berry spinach delight<br />

INGREDIENTS<br />
Salad:<br />
1 bag baby spinach<br />
2 cups strawberries, sliced<br />
1/2 cup cranberries<br />
1/2 cup raw alm<strong>on</strong>ds, sliced<br />
Pink Dressing:<br />
1 cup liquid sweetener of choice<br />
(or 1/2 cup raw coc<strong>on</strong>ut sugar )<br />
1 cup olive oil<br />
1/2 cup red wine vinegar<br />
1/4 cup red <strong>on</strong>i<strong>on</strong>, chopped<br />
2 tablespo<strong>on</strong>s dry (ground) mustard<br />
1 teaspo<strong>on</strong> redm<strong>on</strong>d sea salt<br />
Combine sweetener, olive oil, red wine vinegar, red <strong>on</strong>i<strong>on</strong>,<br />
dry ground mustard and sea salt. Blend until smooth. Stores<br />
well in glass jar in refrigerator.<br />
