Editor’s letter<br />
The Heart for Art<br />
We don’t think of ourselves as magazine-makers. We are<br />
driven to gather the most beautiful things in the world and<br />
raise them in the air for everyone to see. The magazine is<br />
our portal, but beautiful living is our art.<br />
What did we gather up this month? Two of Asia’s biggest<br />
stars (including <strong>Vancouver</strong>’s Wanting Wu), a film<br />
producer cut from a different cloth, watches that give<br />
you x-ray vision, colour advice to use this spring, a secret<br />
garden of haute joaillerie, an architectural “symphony”<br />
that took almost 90 years to complete, and lots more.<br />
“Let’s include a stop in Bora Bora and a visit to Versailles,<br />
for good measure,” we thought. So we did.<br />
How do we know when we’ve found something truly<br />
stunning, stunning enough for Taste of Life’s readers? I<br />
was once driving two children down a tree-lined road to<br />
a playdate near the quiet beach town of Sidney, BC. The<br />
sun was setting and all of a sudden we caught a glimpse<br />
of the bright blue water, emerald-coloured Gulf Islands,<br />
and ochre sky beyond. “How beautiful!” the little girl and I<br />
exclaimed, almost in unison, which made the boy pipe up.<br />
“How? How can you tell it’s beautiful? How do you know<br />
that?” How did we know that? The girl and I seemed to ask<br />
ourselves and each other over a silent glance. What’s more,<br />
how do you tell someone else how they can know, too?<br />
“You know it in your heart,” I said, finally. “Your heart will<br />
tell you.”<br />
Traditionally, the Chinese believed that everything is alive<br />
and sentient, even artwork. They strived to create works<br />
as realistic and complete as possible because the beings<br />
in the paintings or carved from stone would live that way<br />
until the art was no more.<br />
At Taste of Life, we reach for self-evident beauty, neverending<br />
loveliness. True luxury, we believe, is refined with<br />
the wisdom of classical cultures.<br />

Wanting Qu admits she’s a pop<br />
singer. But there’s more to it than<br />
that. She wants you to know she doesn’t<br />
just perform her songs—she writes them,<br />
too. And that makes all the difference.<br />
“They can’t be separated,” she says, leaning<br />
back in her chair and taking in the<br />
scenery from the 15th story of <strong>Vancouver</strong>’s<br />
Shangri-La Hotel. “The lyrics, the melody,<br />
my performance, how I play the instruments<br />
— they’re a whole. They’re one.”<br />
The approach seems to be working. In<br />
the three years since the Chinese-born,<br />
<strong>Vancouver</strong>-raised musician burst onto<br />
the scene, she has quickly become one of<br />
Asia’s biggest pop stars. Her two studio<br />
albums have sold millions of copies, and<br />
her music has won almost every award<br />
available in China. Her video for “You<br />
Exist in My Song,” from her first album,<br />
racked up a combined 100-million views,<br />
and sat at the No. 1 position on the Chinese<br />
charts for two months straight.<br />
Despite the enormity of her success, Qu<br />
is a star whose feet remain firmly on the<br />
ground. “People call me a star,” she says in<br />
an introspective tone. “[But] I feel like I’m<br />
just a girl who loves writing music, and<br />

When asked about her fame, it’s obvious Qu is<br />
interested not only in the perks that come with<br />
it, but how it can enrich her art. “That’s one thing<br />
about being famous that I like,” Qu says. “I can<br />
connect with other celebrities, and play music together,<br />
too. If they recognize my work and love<br />
that work, and I love [their] work, we can work<br />
together—create something together.”<br />
In August 2014, Qu began creating something<br />
very special — a life — with <strong>Vancouver</strong>’s<br />
mayor, Gregor Robertson, after years of being<br />
colleagues and friends. Hints swirled publicly<br />
in January <strong>2015</strong>, and they confirmed their relationship<br />
officially on Valentine’s Day.<br />
“We have lots in common. We both want to<br />
make a difference in the world. The fact that we<br />
are both public figures — we’ve had experiences<br />
of being under the microscope, sometimes love<br />
and support, sometimes people passing judgments,<br />
and sometimes media manipulate and<br />
spread mistruths. All of that bonded us in a<br />
way that no one else could. We understand each<br />
other in that sense. And he’s a fun, happy, positive,<br />
caring human being. Plus, he loves music<br />
and he’s a fan of my music. What’s not to love?”<br />
Qu, now 32 years old, came to Canada as a student<br />
at the age of 16 with the goal of pursuing a<br />
business career, but the call of the keyboard was<br />
too strong to ignore. “I was a rebel,” she admits<br />
with a grin that provides a sneak peek into an important<br />
part of her personality. “I liked music better.<br />
[Music] was one thing that I [never] stopped<br />
doing. Even through [my] business degree, that<br />
was something that kept me feeling good.”<br />
It’s an honest answer — one that reflects who<br />
she is as an artist. “When you are real, when<br />
you are honest, when you are not afraid to be<br />

vulnerable and share your personal stories to the<br />
world, if there are people on the other side listening,<br />
they will like it,” she says. “I think it takes an<br />
open heart to get an open-hearted message.”<br />
This attitude of openness comes through in her<br />
music and in the way she interacts with fans. “I<br />
always say yes to whatever request [fans] have,”<br />
she says. “The most they want out of me are photos,<br />
and a signature, and maybe a hug. If I have<br />
time, I [try] to make them happy.”<br />
Speaking with Wanting, you get the sense she’s<br />
the kind of person who doesn’t hide much. “It<br />
starts from here,” she says, pointing to her heart.<br />
“I always write music because I felt something.<br />
It’s either heartache or happiness, anger, or<br />
something like that. It triggers here,” she points<br />
to her heart again, “and then I write about it.”<br />
Case in point: her breakout single, “You Exist<br />
in My Song.” As Qu explains, she wrote the song<br />
for a friend who opened her eyes to the alternative<br />
music scene in China. While they were never<br />
romantic, the two developed an intense emotional<br />
bond in the short time they spent together.<br />
The profound nature of the relationship led<br />
her to ask some deep questions about friendship,<br />
love, and destiny — questions that became the<br />
core of one of her best-known and best-loved<br />
songs. “Why do two people cross paths? How<br />
come you were in my life for a period of time and<br />
you were the focal point of my life — and all of a<br />
sudden you were not in my life?”<br />
This desire to make meaning drives Wanting.<br />
Instead of resting on her laurels, making money<br />
by touring Asia “just singing one song,” Qu intends<br />
to bring her songs to an even wider audience. Starting<br />
with her adopted home. “I feel I’m half Canadian,”<br />
she says with a self-assured tone. “Canadian<br />
culture has influenced me so much that I wouldn’t<br />
have written this music if I didn’t live here. It is kind<br />
of written all over the place, but behind the scenes.”<br />
This in part explains why Qu writes songs in both<br />
Mandarin and in English. “I feel I have so many<br />
great English songs [with] messages in them,” she<br />
says. “It’s kind of like a healing potion, but they’re<br />
just sitting there. I want them to be spread out to<br />
the world, and serve [their] own purpose.”<br />
“I feel like I have this invisible power,” she says. “I<br />
can make a difference.” And it’s true — you can’t see<br />
Qu’s power. But you can hear it, note by note, song<br />
by song, ready and willing to change the world.<br />

Leon Lee was once, unexpectedly, the<br />
20-year-old CEO of a medical-device firm<br />
in northeast China. Now he makes movies.<br />
From his new base in <strong>Vancouver</strong>, in fact, he’s<br />
working on his second documentary (his third<br />
film), and just beginning to taste the success<br />
that he has worked so relentlessly to achieve<br />
since emigrating eight years ago.<br />
Getting a mass audience for a serious documentary<br />
about human rights atrocities is never<br />
easy. Doing that as an outsider — both to the<br />
West, and to the documentary film business<br />
— is even tougher. Lee achieved both after<br />
submitting his premiere documentary, Human<br />
Harvest (also known as Davids & Goliath), to<br />
the Viewster Online Film Festival (VOFF)<br />
and other festivals worldwide. Viewster is an<br />
online-movie platform founded in 2007 that<br />
attracts 40 million visitors per month.<br />
In the VOFF, his film went up against hundreds<br />
of others for votes by the public, finally<br />
making a shortlist of ten. A panel of experts<br />
selected the winners.<br />

Lee, for all his 34 years, has faced tougher<br />
odds. One day in 2000, the phone rang in his<br />
quiet dorm room in New Zealand where he<br />
was living as an undergraduate exchange student.<br />
“Come home. Now.” That’s all he was told.<br />
He caught the next flight back to China, and<br />
upon arrival, found that his mother had died<br />
suddenly in a car accident.<br />
“They didn’t tell me over the phone that she’d<br />
died, because they were afraid I couldn’t take it,”<br />
he said quietly.<br />
Sudden CEO<br />
His mom was head of the family firm, a medical-device<br />
distributor. And it was now on Lee’s<br />
20-year-old shoulders to run it. “About a week<br />
later, I took over the company,” he said.<br />
During the next five years, he brought the<br />
business from a small mom-and-pop operation<br />
with no branch offices to an exclusive representative<br />
for over a dozen Western medical<br />
brands, supplying 100 hospital distributors.<br />
The most rewarding facet of the job, Lee said,<br />

was learning to work with and understand the<br />
long-term employees, friends of his parents<br />
who’d been at the company since the beginning.<br />
This basic sense of empathy and ability to<br />
see things through the eyes of the other person<br />
guided him through the shoals of the complex<br />
and new world of moviemaking.<br />
Movie empathy<br />
Lee’s empathy machine started to get a workout<br />
in 2006 when shocking reports started popping<br />
up in the overseas Chinese press. The stories<br />
said that the Chinese security forces and military<br />
hospitals were maintaining a blood-typed<br />
database of detained religious prisoners, then<br />
killing them on order to harvest their organs for<br />
transplant tourists. The organs would be sold for<br />
upwards of $100,000 each. Some reports said<br />
that the victims were not even dead when their<br />
organs were removed — that it amounted to extracting<br />
organs from living people.<br />
“I knew right then that I wanted to tell this<br />
story,” Lee said.<br />
It was his compelling exploration of this topic<br />
that won Viewster’s fourth online video contest<br />
last year. The judges wrote that the documentary<br />
was “well-focused and chooses well-informed<br />
individuals with a firsthand knowledge of the<br />
dire situation in China, putting their cases forward<br />
in a clear and gripping manner.”<br />
How did the CEO of a medical-device firm<br />
become an award-winning documentarian? The<br />
opportunity to change careers came in 2006<br />
and 2007 as he was emigrating from China,<br />
marrying his Canadian-Chinese partner, and<br />
relocating to <strong>Vancouver</strong>. Then there was study.<br />
And practice.<br />
“I systematically taught myself everything I<br />
could learn about film: production, screenwriting,<br />
cinematography, directing.” He attended<br />
courses in Los Angeles and <strong>Vancouver</strong>, took online<br />
programmes, read books, spoke to experts,<br />
and slowly honed his skills.<br />
Inspiration’s fount<br />
So far, Lee’s documentaries and his first feature<br />
film have all drawn from the same source<br />
material: the astonishing persecution of practitioners<br />
of Falun Gong. Falun Gong is a traditional<br />
Chinese practice of meditation and<br />
moral improvement that teaches adherents<br />
to live their lives according to the principles<br />
of truthfulness, compassion, and tolerance. In<br />
1999, it became a political target.<br />
“The thing about the persecution of Falun<br />
Gong is that it’s one of the most serious<br />
persecutions in the world — the scope is so<br />
major, its aspects so vast — and yet there are<br />
so few works that reflect the true face of the<br />
persecution,” Lee said.<br />
It’s the stories of compassion, kindness,<br />
bravery, and the resilience of the human spirit<br />
in the face of brutal persecution that he is<br />
now working so hard to tell.<br />
Lee’s next production is another storytelling<br />
documentary about Falun Gong: Jing Tian’s<br />
Escape, the journey of a Chinese woman who<br />
in 2000 was sentenced to 10, then 13 years in<br />
prison for her beliefs. Her whole family was<br />
destroyed: Jing’s younger brother was hit with<br />
a 10-year prison sentence. Her younger sister<br />
got 13 years. Her mother was thrown into a<br />
forced re-education camp for three years, dying<br />
shortly after being released due to injuries<br />
sustained from torture.<br />
“Jing Tian escaped China through the jungles<br />
of Burma, then went to Thailand as a refugee,<br />
then came to <strong>Vancouver</strong>. This is the kind<br />
of story I want to tell. It’s incredibly moving,<br />
but people don’t know about it.”<br />
How did Jing Tian get a 10, then 13-year<br />
sentence, and is now outside of China? “That’s<br />
why it’s called Jing Tian’s Escape — you have<br />
to wait to see the film!”<br />

Life, revealing a tender, traditional side too few<br />
know. The lead actor of the box office smash<br />
hit The Con Artists — which broke Korean<br />
box office records — says that growing up,<br />
he was introverted and plain-looking. But as<br />
fate would have it, he rocketed up to 6’2” in<br />
high school and matured into an untraditional<br />
good look, a uniqueness the modeling industry<br />
grabbed onto.<br />
In 2009, at Seoul Fashion Week, he lit up the<br />
catwalk with an easy-going, natural charisma,<br />
drawing support not only from attendees. “At<br />
that time, my parents believed and supported<br />
me, saying, ‘You can do it better than anyone<br />
else.’ Thus, I started on this road with confidence,”<br />
Kim told Taste of Life in an interview.<br />
“My father is my life model. He always considers<br />
and takes care of people around him.”<br />
Though his parent’s confidence lived inside of<br />
him, Kim’s successes weren’t given to him on a<br />
silver platter. He began hitting the gym to put<br />
on weight for modeling, gaining 12 kilograms,<br />

時 , 導 演 說 這 部 影 片 很 時 尚 前 衛 , 我 的 角 色 設 計<br />
的 很 酷 。 但 我 想 , 如 果 電 影 中 的 人 離 現 實 太 遠 的<br />
話 , 觀 眾 會 有 距 離 感 。 我 就 盡 力 表 演 的 自 然 一 些<br />
吧 ! 但 不 知 道 大 家 會 怎 麼 看 我 的 表 演 。」<br />
初 次 擔 綱 這 樣 重 要 的 作 品 , 金 宇 彬 也 感 受 到<br />
了 壓 力 。「 我 是 一 個 新 人 , 說 沒 有 壓 力 是 不 可 能<br />
的 。 不 過 , 導 演 和 前 輩 演 員 們 幫 我 度 過 了 難 關 ,<br />
讓 我 的 表 演 更 自 如 。 在 現 場 我 也 有 不 斷 的 學 習 ,<br />
甚 至 每 個 動 作 都 要 學 。」 據 悉 ,《 高 手 們 》 在 韓<br />
國 上 映 10 天 票 房 便 成 功 破 億 , 創 下 230 萬 人 觀 影 的<br />
佳 績 。 而 金 宇 彬 的 表 演 受 到 了 各 大 媒 體 的 一 致 好<br />
評 , 他 的 努 力 得 到 了 最 好 的 回 報 。<br />
面 對 如 今 的 大 紅 大 紫 , 金 宇 彬 回 想 起 自 己 四<br />
年 前 首 次 出 演 電 視 劇 《 白 色 聖 誕 節 》, 那 時 的 他<br />
正 在 為 自 己 獨 特 的 樣 貌 苦 惱 著 。 拿 到 劇 本 之 後 ,<br />

balance his strength with fluidity, he took up<br />
ballet and jazz dance.<br />
Soon auditions for commercials began to<br />
pop up, so he began studying acting. Instantly,<br />
he fell in love with the craft, saying he got the<br />
same rush in acting as he did on the runway.<br />
His aggressive work ethic only grew with his<br />
newfound passion.<br />
“I don’t want to disappoint people’s expectations.<br />
So I try my best to prepare well. Every<br />
time we read the script and prepare, I will write<br />
a biography for the character, and a ‘hundred<br />
questions, hundred answers’ for the character.<br />
Through doing these, I can get closer to my role.<br />
I seem to become that person in my daily life.”<br />
Kim’s commitment to method acting led to<br />
an instrumental decision he made — one that<br />
enchanted girls across Asia. In the script of his<br />
first TV drama, White Christmas, his character,<br />
a genius prankster who gives payback to bullies,<br />
had bright red hair. While the director didn’t<br />
require him to dye his hair, he wanted no distance<br />
between him as an actor and his character.<br />
And it was his red hair, with, of course, some<br />
unruly charisma, that ignited his popularity.<br />
“Right now there are many truly beautiful<br />
charming male actors, and all of a sudden a<br />
weird-looking person comes out and seems to<br />
have very cool acting. I’m guessing that’ll attract<br />
more people’s attention,” said Kim.<br />
Kim’s striking appearance goes beyond the<br />
colour of his hair, as he admits he’s been described<br />
as having a “next generation look.”<br />

物 的 『 百 問 百 答 』, 通 過 這 些 來 更 貼 近 角 色 , 日<br />
常 生 活 中 也 好 像 讓 自 己 成 為 那 個 人 物 一 樣 。」<br />
金 宇 彬 覺 得 自 己 並 不 是 一 個 靠 運 氣 一 夜 成 名 的 明<br />
星 。 當 初 為 了 做 模 特 , 他 高 中 時 鍛 鍊 增 重 了 12 公<br />
斤 , 還 特 地 學 習 了 芭 蕾 舞 和 爵 士 舞 。 後 來 , 在 面<br />

Kim and his parents agree: had he been born a<br />
decade before, they don’t think he would have<br />
made it. Today, unique faces are well-received<br />
for their individuality.<br />
Kim’s humility and charm is never far removed.<br />
When asked in a previous interview what kind<br />
of animal he would be, he jokingly replied, a<br />
dinosaur, since he has the eyes of a T. rex. It’s<br />
that easy-going mindset, a sincere humility of<br />
not taking himself too seriously, why he’s able to<br />
embody rich, multi-faceted characters in each<br />
new role.<br />
“I’m constantly studying, and try to act a<br />
new side of me as much as possible,” Kim says.<br />
When the norm for Korean heartthrobs is more<br />
of a dreamy, soap-opera personality, Kim takes<br />
creative risks… and they don’t go unnoticed.<br />
In the TV series A Gentleman’s Dignity and<br />
School 2013, where he played more variations of<br />
a charming rebel (think a young Leonardo Di<br />
Caprio or Marlon Brando), his characters started<br />
off as supporting roles. But with his brave<br />
acting style — toughness mixed with openhearted,<br />
teary-eyed scenes with his onscreen<br />
girlfriends — the writers wrote him more deeply<br />
into the core fabric of the story.<br />
Kim’s hit TV series The Heirs followed, landing<br />
him more attention and film offers, including<br />
his biggest production yet, The Con Artists,<br />
which came with a new level of pressure. He<br />
said, “It’s impossible that there is no pressure.<br />
However, the director and senior actors helped<br />
me go through the difficulties and to perform<br />
more comfortably. I kept learning on-set.”<br />
A philosophy that pulls Kim through during<br />
trying times is one he wrote on his first audition<br />
resume: “God will bestow hardships to<br />

those who can bear it.” And with his forbearance<br />
came record-smashing success: The Con<br />
Artists broke the $100 million mark as 2.3 million<br />
people in South Korea saw it within the<br />
first ten days.<br />
When asked about his future plans and endeavors,<br />
it’s clear that underneath the black<br />
leather jacket is a caring, modern-day gentleman<br />
who follows the course of nature.<br />
“I hope that I am a trustworthy actor for the<br />
audience,” Kim said. “I think if the character<br />
is too far from reality, I will have a distance<br />
between the audience. On the career side, it’s<br />
not good to be too ambitious; things might go<br />
wrong. In the current environment, I just deal<br />
with what’s in front of me well.”<br />

From Charles Dickens’ missing final chapter<br />
of The Mystery of Edwin Drood to Schubert’s<br />
extraordinary Unfinished Symphony, the reason<br />
these masterpieces were never completed<br />
to their creators’ exact intention is steeped in<br />
speculation.<br />
To continue posthumously where another<br />
creative has left off is not a feat that just anyone<br />
would consider. When a mansion of late<br />
19th-century neoclassical design came on the<br />
market in Rosedale, Toronto, luxury custom<br />
home builder and interior designer Po Ku<br />
rose to the thrill of a challenge. Guided by the<br />
blueprints of the original architect, which were<br />
never fully realized due to limited supplies<br />
during the Great Depression, Ku renovated<br />
and refurbished the impressive residence.<br />
“I felt obligated to finish what he had<br />
started,” says Ku, who appreciates classicism<br />
and bringing history to life by restoring Tudor,<br />
Gothic and other period homes. “Details<br />
and materials inside the house were modest,<br />
although the intention of the architect, Norman<br />
Alexander Armstrong, was there to create<br />
something brilliant.”<br />
The renovation of the 5,300-square-foot<br />
estate took 18 months to complete. Once flat,<br />
the roof is now embellished with dormers<br />

and turrets, and the entrance has the grandeur<br />
of a Roman temple with stone portico,<br />
triangular pediment and stately stone pillars.<br />
Inside, Art Deco elements were liberated<br />
when the confined living area was expanded.<br />
An elliptical staircase is now the home’s true<br />
magnum opus, seamlessly orbiting in graceful<br />
curves to the second-floor bedrooms and<br />
illuminated naturally by an elliptical skylight<br />
with iron grill. During the renovation, a box<br />
was discovered in the basement containing<br />
decorative Art Deco elements. Ku had these<br />
embellishments refinished in a muted black<br />
and added between the rails. Like a diamond<br />
in the rough, the spiral newel post at the foot<br />
of the staircase was an original hint to the<br />
home’s Art Deco motif. The polished aluminum<br />
was refurbished to a high shine.<br />
By removing partitions and the original<br />
second floor, a grand open area with lofty<br />
19-foot ceiling was created. Truly spectacular,<br />
the living room’s tall fireplace is flanked<br />
by ornamental architectural columns and<br />
scroll-like hand carvings known as “Ionic<br />
capitals,” used in early Greek temples and<br />
later in French Art Deco style.<br />
“Art Deco is the true international style,<br />
blending Egyptian, Chinese, Japanese and<br />
European motifs,” says Ku. “It was an interesting<br />
time when people weren’t scared<br />
to use design, style, and culture from other<br />
countries.”<br />
The highly imaginative and efficient design<br />
of the kitchen is ample evidence of Ku’s architectural<br />
and engineering prowess. Like a<br />
bridge spanning the culinary space, the handhoned<br />
black granite island is supported by<br />
columns, and the floor-to-ceiling cabinets<br />
with glass doors were fabricated to emulate<br />
the skyline of Manhattan.<br />
“It’s quite a sight when you turn off the room<br />
lights, turn on the cabinet lights, and sit in the<br />
family room looking into the kitchen,” says Ku.<br />
“I designed them architecturally to be like a<br />
building within a building. It’s theatrical, really.”<br />

makes a bold statement next to the limestone<br />
fireplace in the upstairs master bedroom. Its<br />
en suite bathroom offers a delightful view of<br />
the backyard rose garden. Mosaic tiles frame<br />
the antique tub like a Persian rug and are a<br />
gorgeous complement to the Carrara marble<br />
countertops and silk drapes.<br />
“It takes a trained eye to see a home’s potential,”<br />
says Ku. “I’m proud of this project<br />
because Rosedale is a very conservative<br />
neighborhood, like Shaughnessy of <strong>Vancouver</strong>.<br />
People used to just drive by, but now they<br />
stop because there’s something worth seeing.”<br />

The wristwatch today is more than just a useful<br />
way to keep your day on schedule, it’s an<br />
engineering wonder with hundreds of gears, levers<br />
and wheels dancing in perfect harmony. Watching<br />
the show through a transparent sapphire case back<br />
is nice, but the most inquisitive minds, and savvy<br />
watchmakers, want to see more. That’s why watch<br />
dials have turned into windows, too.<br />
In 1760, watchmaker André-Charles Caron<br />
designed the world’s first skeleton watch, where<br />
the front dial was totally transparent, revealing<br />
its complex inner workings. With the veil of such<br />
mechanical majesty removed, watch lovers flocked<br />
to Caron’s shop on the Rue Saint-Denis in Paris<br />
in search of this new wearable art. While some<br />
brands tease and only show a part of the movement<br />
or some auxiliary mechanical device, such<br />
as a tourbillon, the true masterpieces display the<br />
complete complex inner workings through a fully<br />
skeleton dial.<br />
Crafting a skeleton watch is as difficult as it is<br />
striking. With the steadiness of a surgeon, watchmakers<br />
drill minute holes in the parts, carve the<br />
edges to 45-degree angles with a chisel, carve intricate<br />
patterns, and inlay dazzling gems. Each cut<br />
must be perfectly precise, or it fails.<br />

faces of songbirds Corinne Bailey Rae and Nikki Yanofsky<br />
(and even Lenny Kravitz), but what gets her excited is playing<br />
with texture and light. Julie Cusson considers her work a form<br />
of sculpture, and Chanel’s new Rêverie Parisienne collection lets<br />
every woman explore her inner artist with a range of finishes.<br />
Opt for a light, full effect with the luminous Rouge Coco Shine,<br />
or paint on Rouge Allure Velvet for a matte finish with drama,<br />

for Asian eyes because they<br />
don’t have a high fold on the eyelid.<br />
Using Les 4 Ombres Tissé Paris from<br />

shade on the inner corner of<br />
the eyes up to the brow. Stroke the<br />
darker shade under the eye, and the<br />
medium shade on top of the lid. Trace<br />

Chef Normand Laprise is a champion of<br />
local Quebec gastronomy. As a child<br />
growing up in Kamouraska, Quebec, he<br />
didn’t understand why everything from fish<br />
to green beans had to come from France. “I<br />
realized we weren’t using the food we grow<br />
here. It was weird.”<br />
When Laprise went to culinary school in<br />
Quebec City 37 years ago, chefs didn’t focus<br />
on local food. At his restaurants Toqué! and<br />
Brasserie T!, his menus honour Quebec produce:<br />
he orders lamb from Rimouski; Jean-<br />
Pierre Claver’s farm provides chicken for his<br />
vol-au-vent; and mushrooms are bought from<br />
Les Jardins Sauvages at Jean-Talon Market.<br />
Laprise was recently nominated as a member<br />
of the Order of Canada, but he’s racked<br />
up a clutch of other auspicious honours, including<br />
being named Chef of the Year by<br />
Maclean’s Magazine, a Relais & Châteaux<br />
Grand Chef, as well as being a James Beard<br />
Award-winning cookbook author.<br />
After serving apprenticeships in Europe<br />
and Asia, Laprise learned the value of<br />
mentoring, and serves as a jury member<br />
of <strong>Vancouver</strong>’s Hawksworth Young Chef<br />
Scholarship.<br />

烤 箱 預 熱 至 160°C( 華 氏 325°F), 將 意 大 利<br />

Backwards BLT<br />
Ingredients (serves 4):<br />
12 thin slices of pancetta (not rolled)<br />
4 medium tomatoes<br />
4 tbsp chardonnay vinegar<br />
4 tbsp olive oil<br />
Maldon salt and pepper<br />
4 tbsp shallots, minced<br />
250 ml (1 cup) mayonnaise<br />
12 basil leaves<br />
12 lettuce leaves<br />
Chives<br />
4 tbsp Parmesan cheese, grated<br />
4 tbsp fried bread<br />
Directions:<br />
Preheat the oven to 160°C (325°F). Place the<br />
pancetta slices between two sheets of parchment<br />
paper on a baking sheet. Cook for 10 to<br />
20 minutes until golden and crunchy. Set aside.<br />
With a small knife, score an X on the underside<br />
of the tomatoes and blanch them in<br />
boiling water for 15 seconds. Before peeling,<br />
cool the tomatoes in a bowl of ice water. Set<br />
aside on paper towels. Remove the heart of<br />
each tomato with an apple corer, and then<br />
slice each fruit horizontally into three equal<br />
slices. Keep the slices of each tomato so that<br />
they can be easily restacked later.<br />
Finishing touches<br />
Place the tomato slices on a baking tray in<br />
such a way that each tomato can be easily<br />
reconstructed later. Drizzle a little vinegar<br />
and olive oil on each slice (except the topmost),<br />
adding Maldon salt, pepper, shallots,<br />
mayonnaise, a basil leaf, a lettuce leaf, chives,<br />
Parmesan cheese and fried bread.<br />
Finally, place a slice of pancetta on each<br />
tomato slice. Stack the slices one on top of<br />
the other to re-form a full tomato. Add a<br />
bit of mayonnaise in the hole made by the<br />
apple-corer. Sprinkle with olive oil and season<br />
with Maldon salt.<br />

5. 用 筷 子 夾 起 萵 筍 片 , 捲 成 一 圈 , 擺 盤 , 撒 上 蔥<br />
花 和 炒 鍋 內 的 乾 辣 椒 、 花 椒 粒 。<br />
小 貼 士 :<br />
乾 辣 椒 辣 度 較 低 , 爆 香 時 , 火 不 能 太 大 , 炒 到 稍<br />
微 變 色 就 行 可 以 。 如 果 是 新 鮮 辣 椒 , 份 量 要 少 放 些 。<br />
Green as pale jade, Chinese lettuce is one of the<br />
most delicious spring vegetables available. This<br />
Chinese lettuce dish will whisk away winter doldrums<br />
and pique sluggish appetites. The addition of Sichuan<br />
peppercorns and chili peppers lends complimentary<br />
heat to the cool snap of the lettuce.<br />
Chinese lettuce, also known as celtuce, is a traditional<br />
Chinese vegetable. Chinese medicine says that the nature<br />
of Chinese lettuce is sweet and cool with a slightly<br />
bitter taste. It is beneficial to the organs because of a<br />
diuretic effect*, and good for clearing the heat in the<br />
stomach. Modern studies show it contains a variety<br />
of vitamins and minerals, such as potassium and iron,<br />
which help flush the body of toxins and aid in the secretion<br />
of milk in nursing mothers. Those suffering<br />
from anemia should eat this dish often, and it can protect<br />
bones and teeth as it contains a fluorine element.<br />
Ancient books of Chinese medicine caution those<br />
with weak vision or night blindness not to indulge in<br />
this dish too often.<br />
Ingredients (serves 2):<br />
1 Chinese lettuce/celtuce (about 300g)<br />
1 tsp salt (5g)<br />
2 tbsp sugar (30g)<br />
2 tbsp vinegar (30g)<br />
6 dried chili pepper (5g)<br />
2 tsp Sichuan peppercorn/Chinese coriander (2g)<br />
1⅓ tbsp. peanut or vegetable oil (20g)<br />
Half of a green onion<br />
Directions:<br />
1. Peel the Chinese lettuce, and slice it into lengths.<br />
2. Stir the sliced Chinese lettuce with salt, sugar, and<br />
vinegar in a pot. Drain the liquid after 10 minutes.<br />
3. Cut the dried chili peppers into pieces. Stir-fry the<br />
dried chili peppers and Sichuan peppercorns with the<br />
oil in a wok over medium-low heat.<br />
4. Turn off heat. Stir lettuce into wok.<br />
5. Remove lettuce, roll and plate. Garnish with onion,<br />
peppers and peppercorns.<br />
Tips:<br />
Dried chili pepper is less spicy than fresh peppers.<br />
Don’t stir-fry over high heat. Stir-fry until the colour<br />
changes a bit and use fewer peppers if they are fresh.<br />

Millet, a traditional Chinese grain, strengthens the<br />
spleen and stomach*. Sweet and savoury, perking<br />
up your mood, this delicious dish is easy to digest<br />
and whets appetites. Perfect for the body’s Spring<br />
awakening, it frees yang qi (chi) from the spleen’s winter<br />
reserves, activating the liver’s functions.<br />
The lovely kumquats floating in the cereal resemble the<br />
sun in the sky. Kumquat adjusts qi and clears phlegm.<br />
Zhang Xichun (1860 – 1933), a famous doctor of traditional<br />
Chinese medicine, particularly recommended<br />
yams. He invented a prescription yam drink to cure<br />
diseases caused by frailty, often with miraculous effects.<br />
Yam is believed to improve eyesight and hearing, and<br />
prolong life if eaten over extended periods of time.<br />
Avoid drinking milk one hour before — or after —<br />
eating this congee: kumquat’s acids will coagulate the<br />
dairy protein, causing uncomfortable abdominal distention<br />
and slowing digestion. Steer clear of sugar too:<br />
it decreases the kumquat’s phlegm-clearing properties.<br />
Ingredients (serves 2):<br />
3-4 kumquats (30g)<br />
3.5 oz fresh yam (100g)<br />
½ cup millet (90g)<br />
½ tsp goji berries (2g)<br />
2 tbsp sugar (25g)<br />
3 cups water (700ml)<br />
Directions:<br />
1. Soak, clean, and slice kumquats. Peel and dice yam.<br />
2. Place kumquats, washed millet, goji berries, and<br />
water in pot, and bring to boil. Cook, unlidded, 25<br />
minutes on low heat. Place yam in pot and cook 10<br />
minutes on low heat. Add sugar.<br />
Tips:<br />
To make the congee tastier and give it a yellow hue,<br />
you can replace 3 tablespoons millet with 3 tablespoons<br />
crumbled corn.<br />

truth, they seem almost as curious about me as<br />

Brando until his death a decade ago. He<br />
bought it in the 1960s while filming Mutiny on<br />
the Bounty nearby. The untouched beauty that<br />
appealed to Brando is still one of the main<br />
draws of The Brando, the resort that opened<br />
there in 2014.<br />
Every one of its 35 plush contemporary villas<br />
has direct access to a stretch of white-sand beach<br />
so pristine you might be content to lounge there<br />

southwest of Paris, includes a pilgrimage to<br />
see handmade furniture by Georges Jacob, one<br />
of the era’s best furniture makers. My father’s<br />
French family may be distantly related to Jacob,<br />
whose designs were not only popular with<br />
the court, but who later became a favourite of<br />
empress Josephine. Even without blood ties,<br />
we can’t help but admire the neoclassic fluted<br />
curves and beading, so much that my mother<br />
bought a Jacob chair (although it’s often<br />

Even those with no personal connection will<br />
be awestruck by Versailles and its treasures, as<br />
evidenced by the phalanx of tour buses that<br />
pull up to the gates every morning. What<br />
started off as Louis XIII’s humble hunting<br />
lodge grew to be the most illustrious palace in<br />
Europe, at a cost of $2 billion in today’s dollars.<br />
Each of the three French kings who lived<br />
there made it more grandiose. The palace contains<br />
over 700 rooms, so it’s easy to be swept<br />
away by the sheer scale, but here are some of<br />
my favourite highlights that bring home the<br />
personal nature of this grand chateau.<br />
Hall of Mirrors: No doubt the showpiece<br />
of Versailles, palace officials light 20,000 candles<br />
in 43 glittering chandeliers to illuminate<br />
the palace during special events and create a<br />
‘corridor of light.’<br />

The Opera: Considered to be one of most beautiful<br />
in Europe, it has a mechanism that allowed<br />
the orchestra level to be raised to the stage so it<br />
could be used for dancing and banquets. The opera<br />
required 3,000 candles to be burnt for opening<br />
night, and was rarely used due to its operating cost.<br />
Grove of the Baths of Apollo: The realistic<br />
sculpture of Apollo bathed by nymphs is in<br />
sharp contrast to the rough-hewn rocks that<br />
surround it. Sculptures appear to wander in<br />
and out of grottos, and horses seem to drink<br />
from the cascading fountains.<br />
The Hameau (Hamlet): To escape the formality<br />
of court at Versailles, Marie-Antoinette built a<br />
series of buildings where she could pretend to be<br />
a shepherdess or a milkmaid. The buildings were<br />
authentically rustic — there were even cracks in<br />
the walls — but that’s where the realism stopped.<br />
Cows were washed prior to the queen’s arrival, and<br />
lambs were taken for walks on silk ribbon leashes.<br />

queue up. Go online and book an English group<br />
tour; you’ll skip the line and can visit the rest of the<br />
palace afterwards.<br />
Don’t miss exhibitions and special shows such<br />
as the Grandes Eaux musicales et Jardins musicaux<br />
shows.<br />
Plan on spending the whole day exploring<br />
Versailles. The inside of the palace can take over<br />
two hours, and the gardens are larger than Manhattan.<br />
You can take a train which loops between<br />
the chateau, canal, and the Trianons.<br />
Arrive early and buy bottled water from stands<br />
in the gardens and use the restrooms after the ticket<br />
check. Once you start touring the rooms, visitors are<br />
funneled forward and you can’t turn back.<br />
Travel light. Check bags and umbrellas and the<br />
like. Tripods aren’t allowed inside, but you can use<br />
them in the garden, and grab a map to find hidden<br />
groves.<br />
