greater age, it has a softer,<br />
more rounded flavour than <strong>the</strong> Ardbeg 10 year old . It shows a creamy, smoky flavour<br />
with hints of fennel and pine nuts. Aged in ex-bourbon oak barrels.<br />
660 Ardbeg ‘Lord of <strong>the</strong> Isles’<br />

A deep smoky yet balanced aroma with powerful peat and a sweet mouth feel. The<br />
palate is silky with <strong>the</strong> a of fruitiness, usually reminiscent of lemons, with a<br />
momentary suggestion of cherries. The flavours become almondy and walnut-like, <strong>the</strong>n<br />
rooty and peppery. A long dry finish with chocolate malt and crushed peat.<br />

836 Ardberg Single cask<br />

Of <strong>the</strong> many 72 cask Ardberg has released this is one of <strong>the</strong> finest .Bottled from a<br />
single re fill for Italy in 2003 , over half <strong>the</strong> cask were returned to <strong>the</strong> distillery due to<br />
legal issues after <strong>the</strong> sale of Glenmorangie in 2004. At <strong>the</strong> distillery almost all <strong>the</strong><br />
remaining bottles were used in tasting and such research. this remains, as a result one<br />
of <strong>the</strong> rarest of all Ardberg bottling. The whisky itself is quite simply stunning <strong>the</strong> nose<br />
is rich with layers of dense oily phenols, tropical and green fruits, with an unusual<br />
distinctive medical streak running through it. On <strong>the</strong> palate <strong>the</strong> ancient peated malt<br />
detonates and after 31 years still come through clean and balanced. The familiar<br />
Ardberg harmony is here in spades, floral, citrus character on <strong>the</strong> finish and immense<br />
simmering, sinewy creosols and tar all over <strong>the</strong> mid palate .<strong>the</strong> medicinal aspect is now<br />
concentrated iodine .An amazing Ardberg and a stunning drink that totally challenges<br />
and beguiles <strong>the</strong> senses.<br />
708 Auchentoshan 10yrs<br />

Auchentoshan is Gaelic for “corner of <strong>the</strong> field”. The nose is scenty with lemon grass<br />
and vanilla. The palate is light, soft, oily, marshmallow-like. Good flavour<br />
development. Rounded finish.<br />

Sweet, butterscotch with prunes and custard. Jaffa cake and apricots with Christmas<br />
cake and roasted almonds. The Three Wood expression is matured in three different<br />
casks – American bourbon wood, Spanish oloroso sherry <strong>the</strong>n finished in Pedro<br />
Ximenez casks.<br />

Rich and malty on <strong>the</strong> nose, with characteristically insinuating notes of spice, dried<br />
fruits, vanilla and honey. Becoming increasingly floral, with soft toffee and a hint of<br />
sweet Sherry as it warms in <strong>the</strong> glass.Full-bodied on <strong>the</strong> palate, yet with classic<br />
Balvenie smoothness and grace. Vanilla, honey, Sherried cinnamon, nutmeg and a<br />
whiff of smoke merge beautifully. The finish is long with spicy oak. A great whisky.<br />

The sherry aroma is fantastic, toge<strong>the</strong>r with almonds and mature oak. The peaty notes<br />

dominate. Hints of <strong>the</strong> sea drift in given a little time in <strong>the</strong> glass. Soft over ripe dark<br />
grapes flood <strong>the</strong> palate like an incoming tide. It’s rich, but not over <strong>the</strong> top, due to <strong>the</strong><br />
wonderful hea<strong>the</strong>r fire smoky flavour you will find on <strong>the</strong> back palate. A warm<br />
chocolate sweetness runs throughout.<br />

Apricots, honeydew melon and lychee followed by <strong>the</strong> Claret’s zesty sweetness, <strong>the</strong>n its<br />
salty sea breezes and peat fires with grace notes of lemon zest, marzipan, warm vanilla<br />
and candy floss. A very complex and compelling range of aromas. Immediately <strong>the</strong><br />
Claret flavours arrive, just ahead of <strong>the</strong> peaty, smouldering warmth of <strong>the</strong> Islays, wave<br />
after wave of flavours: dark chocolate, liquorice and black bun. Hints of peach,<br />
tangerine, jaffa cake and Caribbean brown sugar flirt in given time.<br />

Initially it’s <strong>the</strong> sea spray, <strong>the</strong> wet seaweed, citrus, damp wool, peat fire smoke and<br />
charcoal embers. Then <strong>the</strong> port imparts its aromas; red currant, black plums, dried<br />
prune, bittersweet chocolate, violets and flowering currant. (At this strength, you<br />
require a little water to release <strong>the</strong> aromas – be careful not to over water, just a few<br />
drops at a time until you are satisfied with <strong>the</strong> nose). Fairly robust on <strong>the</strong> palate with<br />
sweet flavours of grapes, plums and fig rolls with an underlying blackcurrant–citrus<br />
quality all being imparted from <strong>the</strong> superb port casks.<br />
631 Bowmore 18yrs<br />

From <strong>the</strong> oldest distillery on Islay, <strong>the</strong> nose of <strong>the</strong> 18 year old has autumn leaves on a<br />
damp woodland floor with hea<strong>the</strong>r, wood smoke, and waxy apple peelings, with a citrus<br />
fruitiness. On <strong>the</strong> palate <strong>the</strong>re is a lot more evidence of <strong>the</strong> large number sherry casks<br />
used at Bowmore. Intensely floral with more citrus and chocolate. A complex whisky<br />
that changes and develops in <strong>the</strong> glass, very much a whisky that rewards time and<br />
patience.<br />
657 Bowmore 25yrs<br />

Full and round, with a gentle softness, <strong>the</strong> nose has a strong herb-like fragrance overlying<br />
<strong>the</strong> sherry and peat notes. The palate has plenty of sherry, but surely as night<br />
follows day, you will find <strong>the</strong> oak, <strong>the</strong> smoke, <strong>the</strong> brine, <strong>the</strong> ozone, ending with toffee<br />
and hazelnut. The finish is mellow, gentle and warming. Try in front of a peat fire<br />
with a Gale Force 8 raging outside.<br />
658 Bowmore 1957<br />

Full bodied with a well-balanced soft rounded texture showing lots of personality and<br />
character gained from “<strong>the</strong> big sleep” on Islay. All <strong>the</strong> classic notes from a first filled ex<br />
bourbon cask, which probably started its journey about 1950 in Kentucky, are to be<br />
found. Pine, cedar, candied-almonds, oak, vanilla, candied pear, tropical fruit and<br />
bubblegum. Add to that <strong>the</strong> tide going out sandy sea aroma, just a trace of peat, and<br />
<strong>the</strong> lemon zest key note of Islay and you have discovered an olfactory hidden treasure.<br />
The peaty Islay character is more evident on <strong>the</strong> palate as is <strong>the</strong> sea salt which clings<br />
to <strong>the</strong> lips, layers of caramel and soft fruit, sweet corn, salted butter and dried apples –<br />
it’s Pandora’s box. Give it time to open up. Please do not go near water with this<br />
amazing old Ileach - it needs no help to show its rare qualities.<br />

assertive flavours, yet beautifully balanced and drinkable. Founded as Clynelish in<br />
1819, <strong>the</strong> now closed distillery at Brora on <strong>the</strong> Su<strong>the</strong>rland coast was one of Scotland’s<br />

Like most Islay spirits Bunnahabhain was very heavily peated up until 1963.after<br />
this time it began to produce much lighter peated malt due to <strong>the</strong> demand of <strong>the</strong><br />
blending market. However in 1997 <strong>the</strong> decision was made to return to <strong>the</strong>se smoky<br />
origins once more. Moine, Gaelic for peat was <strong>the</strong> name given to this new traditional<br />
Bunnahabhain.This is <strong>the</strong> first ever release of this spirit, a single hogshead yielding<br />
only 310 bottles. At <strong>the</strong> youthful age of 7 it is a powerhouse, like chewing a heavily<br />
smoked carpet .it beats you around <strong>the</strong> head with a plethora of intense flavours. Peat,<br />
salt , iodine ,malt, nuts, honey and seaweeds all compete with youthful vigour. A<br />
truly immense drinking experience, try it while it still exist!!<br />

<strong>the</strong> taste is smooth with a good firm body, meeting <strong>the</strong> expectations set from <strong>the</strong> rich,<br />
mature nose. The texture is gently oily and mouth-coating with chewy oak tannins. The<br />

confirmed <strong>the</strong> ra<strong>the</strong>r pleasant character of this whisky, and <strong>the</strong> finish seemed longer<br />
than <strong>the</strong> first time. A ra<strong>the</strong>r strong and long aftertaste on malt notes remains for a<br />

many different aromas as this delightful whisky is released into <strong>the</strong> air.<br />
After about 20 mins you night even sense macadamia nuts. This is a very<br />
big, heavy whisky-rich in alcohol-soaked fruit. Almost bitter to begin with,<br />
<strong>the</strong>n a delicate sweetness present. A strong double-espresso immediately<br />
comes to mind.<br />
It has a bitter, dark chocolate aftertaste, present for a very long time. In<br />
short, a fantastic whisky. A great treat<br />

It is a very smooth whisky. The texture is almost like a good butter<br />
shortbread-and it really does dissolve in your mouth.<br />
It has an ample finish, which produces a delightful coating of your tongue<br />

A lovely dark golden colour<br />
At just 46.3% Vol, this has lost more strength for its age than o<strong>the</strong>r casks in<br />
<strong>the</strong> family collection. However, what it lacks in strength, it makes up for in<br />
aromas. Intense. It’s a very elegant whisky with a very good balance of<br />
nuttiness, fresh fruit and some liquorice. It’s actually very similar to<br />
Glenfarclas 21 years old, but this bottling has more depth, which gives it a<br />
much longer and very warm, fulfilling finish<br />

of apples and pears, and a hint of kiwi fruit. Hints of vanilla are also present<br />
on <strong>the</strong> back of <strong>the</strong> tongue, with a violet overtone.<br />
Well balanced, it’s a whisky that does not disappoint. Not overpowering in<br />
any way. Simply very quaffable.<br />

This bottling has a hint of redness and is darker and richer than you’d<br />
expect from <strong>the</strong> 90’s.<br />
The thick, powerful nose is bursting with sherry and Demerara sugar. The<br />
lovely malty flavour keeps pace with <strong>the</strong> powerful rich viscous flavours of<br />
sherry. It’s a full whisky that demands respect; high in alcohol and flavour.<br />
Adding a little water does not tame <strong>the</strong> flavours. Instead, it simply elongates<br />
<strong>the</strong> sensation until you reach <strong>the</strong> lovely caramelised fruit flavours near <strong>the</strong><br />
end.<br />
The finish is something to write home about – very elegant and refreshing.<br />

cask and <strong>the</strong>n extra matured or “finished” in port pipes, shipped from <strong>the</strong> ‘Quintas’ or<br />
wine estates of Portugal. Maturation in <strong>the</strong> ruby port pipes develops The Quinta Ruban<br />
into a voluptuously smooth spirit with a complex balance of sweet and dry flavours that<br />
engage <strong>the</strong> entire palate and envelope it in an intriguing balance of smooth velvet and<br />

Matured for fifteen years in old bourbon casks, it has a complex aroma with sweet<br />

emerge and maybe a trace of nuts. The flavour is full and creamy with a light, dry<br />

Glenmorangie Lasanta is an elegant and full-bodied single malt that has been extra<br />
matured in Spanish Oloroso casks after a minimum of 10 years in ex-bourbon casks. Its<br />
luscious, soft mouth filling texture and its deep, enticing, sweet aroma is very<br />
appealing. Its key flavour notes are of toffee, raisins and walnuts. Like <strong>the</strong> most<br />
delicious dessert <strong>menu</strong> imaginable, Lasanta taunts <strong>the</strong> senses with chocolate covered<br />
raisins, honeycomb and smooth caramel toffee. Citrus notes clear <strong>the</strong> way for <strong>the</strong> crispy<br />
burnt sugar and melting softness of crème brulée to be replaced by <strong>the</strong> rich aroma of<br />
rum and raisin ice cream. The full, sweet flavour typical of Spanish sherry with<br />
sultanas, orange segments, walnuts and butter toffee. Satisfyingly long finish with<br />

baking fruitcake and warm gingerbread .The smooth, melting creaminess of lemon tart<br />
leaves <strong>the</strong> mouth full of citrus tang that gives way to crème caramel and zesty lime.<br />
This is replaced by warming ginger coupled with <strong>the</strong> mellow nutty flavours of nutmeg<br />

light mintiness. With water maritime characteristics emerge – dry boat<br />
varnish, edible seaweed. The overall effect is warming. The development is<br />
towards smoke, coal-tar and toffee. Characteristic chilli ‘catch’ in <strong>the</strong> finish is<br />
subtly present in <strong>the</strong> aftertaste<br />
