Dr. Hasan SADIKOĞLU Eş-Danışman / Co-Advisor ÖZET Dünya nüfusunun üçte ikisi tarafından tüketilen çay en çok sevilen ve popüler olan içeceklerden bir tanesidir. Bununla birlikte, günlük yaşamımızda kanser ve kalp hastalıkları gibi çeşitli hastalıkların önlenmesinde yardımcı olan bir antioksidatif maddedir. Tez kapsamında, geleneksel kurutma yöntemleri ile kurutulması sakıncalı olan sıcaklığa hassas ürünlerin (biyolojik maddeler, ilaçlar, kimyasallar ve gıda maddeleri) yapılarında bulunan suyun uzaklaştırılmasında kullanılan dondurarak kurutma yöntemiyle siyah çaydan çözünebilir çay üretimi amaçlanmıştır. Çalışma kapsamında, çözünebilir çay üretimi için yapılan deneysel çalışmalarda, birinci dondurarak kurutma safhası 16 saat, ikinci kurutma safhası 11.5 saat olarak bulunmuştur. Deneysel çalışmalardan sonra, çözünebilir çay üretimi için enerji ve kütle eşitliklerine dayanan matematiksel model ortaya konulmuş ve bir çeşit polinom yaklaşımı olan ortogonal kollokasyon metodu ile çözümlemesi yapılmıştır. Deneysel sonuçların, matematiksel modelden gelen sonuçlarla birebir örtüşmesi ve çözünebilir çayın dondurarak kurutma yöntemiyle en iyi şekilde ifade edilebilmesi için, temeli en küçük kareler metoduna dayanan lsqcurvefit (least square curve fit) Matlab aracı ile deneysel olarak belirlenmesi zor olan kurutulmuş tabakaya ait efektif difüzyon katsayısı, Knudsen difüzyon katsayısı gibi taşınım parametreleri çözünebilir çay için belirlenmiştir. Tezin son aşamasında, elde edilen yeni taşınım parametrelerinin modele uygulanmasıyla, dondurarak kurutma yönteminin birinci ve ikinci kurutma safhasına ait dinamik davranışlar ortaya konulmuştur. ABSTRACT Tea is one of the most loved and popular beverages consumed by two-thirds of the world population. However, it is an antioxidative substances that helps in the prevention of variosus diseases such as cancer and heart disease in our daily life. Heat-sensetive materials (biological agents, drugs, chemicals and foodstuffs) which might be damaged by heating to moderate temperatures in conventional drying, may be freeze dried. The aim of this study is to produce instant tea by using freeze drying method. In the experimental study, the duration of primary drying stage and secondary drying stage were 16 h, 11.5 h, respectively. After the experimental study, a mathematical model based on energy and mass equations was constructed for the freeze dried instant tea production and the model equations were solved using the orthogonal collocation based on polynomial approximation methods. In order to describe quantitatively the dynamic behavior of the primary and secondary drying stages of the freeze-drying of instant tea, the experimental results were fitted to mathematical model by using lsqcurvefit Matlab tool based on the least squares method and transport parameters such as effective diffusion constant, Knudsen diffusion constant of dried layer that are difficult to measure directly were determined. 168
