Pearl Oni<strong>on</strong> Carrot Soup<br />

Ingredients:<br />

8 large carrots, grated<br />

3 cups pearl <strong>on</strong>i<strong>on</strong>s, peeled<br />

2 baby Thai coc<strong>on</strong>uts, for water<br />

Combine carrots, <strong>on</strong>i<strong>on</strong>s and coc<strong>on</strong>ut water in a large pot<br />

and put in the oven <strong>on</strong> warm, overnight. Make sure the<br />

temperature stays raw (118 degrees or below). I keep the<br />

door slightly propped open. If you have a dehydrator where<br />

you can take out sheets to allow for additi<strong>on</strong>al height space<br />

you can make this in your dehydrator.<br />

Cream Sauce:<br />

4 cups cashews, soaked overnight<br />

1 baby coc<strong>on</strong>ut for the water<br />

1/2 cup macadamia nuts<br />

3 tablespo<strong>on</strong>s sweetener of choice<br />

2 tablespo<strong>on</strong> dried <strong>on</strong>i<strong>on</strong><br />

1 teaspo<strong>on</strong> ginger<br />

pepper to taste<br />

Strain coc<strong>on</strong>ut water from carrots and <strong>on</strong>i<strong>on</strong>s. Make sure to<br />

save coc<strong>on</strong>ut water to blend with the cashews until smooth.<br />

Combine cream sauce ingredients with reserved coc<strong>on</strong>ut<br />

water in blender, blend until smooth. Stir cream sauce into<br />

pan with carrots and <strong>on</strong>i<strong>on</strong>s. Leave in oven <strong>on</strong> low until<br />

ready to eat. I ate a bowl after about 12 hours, and then kept<br />

what was left in the oven to take to a pot luck dinner the<br />

next day. The l<strong>on</strong>ger <strong>on</strong> low, the more it reminded me of the<br />

soup I remember from my childhood! My aunt used to make<br />

something similar for our family thanksgiving parties. Well<br />

worth the time peeling the <strong>on</strong>i<strong>on</strong>s! This is sure to satiate the<br />

taste buds!<br />
