Often we are quick to judge microorganisms like bacteria are harmful to humans. It’s part of our education, too. We are trained to wash our hands before eating. Excessively high levels of microorganisms can lead to food poisoning. Or we only have to watch what happens to food that is getting old. It starts growing mould. But in fact we can’t live without microorganisms. Inside our bodies, they are necessary to digest our food. French cheese would not exist without microorganisms. One of the most well known microorganisms is yeast – one of the essential ingredients in brewing beer or making bread. In industrial processes, too, microorganisms are used frequently. Typical examples are the production or processing of food or the preparation of medicines. Although an enormous variety of microorganisms exist, they have one characteristic in common. They need very specific conditions in which to survive and multiply. Temperature, level of acidity and other ambient conditions must be at a certain interval. Oxygen can be deadly to certain microorganisms while others need oxygen to survive. Industrial processes use the properties of the ambient atmosphere to promote or inhibit the growth of microorganisms. Typical examples are mixtures containing carbon dioxide in air to stimulate or inhibit the growth of microorganisms.
