INGREDIENTS<br />

Wraps:<br />

2 1/2 cups baby coc<strong>on</strong>ut meat, chopped<br />

1/2 cup spinach, chives or greens of choice<br />

pinch of sea salt<br />

Combine all ingredients and blend until<br />

smooth. Pour <strong>on</strong>to teleflex dehydrator sheet<br />

into desired shape, dehydrate 4-6 hours at 115<br />

degrees, then turn to other side until dry yet<br />

pliable. Once wraps are ready, make filling<br />

and dipping sauce.<br />

Filling:<br />

1 large leek, chopped<br />

1 large bell pepper (any color of choice)<br />

1/2 cup fresh asparagus cut into 1/2 inch pieces<br />

1/2 cup carrots, peeled<br />

1/2 cup fresh mushrooms, chopped<br />

1/4 cup cilantro<br />

1/2 pomegranate arils<br />

Combine all ingredients in bowl and stir<br />

together. Fill wraps to desired thickness, roll<br />

and enjoy fresh!<br />

Dipping Sauce:<br />

1/2 pomegranate arils<br />

1 tablespo<strong>on</strong> namo shoyu or coc<strong>on</strong>ut aminos<br />

2 tablespo<strong>on</strong>s olive oil<br />

1 tamarind<br />

Blend until smooth and use to dip your<br />

wrappers!<br />
