ensure parasite destruction. Fresh
Halibut and shrimp not cooked to
proper temperature cannot be
used for ceviche. Raw marinated
or partially cooked fish must be
frozen and stored at the required
temperature and the minimum
time as designated in the Georgia
Food Code. Product cannot be
served. Observed numerous flies
in the facility. Person in charge to
ensure fly problem is remedied.
One way to prevent flies from
outside dining area is to install an
air curtain.
